- Swiss Chard should be chopped into pieces about 2" square.
- Heat oil in a wok or skillet.
- Saute garlic for about 1 minute.
- Have high heat and saute the swiss chard for about2-3 minutes. (Water clinging to the leaves is enough liquid to cook the chard).
- Toss (do not over cook) until just wilted and getting soft.
- Season with pepper and serve.
GRILLED SWISS-CHARD STEMS WITH ROASTED GARLIC OIL
Don't throw all those Swiss-chard stems away. Not everyone is a fan of including them with sautéed greens, but here's a plan for the rest of us who love their texture and flavor. Prepare to blanch, blister and then dress these stems in an intense garlic oil. With a little lemon and salt to perk the taste buds, you've got a new favorite side dish.

Steps:
- Bring a large pot of water to a boil.
- Strip the chard leaves from the stems using a knife, scissors or simply your hands. Reserve the leaves for another use.
- Trim the bottom 1/8 inch of the chard stem, to remove the dry, discolored bit. Clean the stems by submerging in cold water and rinsing thoroughly.
- Aggressively season your boiling water with kosher salt.
- Working in batches, blanch the chard stems until tender, about 5 minutes. Drain well, and let cool on a baker's rack or in a colander to continue draining.
- Grill blanched, dry chard stems evenly on both sides until charred and blistered here and there, like perfect pizza crust looks from a wood oven.
- Cut the stems into batons, and thoroughly dress the stems with roasted garlic oil (see recipe), a few drops of lemon juice and a few flakes of Maldon salt.
ROASTED SWISS CHARD WITH FETA
This method of cooking chard was given to me (in very few words) from an organic farmer who was selling the first chard we ever bought. We tried it and could not believe how delicious this was. Delicious! Double this recipe if you are a large family of veggie eaters.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet with olive oil.
- Toss the chard stems and onions in a bowl with 1 tablespoon olive oil. Season with salt and pepper to taste, and spread onto the prepared baking sheet.
- Bake in the preheated oven until the chard stems have softened and the onion is starting to brown on the corners, about 15 minutes. Toss the chard leaves with 2 tablespoons of olive oil, salt, and black pepper. Sprinkle the leaves over the stem mixture, then scatter the feta cheese over top.
- Return to the oven, and bake until the stems are tender, the leaves are beginning to crisp, and the feta is melted and golden, about 20 minutes.

ROASTED SWISS CHARD STEMS

- Gather the ingredients. Preheat the oven to 375 F.
- Rinse the chard stems, pat dry, and trim off any brown bits.
- Use about half of the oil to coat the bottom of a gratin dish or other baking dish that will hold the stems in a single layer. Lay stems in the dish, drizzle with remaining oil, and sprinkle with salt.
- Cover the baking dish with foil and place it in the preheated oven. Bake 10 minutes, then remove the foil and bake until chard stems are tender and start to brown, about 20 more minutes.
- Serve hot, warm, or at room temperature, with a squeeze of fresh lemon juice if desired.

- Remove the chard stems and the thick central vein from each leaf. Chop the leaves very coarsely.
- Using a large, heavy-bottomed frying pan over medium high heat, melt the butter with the oil until sizzling. Add the chard and the rosemary, stirring well to coat the chard with the butter mixture. Cook, stirring constantly, for another minute until the chard has wilted to about half its original volume.
- Add raisins and pine nuts, stirring to combine evenly, and continue cooking until any moisture has evaporated. The entire cooking process should take no more than about 3 minutes.
- Season with salt and pepper and serve immediately.
FERMENTED SWISS CHARD STEMS
An easy recipe for lacto-fermented Swiss chard leafstalks - just two ingredients!

- Gather the ingredients.
- Wash the chard. Slice the green, leafy parts off of the thicker leafstalks and midribs. Reserve the leafy greens for another recipe.
- Chop the chard stems crosswise into 1/2 to 1-inch pieces. Put the pieces into a clean glass jar (it is not necessary to sterilize the jar for this recipe, but it should be scrupulously clean).
- Pour the non-chlorinated water over the chard pieces.
- Fill the jar all the way to the top, then loosely screw on the lid. The lid will keep the chard pieces submerged in the liquid. Place the jar on a small plate that will catch the overflow that may occur during the fermentation. Leave at room temperature for 24 hours.
- Remove the lid and check for signs of fermentation. You may see some bubbles on top, and the chard should start to have a light, pleasantly sour smell (think very mild sauerkraut). If there are no signs of fermentation yet, replace the lid and wait another 24 hours. Keep checking once a day, adding non-chlorinated water if necessary to keep the jar full. Some of the chard pieces may darken slightly, especially those at the top of the jar. This does not affect their flavor.
- After 1 to 4 days, transfer the jar to the refrigerator to slow down the fermentation. Fermented chard will keep, refrigerated, for at least 6 months, but is best eaten within 3 months.

- Stack several pieces of Swiss chard on work surface. Remove stems and set aside. Roughly cut leaves into pieces about 2-inch square. Repeat with the remaining swiss chard. - Rinse the chard and pat it lightly dry. Trim the very ends of the stems and discard. Coarsely chop or rip the chard leaves to make them more manageable to eat. Trim the stems where they meet the leaves, then lop the stems into 1-inch pieces.
