1/2 cup butter, softened
1 cup sugar
2 large eggs
1/2 cup all-purpose flour
1/4 teaspoon salt
1 cup semisweet chocolate chips, melted
1/2 teaspoon vanilla extract
1 cup chopped nuts
2 to 3 pints ice cream
Delicious Chocolate Sauce, optional

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in flour and salt; add melted chocolate and vanilla. Stir in nuts. Spoon into a greased 10-in. springform pan; place pan on a baking sheet. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. , Fill with scoops of ice cream. Cover and freeze for at least 4 hours or overnight. Remove sides of pan. Let stand for 10 minutes before serving. Top with chocolate sauce if desired.

1 (6 ounce) chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 quart coffee ice cream
1 (12 ounce) package miniature chocolate chips
1 (12 ounce) jar hot fudge topping
½ (18 ounce) package crushed chocolate sandwich cookies, divided
1 (8 ounce) container frozen whipped topping, thawed
¾ cup chocolate syrup

Steps:

  • Freeze the crust until firm, about 30 minutes. Place half the coffee ice cream into a bowl, and let it stand about 10 minutes to soften. Return remaining ice cream to the freezer. Mix softened ice cream with the mini chocolate chips. Spread the ice cream and chips in an even layer over the frozen crust. Cover with plastic wrap, and freeze for 2 hours.
  • Heat the topping in the microwave on low until warm and easy to pour, 30 seconds to 1 minute (do not let the sauce get very hot). Pour into a bowl. Set aside 2 tablespoons cookie crumbs for garnish; stir remaining cookie crumbs into the fudge topping. Remove the pie from the freezer, and layer the cookie crumbs and fudge topping mixture over the ice cream with chips. Cover with plastic wrap, and return to freezer for 2 hours.
  • Take the remaining frozen coffee ice cream out of the freezer, and allow to stand for about 10 minutes to soften. Layer the ice cream over the layer of cookie crumbs and fudge topping. Cover with plastic wrap, and return to freezer for 2 more hours.
  • Remove pie, and frost the top of the pie with the whipped topping. Top with the reserved cookie crumbs. Cover with plastic wrap, and return to freezer for 2 more hours to freeze the whipped topping layer. Cut the pie into serving pieces, and drizzle each serving with about 1 tablespoon of the chocolate syrup.

Steps:

  • Preheat oven to 350°F. Prick bottom of pie shell all over with a fork. Bake until golden brown and dry, 20-25 minutes. Let cool completely.
  • Melt half of chocolate (1/2 cup) in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth. Using the back of a spoon, spread chocolate over bottom and sides of pie shell. Freeze until firm and dry, about 5 minutes.
  • Cut ice cream pints in half with a serrated knife, remove packaging, then cut crosswise into 1" slices. Transfer to a medium bowl and let sit, stirring occasionally, until spreadable but not soupy, 5-10 minutes. Fill pie shell with ice cream; smooth top. Freeze until firm, about 1 hour.
  • Melt remaining 1/2 cup chocolate in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth. 2 cups Cool Whip frozen whipped topping (from 8-oz container), thawed
1 cup miniature marshmallows
1/2 cup semisweet chocolate chips
1/3 cup heavy whipping cream

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • Make brownie batter as directed on box for cakelike brownies. Stir in 1 cup chopped cookies. Spread in pan. Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • In medium bowl, beat frosting and whipped topping with spoon until well blended. Spread over top of brownie. Sprinkle marshmallows over frosting layer. Top with remaining chopped cookies.
  • In small microwavable bowl, microwave chocolate chips and whipping cream uncovered on High 45 seconds; stir. Continue to microwave in 15-second increments until chips are melted. Stir until smooth. Drizzle over top. Refrigerate about 1 hour or until chocolate is set.
  • Cut into 6 rows by 4 rows. Store loosely covered in refrigerator.

