VERACRUZ-STYLE RED SNAPPER

Veracruz-Style Red Snapper image

I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

Categories     World Cuisine Recipes     Latin American     Mexican

Time 40m

Yield 2

Number Of Ingredients 14

2 tablespoons olive oil
½ white onion, diced

1 cup cherry tomatoes, halved
⅓ cup pitted, sliced green olives (such as Castelvetrano)
1 jalapeno pepper, seeded and chopped

2 teaspoons olive oil
2 (7 ounce) red snapper fillets, cut in half
salt and pepper to taste
½ teaspoon cayenne pepper, or more to taste
2 limes, juiced

Provided by Mely Martínez

Categories     Seafood

Time 45m

Number Of Ingredients 17

1 Whole Red Snapper (cleaned and scaled. About 2 to 2/12 pounds in weight.)
2 tablespoons of lime juice.
2 Tablespoon of olive oil
1/2 cup of finely chopped white onion
4 garlic cloves (finely chopped.)
1.5 Lbs tomatoes, chopped (or 28 ounces crushed tomatoes)
4 tbsp flat parsley (finely chopped (about 1/4cup).)
2 tbsp fresh thyme (chopped)
2 Bay leaves
1 teaspoon Mexican oregano
1/2 cup of Pimiento Stuffed Olive (whole or sliced.)
1 Tablespoon small capers (rinsed.)
1/4 cup raisins (Optional see note bellow*)
4 Pickled Jalapenos peppers, thinly sliced
1/4 cup dry white wine **
Salt and pepper to taste.
Warm Mexican White Rice to serve. (Optional)

Steps:

  • Season the fish with salt, pepper and lime juice inside and out. Set aside.
  • In a large ovenproof frying pan, heat the oil in on medium heat. Add the onion and sauté until transparent. Your frying pan has to be big enough to fit the fish. If you do not have a large enough oven-proof frying pan, then have a large baking dish ready to bake the fish there. Preheat your oven to 375 degrees.
  • Stir in the garlic and cook for about 2 minutes.
  • Add the crushed tomatoes or chopped tomatoes to the frying pan and cook for about 8 minutes. Add the herbs. Keep cooking for 4 more minutes or until sauce is cooked.
  • If using the dry white wine, add it while the tomatoes sauce is cooking.
  • Before adding the red snapper, add the pickled jalapeños, raisins, olives and capers and cook until the flavors combine, about 4 minutes. Season the sauce with salt and pepper.
  • To bake the fish, add some sauce to the bottom of the baking dish, then place the fish and cover it with the rest of the sauce; bake for about 30 minutes or more. The fish meat should flake when you insert a fork. (If you want to cook it using the stove-top method, place the fish into the frying pan and cover with some of the sauce. Place a lid and simmer until fish is cooked.). The cooking time will depend on the size of the fish.

  • note
  • Never heard of quinoa? Crystal invites you to get to know one of her favorite ingredients. Although quinoa (pronounced keen-wah) has been around for centuries, it isn't a mainstream pantry item in American kitchens. It has a similar texture to that of couscous or rice, with a slight crunch and a somewhat nutty flavor when cooked. Quinoa is considered a super food because it contains more protein than any other grain, and this protein is complete, containing all nine essential amino acids. Look for quinoa at your local grocery. Your body will thank you for it.

WHOLE SNAPPER WITH GRILLED VERA CRUZ SALSA

Whole Snapper with Grilled Vera Cruz Salsa image

Provided by Bobby Flay | Bio & Top Recipes

Time 1h55m

Yield 4 servings

Number Of Ingredients 24

2 red bell peppers
8 plum tomatoes, halved
2 serrano chiles
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup pitted Manzanilla olives, chopped
1/4 cup chopped fresh cilantro
2 tablespoons capers, drained
2 teaspoons fresh thyme leaves, finely chopped
1 teaspoon dried Mexican oregano
3 tablespoons aged sherry vinegar
1/4 cup extra-virgin olive oil
2 tablespoons achiote seeds
1 tablespoon coriander seeds
1 tablespoon dried Mexican oregano
1 tablespoon paprika
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Juice of 2 limes
2 cloves garlic, chopped
1/4 cup canola or other vegetable oil
Four 1 1/2-pound whole pink Thai snappers, gutted and scaled
Fresh cilantro leaves, for garnish
Fresh thyme sprigs, for garnish

