1 (4.5 pound) bone-in pork shoulder roast
1 cup root beer
2 ½ tablespoons light brown sugar
2 teaspoons kosher salt
½ teaspoon ground black pepper
1 ½ teaspoons ground paprika
½ teaspoon dry mustard
½ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon celery salt
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
⅓ cup balsamic vinegar
1 ½ cups root beer
1 ½ fluid ounces whiskey
¼ cup brown sugar
1 tablespoon olive oil
¾ cup prepared barbecue sauce
10 hamburger buns, split

Steps:

  • Place the pork shoulder roast into a large plastic bag, pour 1 cup of root beer over the meat, and squeeze out all the air from the bag. Seal the bag closed, and refrigerate 6 hours to overnight.
  • The next day, mix together the light brown sugar, kosher salt, black pepper, paprika, dry mustard, onion powder, garlic salt, celery salt, cinnamon, ginger, and nutmeg in a bowl.
  • Remove the meat from the marinade, and shake off the excess. Rub the meat all over with the spice mixture, wrap in plastic wrap, and refrigerate for 30 minutes to 2 hours.
  • Mix together the balsamic vinegar, 1 1/2 cups of root beer, whiskey, and brown sugar in a bowl, and stir until the sugar dissolves.
  • Heat the olive oil in a skillet over medium-high heat, and sear the meat on all sides until the meat develops a brown crust, about 3 minutes per side. Place the seared meat into a slow cooker. Pour the balsamic vinegar-root beer mixture over the meat, set the slow cooker to High, and cook for 6 to 8 hours.
  • Remove the roast from the slow cooker, and shred with 2 forks. Discard the bones and all but 1 cup of the liquid in the slow cooker. Return the shredded meat to the cooker, mix in the barbecue sauce, and let sit on Low until ready to serve. Serve piled on buns.

Pulled pork, in its simplest and fastest of slow-cooked methods, begins with boneless pork shoulder. The top of a pork shoulder is referred to as a "butt" or "Boston butt" BUT it is shoulder meat nonetheless. It was shipped in barrels at one time, and it was buttressed up the sides of the barrels, as the fable goes. The higher the cut the fattier the meat; if you want to remove fat from pulled pork, make it a day ahead to cool it and skim.

About 1 tablespoon pimenton (smoked paprika)
About 1 tablespoon kosher salt
About 1 1/2 teaspoons (half a palm full) granulated garlic

2 tablespoons neutral oil
1 small onion, finely chopped
1 jalapeno or serrano pepper, finely chopped
4 cloves garlic, chopped
Salt and pepper
1/2 cup cider or white vinegar

About 1/4 cup Worcestershire sauce

Steps:

  • Preheat oven to 300 degrees F, rack 1 rung below center.
  • Bring pork to room temperature, about 30 minutes, and pat dry.
  • Combine paprika, salt, garlic, onion, oregano or marjoram and pepper in a bowl, then coat meat evenly, rubbing mixture into meat.
  • Heat a large Dutch oven over medium-high heat with oil, 3 turns of the pan. When oil ripples and smokes, add the meat and brown on all sides, 8 to 10 minutes total. Add beer, wine or cider and reduce a minute or so, then add stock. Cover and place in oven. Cook 3 hours until very tender, then shred meat with tines of 2 forks, removing larger pieces of fat or connective tissue as you work. Stir meat and drippings together with Barbecue Sauce, if using.
  • Heat oil in medium saucepot or skillet over medium to medium-high heat. Add onions, chile, garlic, salt and pepper, then soften 5 to 6 minutes. Add vinegar and reduce 1 to 2 minutes, then add ketchup or sauce, Worcestershire, brown sugar and hot sauce. Simmer over low heat for flavors to combine. Add to pork and drippings and combine.

Steps:

2 medium yellow onions
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons paprika

3/4 cup ketchup
3/4 cup cider vinegar
1/2 cup whole grain mustard
2 tablespoons tomato paste
1 chipotle chile in adobo
5 lbs boston butt (bone-in)

Steps:

  • Preheat oven to 300°F Heat oil in a large Dutch oven over medium-low heat. Add onions and cook, stirring occasionally, until lightly browned and very soft, about 20 minutes.
  • Increase heat to high; add chili powder, cumin, paprika and cayenne and cook, stirring, until fragrant, 1 minute. Add beer, ketchup, vinegar, mustard, tomato paste, chipotle pepper and adobo sauce; bring to a boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the sauce is slightly thickened, 10 minutes. Meanwhile, trim all visible fat from the pork.
  • Remove the pan from the heat and add the pork, spooning sauce over it. Cover the pan, transfer to the oven and bake for 1 1/2 hours. Turn the pork over, cover, and bake for 1 1/2 hours more. Uncover and bake until a fork inserted into the meat turns easily, 1 to 2 hours more.

