2 cups sifted powdered sugar
1/2 cup butter (softened)
2 eggs (see not)
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1 cup heavy cream
1/2 cup sifted powdered sugar
1 cup crushed pineapple, well drained
1/2 cup chopped pecans

Steps:

  • Cream 2 cups powdered sugar and butter with an electric mixer. Add eggs, salt, and vanilla. Beat until light and fluffy. Spread mixture evenly into baked pie crusts. Chill.
  • Whip cream until stiff. Blend in powdered sugar. Fold in pineapple and pecans.
  • Spread mixture on top of filling and chill thoroughly.

2 cups powdered sugar
2 egg yolks
1/2 tsp vanilla extract
1/2 cup pecans, chopped
1/2 cup butter, softened
1/4 tsp salt
1 cup crushed pineapple, drained
2 cups whipping cream
2 baked deep dish pie crusts

Steps:

  • In a large bowl, cream together butter, powdered sugar, egg yolks, salt and vanilla extract. Beat until it resembles frosting.
  • Spread mixture into pie shells. Chill while you prepare the next layer.
  • In a large bowl, whip whipping cream until stiff peaks form. Blend in crushed pineapple and pecans. Spread on top of first layer.
  • Chill for 3 hours or more.

MY "FURR'S MILLIONAIRE PIE" CAKE



My

I came up with this cake for my Dad's birthday. I love Furr's Millionaire Pie and wondered if it could be converted to a type of cake. This is my adaption of Furr's Millionaire Pie in a cake, and it's been a hit with family and friends! I started off with a Rainy Day Yellow cake (Recipe # 108059), but used one whole cup of butter (which is reflected in this recipe as well as adaptations to the directions). For the filling, I used Furr's original recipe, then added the pecans (doubled the pecans) and pineapple from the recipe's whipped topping into the filling. Then for the topping, I just left it as a whipped topping. I didn't want the topping to have too much texture or look too funky, which is why I chose to include the pineapple and pecans into the filling instead. This cake is very dense and very sweet. It's a little bit of a mix between Furr's Millionaire Pie and pineapple upside down cake. I may actually add more pineapple the next time I make it. I hope that you enjoy it!!

4 large eggs, separated
1 cup butter, at room temperature
2 cups granulated sugar
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
2 cups powdered sugar
1/2 cup butter, softened
2 large eggs
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1 cup crushed pineapple, well drained
1 cup chopped pecans
1 cup heavy cream
1/2 cup powdered sugar

Steps:

  • CAKE.
  • Preheat oven to 350°F
  • Prepare a 10-inch round pan by greasing it and dusting it with flour.
  • In a large mixing bowl, cream the butter for 1 to 2 minutes.
  • Add sugar, and cream for another 2 minutes.
  • Add egg yolks and beat for another minute or until the mixture appears light and fluffy.
  • Add the vanilla extract.
  • Sift flour, baking powder, baking soda, and salt into another medium sized mixing bowl.
  • Add about a third of the flour mixture to the butter-sugar mixture and mix well.
  • Add half of the buttermilk, followed by another third of the flour, then the remaining buttermilk, and finally the last of the flour. (Be careful not to overmix.)
  • Set mixture aside.
  • In a clean bowl, beat egg whites until stiff peaks form.
  • Fold egg whites into cake mixture just until incorporated.
  • Pour batter into prepared pan.
  • Bake for around 40-50 minutes or until toothpick inserted in middle comes out clean.
  • Cool cake completely and with a serrated knife, cut cake in half horizontally.
  • FILLING.
  • Cream together powdered sugar and butter with electric mixer.
  • Add eggs, salt, and vanilla.
  • Beat until light and fluffy.
  • Fold in pecans and pineapple.
  • Spread filling mixture on the bottom layer of cooled cake.
  • Carefully place top layer of cake on top of the filling.
  • Cool in the fridge for 30 minutes.
  • TOPPING.
  • Whip cream until stiff.
  • Blend in powdered sugar.
  • With an offset spatula, spread topping on top and on the edges of the cake.
  • Cool in fridge for 30 minutes.
  • Cake must be kept stored in the fridge until ready to serve.

I HAVE REVAMPED THIS RECIPE SO THAT "THOSE OF US WITH DIABETES" CAN ALSO HAVE SOME. I ADDED A RECIPE TO MAKE 'HOMEMADE POWDERED SUGAR' FOR...

2 c sifted powdered sugar (*i make my own splenda powdered sugar)
1/4 lb butter, softened
2 large eggs
1/8 tsp salt (i use sea salt)
1/4 tsp pure vanilla
2 (9 inch) pie crusts, baked
1 c heavy cream
1/2 c sifted powdered sugar (*again you can make your own with splenda)
1 can(s) crushed pineapple, drain well
1/2 c chopped pecans

Steps:

  • 1. Cream 2 cups powdered sugar and butter with electric mixer until fluffy (be SURE to do this step first).
  • 2. Add eggs, salt and vanilla. Beat until light and fluffy.
  • 3. Spread mixture evenly into baked pie crusts, then chill.
  • 4. Whip heavy cream until stiff. Blend in powdered sugar. Then fold in pineapple and pecans.
  • 5. Spread mixture on top of chilled filling; and chill thoroughly before serving.
  • 6. NOTE: This pie is sweet and not for diabetics. But if you make your own powdered sugar by grinding Splenda into a powder, you can eat some too.
  • 7. TIP For Diabetics: *To make your homemade powdered sugar from Splenda...take 1 cup Splenda and 2 tablespoons cornstarch, using a clean coffee grinder (or a blender) place both ingredients in the cup, placeing the lid on and pulse into a powder form. This can be used for dusting cakes, cupcakes...etc. You can also make a frosting with it.
  • 8. Frosting made with Homemade Powdered Sugar: 8 ounces low-fat cream cheese 1 teaspoon vanilla 1/4 cup light butter Beat 8 oz of cream cheese with the butter. Mix in vanilla and 1/2 cup of the home made powdered sugar (taste it as you go).

This is a great recipe for a quick pie that does taste like a million bucks. My daughter has been making this every Thanksgiving since she was 11. Very easy preparation. The recipe calls for 2 graham cracker crusts, but we have also made it with the chocolate crumb crusts as well. They are delicious as well.
