2 tablespoons butter, softened
2/3 cup sugar
2 large eggs, lightly beaten
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 cup orange juice
1-1/2 teaspoons grated orange zest
1 teaspoon lemon juice
1 cup fat-free milk

Steps:

  • In a small bowl, beat butter and sugar on medium speed for 1 minute. Add the eggs, flour and salt. Beat for about 2 minutes or until thickened. Add the orange juice, orange zest and lemon juice. Stir in milk., Pour into five 6-oz. ramekins or custard cups. Place ramekins in a 13x9-in. baking pan. Add 1 in. of boiling water to pan. , Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Remove ramekins from water bath. Serve warm or chilled. Refrigerate leftovers.

2 cups milk
3 slightly beaten eggs
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Put 1 3/4 cup milk in saucepan, cover and bring to a boiling point.
  • Reduce heat.
  • Combine eggs, sugar, salt, and remaining milk.
  • Add to scalded milk, stirring constantly.
  • Cook stirring constantly, until a coating forms on a spoon.
  • Remove and cool, add vanilla.
  • Serve in tall glasses with whipped cream and coconut or use as a pudding sauce.

1 dash salt
1 orange, zest of, finely grated
1 tablespoon fresh lemon juice
2 teaspoons fresh lemon juice
1/2 cup orange juice
3 egg yolks
1 teaspoon butter
1 cup heavy cream

Steps:

  • In a heavy saucepan, combine the granulated sugar, flour, and salt.
  • Add orange zest, lemon and orange juices, and egg yolks. Blend well.
  • Cook over low heat, stirring, until thickened and smooth.
  • Stir in butter and cool.
  • Whip the cream and fold into the cooled orange mixture.

1 pint milk
4 eggs
2 egg yolks
Grated rind 1/2 an orange
Pinch salt
1/4 cup sugar
1/4 cup water
1/3 cup sugar
Pinch salt
1/2 box strawberries
1 small bunch grapes
1 small bunch red grapes
1 cup champagne

Steps:

  • Combine 1 pint milk, 4 eggs, 2 egg yolks, the grated rind of 1/2 an orange, a pinch of salt and 1/4 cup of sugar, bake in a shallow pie dish or 4 individual ramekins in a bain marie (roasting pan with 1/2-inch hot water) in a preheated 325 degree oven for 25 to 35 minutes or until just "set" (knife should come out clean when inserted).
  • Boil water with 1/3 cup sugar and salt for 1 minute in a large saucepan. Add strawberries and bring back to a boil, then add the grapes. Boil again and finish with champagne and pour around unmolded custard.

200ml double cream
700ml whole milk
4 large egg yolks
3 tbsp cornflour
100g caster sugar
1 tsp vanilla extract

Steps:

  • Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.
  • Wipe out the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon (see Steps 1 and 2, for stirring tips) until the custard is thickened, but before any lumps form. Eat hot or cold.

Steps:

  • In a microwave safe jug heat the milk on medium-high (70% power) for 1 minute.
  • Combine the sugar and egg yolks and then whisk mixture into the warm milk.
  • Cook uncovered on medium (55% power)for about 5 minutes, whisking twice during cooking, until custard thickens slightly.
  • When cooked, cover with some plastic wrap, laying it on the surface of the custard.
  • Serve either warm or cooled with maybe some fruit & meringues or over a steamed pudding.

1 orange, quartered and seeds removed (with peel)
1/2 cup orange juice
1 large egg
1/2 cup butter or 1/2 cup margarine
1 3/4 cups all-purpose flour
3/4 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 400F; spray a muffin tin (12) with non-stick cooking spray like Pam and set aside.
  • Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
  • Add egg and butter to food processor and combine; pour into large bowl.
  • Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
  • Stir to combine.
  • Fill muffin cups about 3/4 full.
  • Bake in preheated oven for 20 minutes; remove from oven and let stand in tin for 5 minutes before removing muffins.