Steps:

  • For the salsa: Preheat a charcoal grill for medium-high heat.
  • Brush the bell peppers, tomatoes and chiles with oil and season with salt and pepper.
  • Grill the bell peppers until charred on all sides and just cooked through, about 2 minutes per side. Remove to a bowl, cover with plastic wrap and let steam for 15 minutes. Remove the skin and seeds and dice.
  • Grill the tomatoes until charred on all sides and just cooked through, about 2 minutes per side. Remove to a cutting board, let rest for 10 minutes and coarsely chop.
  • Grill the chiles until charred on both sides, about 2 minutes per side. Remove to a bowl, cover with plastic wrap and let steam for 10 minutes, and finely chop.
  • Combine the bell peppers, tomatoes, chiles, olives, cilantro, capers, thyme, oregano, vinegar and oil in a medium bowl and season with salt and pepper. Let the mixture sit at room temperature for 30 minutes before serving to allow the flavors to meld.
  • For the snapper: Combine the achiote, coriander and oregano in a small saute pan and toast over low heat until just fragrant, about 2 minutes. Remove from the heat, let cool slightly and grind in a coffee grinder. Combine the ground spices with the paprika, salt and pepper in a large baking dish. Add the lime juice, garlic and oil, and whisk until the consistency a smooth paste. Sprinkle the fish all over with salt and pepper. Rub one side of each fish generously with some of the paste. Cover and marinate for 20 minutes.
  • Preheat a charcoal grill for direct medium-high heat and indirect grilling.
  • Grill the fish, paste-side down, over the direct heat, until the paste is nicely charred, 5 to 7 minutes. Carefully flip the fish over using a large, heavy duty spatula and move the fish to the opposite side of the coals. Cover the grill and continue cooking until just cooked through, 10 to 15 minutes. Transfer the fish to a large platter. Spoon the salsa on top and garnish with the fresh herbs.

GRILLED BLACKENED RED SNAPPER

Grilled Blackened Red Snapper image

These red snapper fillets are grilled very hot and fast, which blackens the seasonings, then they are topped off with a flavorful butter sauce.

Provided by Derrick Riches

Categories     Entree     Dinner

Time 20m

Yield 2

Number Of Ingredients 12

1 teaspoon paprika
Optional: 1/4 teaspoon cayenne (or more to taste)
1 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon black pepper
2 red snapper fillets (halved)
2 tablespoons lemon juice
1/2 cup butter
1 tablespoon parsley (minced)

Steps:

  • Gather the ingredients.
  • Mix together the paprika, cayenne, 1 teaspoon salt, garlic salt, onion salt, thyme, oregano, and pepper.
  • Sprinkle the seasoning over each side of the snapper. Prepare a gas or charcoal grill to high heat (500F to 600F).
  • Bring the lemon juice to a simmer in a small saucepan or heat to a simmer in the microwave in a safe dish.
  • Remove from heat and add butter, and salt to taste. Mix well.
  • Right before placing fish on the grill, oil the grill grates well. Make several passes as this will create a nice non-stick surface.
  • Grill the red snapper about 4 to 5 minutes on one side, depending on thickness, until the seasonings are blackened.
  • Turn the snapper over and grill for another 4 to 5 minutes until done or until the fish reaches an internal temperature of 145 F.
  • Remove the fish from grill and plate. Add parsley to the lemon butter and spoon 1/4 of the butter mixture over each piece of fish.
