4 tablespoons Chinese dry mustard
2 tablespoons water
2 tablespoons rice vinegar
4 tablespoons pickled ginger liquid
1 lemon, juiced
Pinch turmeric
1 tablespoon sugar
1 egg yolk*
1 tablespoon chile oil
1 tablespoon sesame oil
1 cup peanut oil
1 (2-inch piece) fresh ginger, peeled
3 large cloves garlic
2 green onions
Pinch red pepper flakes
1/2 cup peanut oil
Pinch salt
Pinch black pepper
Pinch sugar
1 large onion, julienned
1 medium carrot, julienned
1/4 pound shiitakes, discard stems, julienned
1 large red bell pepper, julienned
1 large yellow bell pepper, julienned
1 small green cabbage, julienned
Peanut oil, for stir-frying
Salt and pepper
1/4 pound glass noodles, soaked in water for 10 minutes, chopped into smaller strands
1/4 cup mushroom soy sauce
2 tablespoons chile paste
1 tablespoon sesame oil
1 bunch cilantro leaves, chopped
Spring roll wrappers
1 egg with 1 tablespoon each water and cornstarch, beaten together for egg wash
Peanut oil, for deep-frying

Steps:

  • Prepare the Hot Chinese Mustard Sauce. In a bowl, combine all the ingredients except the oil. Stir until well blended. Slowly whisk in the peanut oil until emulsified. Refrigerate, covered until needed.
  • Prepare the aromatic mixture. In a food processor, combine the ginger, garlic, green onions, and red pepper flakes. Turn on machine, slowly add oil, and process mixture to a puree. Saute mixture for 1 to 2 minutes. Season with salt, pepper, and sugar. Set aside.
  • Prepare the filling. In a wok, stir-fry each vegetable separately in peanut oil. Season with salt and pepper. Drain and transfer to a mixing bowl. Stir in noodles, mushroom soy sauce, chile paste, sesame oil, and cilantro. Season with salt and pepper. Set aside to cool completely. When cool, blend the filling mixture with the aromatic mixture. When ready to form the spring rolls, squeeze out all the excess liquid.
  • Make the spring rolls. Place about 1/2 cup of prepared filling per spring roll wrapper. Roll and seal edges with the egg wash. Repeat the process until all filling is used.
  • In a deep pot, with about 4 cups peanut oil heated to 350 degrees F., deep-fry in batches of 4 until golden, about 2 to 3 minutes. Drain on paper towels. Trim off the ends and slice diagonally. Drizzle top with Hot Chinese Mustard Sauce. Serve immediately.

6 large Granny Smith apples (about 3 pounds)
1/2 teaspoon finely grated fresh lime zest
2 1/2 tablespoons fresh lime juice
2 tablespoons raw sugar (available at specialty food shops)
12 (7 or 8-inch square) spring roll wrappers (available at Asian markets or by mail order from Uwajimaya)
1 stick (1/2 cup) unsalted butter
1 large egg
Vanilla ice cream
Caramel sauce

Steps:

  • Using the 1/8-inch julienne blade of a mandoline or other manual slicer, cut unpeeled apples into julienne strips. In a bowl toss apples with zest, juice, and sugar and drain in a colander 20 minutes.
  • Let spring roll wrappers stand in package at room temperature 5 minutes. Melt butter and in a small bowl with a fork lightly beat egg. Remove wrappers from package and carefully peel off 1 wrapper, covering remaining stack with a dampened kitchen towel to prevent drying.
  • On a work surface arrange wrapper with a corner pointing toward you and lightly brush with some butter, leaving top corner dry. Arrange 1/4 cup shredded apple on wrapper in a 6-inch long loose pile from left to right corners. Turn bottom corner up to cover filling and gently tighten roll, pressing it toward you. Fold right and left corners toward center and roll away from you as tightly as possible without tearing wrapper. Seal dry corner to spring roll with some egg and cover loosely with plastic wrap. Make 11 more spring rolls in the same manner. Spring rolls may be prepared up to this point 4 hours ahead and chilled, covered.
  • Preheat oven to 200 degrees.
  • In a 2-quart saucepan heat oil over modertae heat to 360 degrees on a deep-fat thermometer and fry spring rolls, 2 or 3 at a time, turning occasionally, 5 minutes, or until golden brown. (Make sure oil returns to 360 degrees between batches.) With tongs transfer spring rolls as fried to brown paper or paper towels to drain and keep warm on a baking sheet in middle of oven.
  • To serve, cut 2 spring rolls in half diagonally and arrange, pointed ends up, in a ramekin or small cup on a plate. Repeat with remaining spring rolls. Add a scoop of vanilla ice cream to the center of each ramekin or cup and drizzle with caramel sauce

