BRANDY SIMPLE SYRUP



Brandy Simple Syrup image

Simple Syrup is brushed on cakes for added moisture and flavor. This one can be flavored with brandy or rum.

2 cups water
1 cup white sugar
½ teaspoon grated lemon zest
¼ cup brandy

Steps:

  • In a saucepan, combine water, sugar and lemon zest. Bring mixture to a boil and continue boiling for 5 minutes. Strain into a sealable container, removing the lemon zest. Allow to cool, then cover and store in refrigerator.
  • When ready to use, mix in brandy. Brush onto cake layers before frosting.

1 cup sugar
1 cup water
2 tablespoons light rum

Steps:

  • In a medium saucepan, combine sugar and the water over medium-high heat. Cook, stirring, until the sugar dissolves. Continue cooking, without stirring, until mixture reaches a boil. Reduce heat to a simmer, and cook 5 minutes more.
  • Remove pan from heat, and stir in rum. Let cool to room temperature.

Full 1 cup water
1/2 lemon, juiced

Steps:

  • Combine all 3 ingredients in a nonreactive 2-quart heavy-bottomed saucepan over medium-high heat and bring to a boil. All the sugar crystals should completely dissolve. Remove from the heat and pour into a clean medium-size bowl. Let cool completely before using. If you are short on time, you can cool the syrup over an ice bath. Simple syrup can be stored in the refrigerator, indefinitely, if kept in an airtight container.
