1 cup whole grain gluten free bread, toasted and processed into breadcrumbs
3 cups raw wild cod, about 1.5-2 lbs
2 organic pastured eggs, whisked
1/4 cup Spanish onion, finely diced
2 tablespoons fresh thyme or 1/2 tablespoon dried thyme
2 teaspoons lemon juice
2 tablespoons hummus or mayo
1 teaspoon Dijon mustard
1 teaspoon Pink Himalayan Sea Salt
Stone ground cornmeal, for dusting
Organic red palm oil, coconut oil or EVOO for cooking
Homemade Tartar Sauce, for dipping

Steps:

  • Preheat oven to 350 degrees and set aside a large stone baking pans.
  • Put the toasted bread slices in a food processor and process into crumbs.
  • Put the cod pieces in the food processor and process until fish is shredded. Dump into a fine mesh sieve and push the excess liquid out of the fish. Set shredded cod aside.
  • To a large mixing bowl add the breadcrumbs, whisked eggs, onion, thyme, lemon juice, hummus, Dijon mustard and salt. Mix ingredients thoroughly. Add in the shredded cod and mix well. If your ingredients are too wet, consider adding another 1/4 cup to 1/2 cup breadcrumbs or leave in the fridge overnight.*
  • On a large plate, add a dusting layer of stone ground cornmeal for the fish cakes to sit on. Form the fish cakes, using a 3 tablespoon scoop of the fish mixture. In your hands, gently squeeze the fish cake together just enough for it to come together. Slightly flatten the ball, and placed on the plate covered in cornmeal. Repeat until done. Then, dust a layer of cornmeal on top of the fish cakes.
  • Place the plate in the freezer for 8-10 minutes until firm.
  • Set a large 12″ ceramic skillet over medium-low heat and add a thin layer of oil to cover the bottom. When the oil is hot, cook the fish cakes in batches for about 3-5 minutes per side, or until light golden brown .
  • Gently add the fish cakes to the large baking pans and cook in the oven for 10 to 12 minutes, or until fish is cooked through. Serve warm with Homemade Tartar Sauce.

The sweet-tart taste of peaches provides a welcome if unexpected accompaniment to savory dishes like this one.

Yield Makes 6 small cakes

Number Of Ingredients 7

1 medium russet potato, (about 8 ounces)
1 cup milk
2 sprigs thyme
3/4 pound skinless and boneless cod fillets, cut into pieces
3 medium peaches, peeled and pitted (about 3/4 pound)
1/4 cup water, plus more for potatoes
1 tablespoon olive oil

Steps:

  • Peel and cut potato into 1-inch dice. Place in a small saucepan; add enough cold water to cover by 2 inches. Bring to a boil; reduce heat to medium-low, and simmer until potato is tender when pierced with a sharp knife, about 12 minutes. Drain; while potato is still hot, pass it through a ricer or food mill into a large bowl. Set aside.
  • Combine milk and thyme in a small saucepan, and bring to a boil over medium-high heat. Add fish fillets; cover pan, and reduce heat to low. Cook until fish is opaque and cooked through, about 12 minutes. Drain fish in a colander, reserving cooking liquid. Discard thyme.
  • Add fish to potatoes, and mash with a fork until fish is broken up into very small pieces and mixture is well combined. If mixture is too dry, add some of the reserved cooking liquid a tablespoon at a time. Season with salt and pepper.
  • Thinly slice one of the peaches into 18 slices, and set aside. Chop remaining peaches into 1/4-inch pieces. Place chopped peaches in a small saute pan, and add 1/4 cup water; season with salt and pepper. Bring to a boil over medium-high heat. Reduce heat to medium-low; cover, and simmer until peaches are soft, 3 to 5 minutes. Remove from heat; let cool slightly. Transfer to a blender or food processor, and puree until mixture is smooth.
  • On a clean work surface, divide fish mixture into six parts. Shape each part into a 1-inch-thick fish shape using your hands. Heat the oil in a medium saute pan over medium heat. Working in batches so as not to overcrowd the pan, add fish cakes, and saute until they are golden on both sides, 2 to 3 minutes per side. Using a slotted spatula, transfer to a large plate. Repeat with remaining fish cakes.
  • To serve, pour 1/4 cup peach puree on each plate, and use reserved peach slices (3 per plate) to make waves. Place a fish cake on each plate, and serve.

1kg medium-sized floury potato such as Maris Piper, unpeeled
10 tbsp vegetable oil
2 tsp mustard seed
2 tbsp curry leaf , fresh or dried
2 red onions , finely chopped
2 red chillies , deseeded and chopped
50g ginger , finely chopped
zest 1 lemon
2 eggs , lightly beaten
600g skinless salmon fillet
250g skinless smoked haddock
300ml milk
6 tbsp plain flour , seasoned
3 eggs , lightly beaten
200g fresh white breadcrumb
4 tbsp mango chutney
juice 2 limes
2 tbsp shredded mint

Steps:

  • Put the potatoes in a large saucepan, cover with salted water, bring to the boil and cook until tender. Drain, leave to cool, then peel and mash.
  • Heat 4 tbsp of the oil in a pan set over a medium heat. Add the mustard seeds, half the curry leaves, onions, red chillies and ginger, and fry for 5 mins until the onions have softened. Add onion mixture to the mashed potato with the lemon zest, mix well, then work in the eggs.
  • Put the salmon and smoked haddock in a pan. Add the remaining curry leaves, then pour over the milk plus enough water to cover. Put on the lid and simmer for 3-4 mins, then turn off the heat and leave the fish in the pan for 10 mins to finish cooking. Take the fish out of the milk and leave to cool. Using your hands, break into big flakes, add to the potato mixture and mix gently to combine.
  • Shape mixture into patties about 9cm diameter and 3cm thick. For the coating, dust each with flour, then dip into the egg and coat with breadcrumbs. Transfer to a tray lined with baking parchment and chill for 30 mins. The fish cakes can be frozen at this point. Put the tray in the freezer and when frozen, pop the fish cakes in bags and seal.
  • Heat the remaining oil in a frying pan and cook the fish cakes, in batches, for 7-8 mins each side, until golden and crisp. Drain on kitchen paper. To cook fish cakes from frozen, see below.
  • Combine all the dipping sauce ingredients and stir in 4-5 tbsp water to thin it down. Serve with the fish cakes.