1/2 cup very hot water
1/2 cup oil
2 eggs
1 cup chocolate fudge topping

Steps:

  • Heat oven to 325 degrees. Grease two 9 inch pie pans.
  • In a large bowl, combine all the crust ingredients; beat 50 strokes with spoon.
  • Pour batter into prepared pans. Bake for 20-25 minutes. Do not overbake. Cool.
  • When brownie layer is cooled; spread 1/3 c ice cream topping on each brownie crust. Sprinkle 1/4 c nuts between the two pies.
  • Overlap large spoonfuls of ice cream to fill pie. Cover and freeze.

1 bag (12 oz) semisweet chocolate chips (2 cups)
1/2 cup granulated sugar
1 tablespoon butter or margarine
1 teaspoon vanilla
4 eggs
1/4 cup butter or margarine, melted
4 oz sweet baking chocolate, melted, cooled
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup Original Bisquick™ mix
3/4 cup chopped nuts
1/2 gallon any flavor ice cream, softened

Steps:

  • In 2-quart saucepan, heat milk, chocolate chips and 1/2 cup granulated sugar to boiling over medium heat, stirring constantly; remove from heat. Stir in 1 tablespoon butter and the vanilla.
  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In medium bowl, beat eggs, 1/4 cup butter and the chocolate with electric mixer on low speed 30 seconds or until smooth. Beat in brown sugar, 1/2 cup granulated sugar and the Bisquick mix until well blended; beat on medium speed 1 minute or until smooth. Pour into pie plate. Sprinkle with nuts.
  • Bake about 35 minutes or until edge appears dry and top is cracked. Cool completely in pie plate on cooling rack, about 1 hour (center will sink).
  • Spread 1 1/2 cups fudge sauce over pie. Spoon ice cream onto pie, mounding and packing firmly. Freeze at least 4 hours until firm. Heat remaining fudge sauce; serve with pie. Store pie in freezer.

Steps:

  • Follow the directions for your favorite brownie recipe to make the batter.
  • Spray cups of a muffin tin with cooking spray, and add brownie batter to each cup until they're about two-thirds full.
  • Spray the second muffin tin with cooking spray and place on top of the first tin of brownies. Keep in place; do not remove for it forms the shell.
  • Place in the oven and bake, following your brownie recipe's directions.

8 ounces bittersweet chocolate or 8 ounces semisweet chocolate
4 eggs
1/2 teaspoon salt
1 cup sugar
1 cup dark brown sugar
2 teaspoons vanilla extract
1 cup all-purpose flour
3/4 cup sugar
1/8 teaspoon salt
1/3 cup all-purpose flour
2 cups milk
2 eggs (separated)
2 tablespoons butter (softened)
1 1/2 teaspoons vanilla
1/3 cup cocoa powder
2 cups chocolate sandwich style cookies (Crushed, chocolate cookie part only plus more to garnish)
1/4 cup butter (softened)
2 cups heavy cream
1 teaspoon vanilla

Steps:

  • For the Brownie Batter: Gently melt butter and chocolate together in a glass bowl in the microwave or over a pot of simmering water. In a separate bowl whisk together eggs, salt, sugars and vanilla.
  • Stir egg mixture into chocolate mixture, and then add flour. Stir just until combined.
  • For the Chocolate Pudding: Combine 3/4 cup granulated sugar, salt, cocoa powder and flour in a medium bowl. Slowly stir milk into dry mixture.
  • Put mixture in medium sauce pot and cook until mixture begins to thicken.
  • Beat egg yolks in a small bowl, then briskly stir a small amount of the hot mixture (about 1/2 cup) into this mixture. Add egg yolk mixture back into the hot mixture in top of double boiler and stir in butter and vanilla. Cook until mixture thickens again. Set aside.
  • To Build Pie: Preheat oven to 350°. In a small bowl, combine the crushed chocolate sandwich cookies with the butter until thoroughly mixed. Press into a lightly greased springform pan. Bake for 15 minutes to set the crust.
  • Scrape brownie batter into the chocolate crust, forming an even layer. Bake for 20 minutes or until a toothpick comes out somewhat clean. Allow to cool slightly, and then pour pudding over the brownie layer, spreading into an even layer.
  • Combine the heavy cream and vanilla and whip until peaks form, and use to top the chocolate pudding layer. Garnish with more crushed chocolate sandwich cookies.