4 -5 lbs pork roast
12 ounces salsa (We usually use Pace Picante Medium(but we have used homemade salsa with great results)
1 1/2 cups brown sugar
1 tablespoon vegetable oil (Just enough to coat the skillet)
kosher salt
fresh ground black pepper

Steps:

  • Heat the oil in a skillet over high heat--we prefer to use Cast-Iron for searing, so if you have one, use it.
  • Rub the Salt and Pepper all over the roast.
  • Sear the Roast in the skillet for 1-2 min per side.
  • Toss the seared Roast in your crock-pot.
  • sprinkle the Brown Sugar over the roast and then dump the salsa over the top of that.
  • Cook on Low for 10-12 hours. You will know when the roast is done, because it will shred easily with a couple of forks.
  • Shred the pork right there in your crockpot and mix it all up with the drippings and other liquids.
  • Serve as a filling for tacos/burritos or on top of salads.

PULLED PORK WITH PINEAPPLE BARBECUE SAUCE

Pulled Pork with Pineapple Barbecue Sauce ~ impossibly tender meat slathered in a sweet and savory barbecue sauce inspired by Hawaiian huli huli, this will make the best pulled pork sandwiches of your life!

1/2 cup pineapple juice (canned)
1/4 cup ketchup
1/2 cup brown sugar
1/4 cup soy sauce
1 inch piece fresh ginger, grated
2 Tbsp apple cider vinegar
1 tsp red chili sauce (such as Sambal Oelek), or more to taste. Or substitute a pinch of red chili flakes.
4-5 lb pork butt
salt

Steps:

  • Add all of the barbecue sauce ingredients to a saucepan. Gently bring to a simmer and cook for a few minutes until the sugar is dissolved and the mixture has thickened slightly (it will thicken a bit more as it cools).
  • Set aside until the pork is ready. Can be kept in the fridge for a day or two in advance. (This recipe makes about 1 cup of sauce. If you like a lot of sauce with your pork, or if you have a cut of meat on the larger side, you might consider making a 1.5 or double batch!)
  • Light the grill with the coals on one side of the grill.
  • Lightly season the outside of your pork with salt. Remember that the sauce has plenty of salt and flavor, so I go easy on seasoning meat itself here.
  • Add the pork to the cooler side of the grill (over indirect heat), cover and allow to cook for about 3 hours or until internal temperature reads around 150-160F.
  • Once the pork reaches 150-160 degrees F, remove it from the grill with sturdy tongs and wrap it tightly in aluminum foil. This helps keep moisture in and cuts down on the overall cooking time. Return to the grill, cover and continue to cook until the internal temperature is about 203 degrees F.
  • Remove the pork from the grill, allow to cool down slightly, and then shred with two forks.
  • Mix the shredded pork with the pineapple barbecue sauce or serve it on the side.

2 pound pork roast
1 small onion (sliced thin)
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon crushed red pepper flakes
1 tablespoon sugar
1/4 teaspoons dry mustard
1/2 teaspoon granulated garlic
1/4 teaspoon cayenne pepper

Steps:

  • Rinse and pat dry the pork roast. Place onions in the slow-cooker or pressure cooker. In a small bowl, combine brown sugar, paprika, kosher salt and pepper; mix thoroughly. Rub mixture all over roast and place the roast on top of the onions.
  • In a medium bowl, combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper; whisk to combine. Pour over roast.

  • PRESSURE COOKER DIRECTIONS: Seal the pressure cooker; cook on high for 60-90 minutes, (The cooking time is 90 minutes for the Insta-Pot, but I've been told that it requires less time for a stove-top pressure cooker.) check to see if it is shreddable. Cook an additional 30-40 minutes as needed. Shred with tongs and allow the shredded pork to rest in the cooking liquids until ready to serve. Serve warm on your favorite rolls. Enjoy!