2 lbs cod fish fillets, cut into 1-inch pieces
2 large eggs
1/2 cup panko breadcrumbs, plus 1 cup for dredging
1/4 cup finely chopped fresh cilantro
4 green onions, white and tender green parts only, thinly sliced
2 tablespoons peeled and grated fresh ginger
1 tablespoon lime zest
2 garlic cloves, minced
1/2 teaspoon fish sauce
2 teaspoons kosher salt
1 teaspoon fresh ground pepper
canola oil (for frying)
1 cup mayonnaise
2 tablespoons thai sweet chili sauce
2 garlic cloves, minced
2 tablespoons peeled and grated fresh ginger
1/2 teaspoon kosher salt

Steps:

  • Make the Dipping Sauce: In a small bowl, combine all of the ingredients and stir to mix well. Taste and adjust the seasoning. Cover and refrigerate until ready to serve.
  • Make the Fish Cakes: Put the fish in a food processor and pulse just until uniformly minced, about 10 times. Be careful not to overprocess or the fish will turn into a paste. Transfer to a large bowl and add the eggs, the 1/2 cup bread crumbs, the cilantro, green onions, ginger, lime zest, garlic, fish sauce, salt, and pepper. Using your hands or a rubber spatula, gently fold and toss the ingredients together until well combined.
  • In a nonstick frying pan, heat a splash of oil over medium-high heat. Pinch off a small piece of the fish mixture and fry until cooked through, about 1 minute. Taste and adjust the seasoning of the remaining fish mixture if needed.
  • Place the 1 cup bread crumbs in a shallow dish. Shape the fish mixture into cakes about 2 inches in diameter and 1 inch thick. Coat each cake thoroughly with the bread crumbs, shaking off the excess.
  • Line a rimmed baking sheet with paper towels. Pour oil to a depth of 1/2 inch into the frying pan and heat until hot and shimmering but not smoking. Working in batches as needed to avoid crowding, add the cakes, placing them about 1 inch apart, and fry, turning once, until golden brown and crispy, 2-3 minutes per side. Transfer to the paper towels to drain and season with salt while still warm.
  • Transfer the cakes to a platter or individual plates and serve. Pass the dipping sauce at the table.

500 g haddock or 500 g white fish fillets
50 g desiccated coconut
3 spring onions
1 teaspoon lemongrass, in oil, chopped
1 cm ginger
3 tablespoons fresh coriander, chopped
1 large red chili
3 tablespoons plain flour
4 tablespoons oil

Steps:

  • Zest and juice the lime.
  • Peel and grate ginger.
  • Chop spring onions.
  • Deseed and chop red chili.
  • DIPPING SAUCE:.
  • Mix juice of lime, thai fish sauce, sweet chili sauce, and soy sauce.
  • This is the dipping sauce for fish cakes.
  • FISH CAKES:.
  • Whiz fish and coconut in a processor. Place this mixture into a bowl.
  • Mix the lime zest, chopped onion, lemongrass, ginger, coriander, chili, salt and pepper into the fish mixture.
  • With damp hands make 16 small cakes or 8 large cakes.
  • Coat both sides in the flour.
  • Heat the oil until very hot; fry on each side for 1 minute.

450 g firm white fish fillets
3 tablespoons rice flour or 3 tablespoons cornflour
1 tablespoon fish sauce
1 egg, beaten
1/2 cup fresh coriander leaves
3 teaspoons red curry paste
1 -2 teaspoon chopped red chile (optional)
100 g green beans, very finely sliced
2 spring onions, very finely chopped
1/2 cup oil, for frying

Steps:

  • Process the fish in processor til smooth.
  • Add rice flour, fish sauce, beaten egg, corriander, curry paste and chillis.
  • Process til combined. Transfer to a bowl.
  • Add spring onions and beans and mix together.
  • Use wet hands to form 2 tablespoons of mix at a time into flattish patties.
  • Heat oil in frying pan (skillet).
  • Cook 4 fish cakes at a time until brown on both sides, drain on paper towels, and serve with dipping sauce. Or go to Asian Dipping sauces that I am going to post, sorry I don't have the # yet) for serving.
  • DIPPING SAUCE:.
  • In small bowl dissolve 1 teaspoon of sugar in 1/3 cup fish sauce. Sir constantly. Add 2 tablespoons rice wine vinegar, 1 tablespoon lime juice, 2 small seeded and very finely chopped red chillis.
  • Finely grate 1/2 small carrot, and a peeled radish, stir into sauce just before serving.

1 lemon rind, zested

Steps:

  • Cook the shallots in butter with garlic and lemon rind for a few minutes.
  • Mix the fish, breadcrumbs, herbs and shallot mixture together.

  • Shape the patties.
  • Heat oil in a pan and shallow-fry the fishcakes on a medium heat until they are golden brown on both sides.
  • Serve warm with a sour cream sauce.
  • To make the sour cream sauce: Mix together ingredients and refrigerate before serving.
