AUTHENTIC HOMEMADE INDIAN CHAI RECIPE

Authentic Homemade Indian Chai Recipe image

Easy step by step recipe for you to learn how to make authentic delicious homemade Indian chai from scratch.

Provided by Manju

Categories     Beverages

Time 7m

Number Of Ingredients 7

1 1/2 cups water
1 1/2 tbsp black tea leaves
3/4 cup organic whole milk
2 green cardamom pods
2 cloves
1/4 tsp fennel seeds
2 tsp granulated sugar

Steps:

  • Gather the tea leaves, milk, water and spices, if using, to make the chai.
  • Start by bringing the water to a boil over medium-high heat.
  • Crush any spices that you are using for the chai.
  • Reduce the heat to medium and add the tea leaves to boiling water. Let it boil for a minute.
  • Add the organic whole milk and increase the heat to medium-heat. Keep a close watch on the saucepan at this time, as the milk may boil over.
  • As the milk is about to boil, add the chai masala spice mix, if using. Mix it in well, with a spoon.
  • Bring the tea to a boil, and reduce heat to medium-low or whichever heat point where the chai keeps dubbing and simmering but does not rise so it can overflow.
  • Let it simmer for 2-3 minutes. You can let it simmer for just a minute or so, if you are in a hurry. The simmering is what concentrates all that flavor for the chai. You can simmer it for as long as even 5-10 mins. It may reduce the quantity of chai a little but it will keep it nice and hot as you wait for company.
  • Turn off heat and strain the chai into tea cups. Add sugar to taste and mix well. Enjoy it hot.

AUTHENTIC HOMEMADE INDIAN CHAI

Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

Provided by Jennifer Pallian BSc, RD

Categories     Drinks

Time 6m

Number Of Ingredients 8

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

Categories     Beverages

Time 17m

Yield 5 cups

Number Of Ingredients 11

2 1/2 cups cold water
10 whole cloves or 1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon cardamom
3 cinnamon sticks or 1 teaspoon ground cinnamon
1 peppermint tea bag
1 orange pekoe tea bag
1 -2 teaspoon ground ginger or 1/2 inch chunk fresh ginger, depending on how spicy you want it
2 peppercorns or 1 pinch black pepper
1/4 cup honey
2 -2 1/2 cups milk

Steps:

  • In large saucepan combine first nine ingredients.
  • Bring to a boil over high heat.
  • Reduce heat to low and simmer ten minutes.
  • Remove from heat and strain with fine sieve or through coffee filters.
  • Return to pot and add honey until melted.
  • Add milk and heat through, but do not boil.
  • Serve in clear mugs with a pinch of cinnamon on top.
  • Merry Christmas!
  • You can also store the tea without the honey and milk in the fridge, then just reheat and add milk and honey to taste.
  • This is a nice tea to serve with gingerbread or shortbread cookies at gatherings.

MASALA CHAI (TEA)

Masala Chai (Tea) image

There's nothing as good as the perfect cup of Masala Chai whether it's in the middle of summer or for cozying up in the winter. Black tea is simmered with warming and fragrant spices and is best served with Parle-G biscuits or cake rusk for dipping.

Provided by Shweta Garg

Categories     Drinks

Time 10m

Number Of Ingredients 9

2 cups water
2 tsp loose leaf black tea (or tea bags)
2 cardamom pods
1 clove
1 inch knob of ginger (chopped into slices)
1/4 tsp black peppercorn (freshly cracked)
1/2 cinnamon stick
1 cup whole milk
2 tsp sugar (or to taste)

Steps:

  • Add the whole spices to a mortar and crush them lightly into smaller pieces.
  • In a small saucepan on high heat, pour in the water and add the spices. Bring the water to a boil and add the tea bags or leaves. Lower the heat to a medium to low setting and simmer for two minutes, or until the tea leaves and spices have released flavor and color. Then, pour in the milk.
  • Method one - Double Boil:Bring the chai to a boil on high heat, so that it starts aerating and bubbling to the top. Remove the pot from heat until the bubbles come down. Replace the pot on the burner and bring the chai back up again to a boil and remove from heat a second time until the bubbles go back down.Method two - Pulling ChaiAlternatively, use a small cup with a handle or ladle to scoop some of the chai and "pull" it while it's simmering. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times until the chai is bubbly.
  • Continue to simmer the chai until desired consistency and color, about 5-7 minutes. Some of the liquid will have evaporated by now, so the chai will be smooth and creamy. Remove the saucepan from heat.
  • Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the sugar according to taste, and serve hot.

8 AUTHENTIC THAI DISHES AND HOW TO SPOT ... - FOOD REPUBLIC

Estimated Reading Time 4 mins
  • Krathong Tong. So many types of appetizers find their way onto Thai menus. We’ve seen a fair number of restaurants thinking they can get away with fried cheese triangles, but fried appetizers are actually very common in Thai cuisine thanks to the Portuguese influence.
  • Gai Haw Bai Toey. Few restaurants offer this dish because it calls for pandan leaves, an essential ingredient in Southeast Asian cuisine. The leaves are wrapped around chicken marinated in soy sauce, sesame oil and coriander roots.
  • Gaeng Keaw Wan. Thai green curry is usually eaten with steamed jasmine rice, but if a restaurant offers fermented rice noodles with your curry, you can expect to be eating as you would in Thailand.
  • Lad Na. This is a very comforting dish for Thai people because it’s essentially noodles in a gravy. The gravy gets its flavor from fish sauce, black soy sauce and oyster sauce and shouldn’t be too sweet.
  • Pad Thai. Here’s the thing: There is just no way to make pad thai without all the necessary ingredients, and many restaurants hope you don’t catch them skimping on the pickled radish, bean sprouts, dried shrimp, Chinese garlic chives and crushed peanuts.
  • Gaeng Mussaman. Expect to find potatoes, roasted peanuts and chicken thighs in this fragrant curry. The word “Mussaman” in Thai means “Muslim.” Unlike green curry, Gaeng Mussaman is not served with fermented rice noodles but over jasmine rice.
  • Pla Rad Prik. This dish is done right when the fish is fried whole — head, tail and all. Striped bass and grouper are both good candidates for this treatment, topped with a traditional sweet, sour and spicy sauce.
  • Pad Kra Prao. Most commonly called basil chicken, beef or shrimp, this dish is a Thai favorite. In Thailand small street vendors serve it over warm jasmine rice, and here’s the key: If your plate is topped with a crispy fried egg, you’re looking at the real deal.

  • Place water in a saucepan over high heat. Once it comes to a boil, add tea-leaves or tea bag and cardamom. Reduce the heat to medium and gently allow this to simmer for a minute or two.
  • As it begins to boil, the chai will rise in the saucepan. Remove the pan from heat before it reaches the top of the saucepan. Do this a few times to really develop the flavor while using a ladle to scoop and pour back the chai. Alternately, once it comes to a boil, lower the heat and allow it to simmer to desired strength (~3-5 minutes).