Twenty years ago, I decided to open a restaurant; this spring roll recipe is something my mom developed. It's a classic dish from Vietnam but also very unique to my restaurant, Slanted Door. 3 large egg yolks
1/2 cup shallot oil or canola oil
1/4 teaspoon kosher salt
15 medium shrimp, cooked, peeled and deveined
8 ounces boneless pork shoulder, cooked and cooled, simmer in salted water for 20 minutes or until cooked through
1 head red-leaf lettuce, washed and dried
10 sheets rice paper, 12-inch round
5 cups rice vermicelli, cooked, rinse with cold water after cooking
1 bunch mint
1/2 cup roasted peanuts
2 cloves garlic, peeled
3 tablespoons red miso
3 tablespoons ketchup
3 tablespoons sugar
Juice of half a lemon
2 Thai chilies, finely chopped, use 1 chili for less-spicy sauce
1 cup sweet glutinous rice, cooked
2 tablespoons vegetarian stir-fry sauce, or oyster sauce
1/2 teaspoon toasted sesame oil

Steps:

  • Make mayonnaise: Put the egg yolks in a large mixing bowl and whisk well. Begin adding the oil to the yolks a few drops at a time, whisking constantly to emulsify. Continue adding the oil in a slow, steady stream, whisking constantly, until all the oil is incorporated. The mixture should be very thick. Whisk in the salt and set aside.
  • Slice the shrimp in half lengthwise; set aside. Thinly slice the pork against the grain; set aside. Trim lettuce at either end so that the remaining leaves are about 7-8 inches long; set aside.
  • Fill a large bowl with hot water. Dip one sheet of rice paper a quarter of the way into the water, then quickly rotate to moisten the entire sheet. Lay the wet rice paper on a cutting board (lightly oiled, optional). Lay one lettuce leaf over the bottom third of the rice paper, flattening the lettuce to crack the rib; on top of the leaf, layer a generous teaspoon of mayonnaise, about ½ cup of noodles, a few slices of pork, and three mint leaves. Fold in the left and right sides of the rice paper; fold the bottom edge up and over and roll tightly toward the top edge, completely enclosing the filling. Line up three pieces of shrimp, cut side up, in a row on the rice paper, then continue rolling as tightly as possible toward the top edge, tucking in the sides, until you have a firm cylinder. Repeat with the remaining rice paper and ingredients. Cut each roll crosswise into thirds just before serving. (Note: The rolls can be made up to 2 hours in advance. Cover with a damp towel until cutting and serving.)
  • For the peanut sauce: In a food processor, grind the peanuts to a chunky powder. Add smashed garlic cloves, miso, ketchup, sugar, lemon juice, and chilies to the peanuts; continue grinding, adding a bit of water to even out the consistency. Add the cooked rice; continue processing, thinning with water as necessary, until the sauce becomes smooth and creamy. Check the flavor, then add the stir-fry sauce and sesame oil and continue processing to combine. Transfer into a bowl. (Note: Peanut sauce can be covered and refrigerated for up to 3 days.)
