WHITE CHOCOLATE OATMEAL COCONUT COOKIES
Steps:
- Pre-heat oven to 350 degrees and line large baking sheet with parchment paper.
- Add 1 cup of oats to a Vitamix, food processor, or blender and pulse until ground into a flour.
- Add oats, oat flour, baking soda, cinnamon, coconut, and salt to a large bowl and mix.
- In a small bowl, add eggs, coconut oil, vanilla extract, and honey and whisk.
- Add wet ingredients to dry and mix until well combined.
- Fold in chocolate chips and walnuts into a dough.
- Spoon 2 inch balls and add to the baking sheet and flatten (if desired).
- OPTIONAL Sprinkle additional coconut onto cookies.
- Bake for 15-18 minutes or until the cookies have set and start to brown underneath.
- Remove from baking sheet to cool. Store in an airtight container for up to 1 week or freeze for up to 3 month.

- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

- 1. Preheat oven to 350 degrees. Cream together butter, sugar, and brown sugar. Add egg, vanilla and coconut extract and mix well. In separate bowl, combine flour and baking soda. Gradually add to the butter mixture. Stir in white morsels, oats and coconut.
- 2. Drop by tablespoons about 3" apart on ungreased baking sheet. Dip bottom of cup into sugar and slightly flatten cookies. Bake at 350 for 9-11 minutes, or until slightly golden.
- 3. Move to rack to cool completely.

COCONUT OATMEAL COOKIES
My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

- In mixing bowl cream shortening,butter,and sugars.
- Add eggs and vanilla until blended.
- Set aside.
- In separate bowl, combine dry ingredients.
- Withholding coconut until all other ingredients are blended.

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard.
