2 pounds Yukon Gold potatoes, unpeeled and 1-inch-diced
8 large garlic cloves, smashed and peeled
2 large or 4 small branches fresh rosemary
1/2 large lemon, cut in half through the stem and thinly sliced crosswise
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
Fleur de sel

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a sheet pan, add the garlic, rosemary, lemon, olive oil, 2 teaspoons kosher salt, and 1 teaspoon pepper, and toss until everything is coated with oil. Spread out in one layer.
  • Roast for 50 to 60 minutes, turning the potatoes with a metal spatula every 20 minutes, until the potatoes are browned and crisp on the outside and tender inside. The garlic will be browned and sweet and the lemon slices will be caramelized. Discard the rosemary branches, sprinkle with fleur de sel, and serve hot.

2kg Maris Piper potatoes
1 garlic bulb, cut in half lengthways
100ml rapeseed or sunflower oil
8-10 fresh bay leaves
½ tsp lemon , zested

Steps:

  • Peel and halve or quarter the potatoes, if large, so they're all the same size. Put in a large pan and cover with cold water and a pinch of salt. Add one half of the garlic bulb. Bring to a simmer and cook for 10 mins until a knife goes easily through the potatoes, then drain well, reserving the garlic. Leave the potatoes to steam-dry in the pan for 10 mins. Heat the oven to 220C/200C fan/gas 7.
  • Pour the oil into a large baking tray or two smaller ones - it should cover the base of the tray, so add a little more if you need to. Heat in the oven for 10 mins until really hot. Carefully transfer the spuds to the oil, leaving lots of room between each one (otherwise they will steam, rather than roast) and coat in the oil, taking care not to splash yourself. Season, then add both halves of the garlic, blanched and not, and nestle the bay leaves underneath the spuds.
  • Roast for 40-45 mins, turning halfway through and coating in more oil, until golden and crunchy. Season with more salt and pepper, and zest the lemon directly over the potatoes so the essential oils spritz over the spuds. Serve with the roasted garlic in its shell.

½ cup fresh lemon juice
⅓ cup vegetable oil

  • Preheat oven to 475 degrees F (245 degrees C).

1 tablespoon coriander seeds
extra virgin olive oil

  • Preheat the oven to 200ºC/gas 4.
  • Peel and halve the potatoes, cut the lemons into wedges and bash the coriander seeds in a pestle and mortar.
  • Parboil the potatoes in boiling salted water for 10 to 12 minutes, until soft around outsides. Drain well and let steam-dry for 1 minute.

  • Season the chicken halves on both sides with salt and black pepper, then place skin side down in the roasting pan.
  • In a bowl season the potatoes with salt and pepper then place the potatoes around the chicken.

6 medium potatoes, washed, unpeeled, thinly sliced (6 cups)
1 medium onion, thinly sliced
2 tablespoons minced roasted garlic (purchased)

1/2 teaspoon salt
1/4 teaspoon ground pepper
4 tablespoons butter

Steps:

  • Heat gas grill on medium or charcoal grill until coals are ash white.

2 lbs baking potatoes, peeled and cut into 1-inch cubes
2 tablespoons lemon juice
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt (or to taste)
4 -5 garlic cloves, sliced thin (or minced)

Steps:

  • Spray an 9x13-inch baking pan with cooking spray, or coat bottom of dish with oil.
  • Preheat oven to 425°F
  • Combine potatoes with remaining ingredients in a bowl; toss to coat completely.
  • Let coated potatoes stand 10 minutes.
  • Spoon potato mixture into prepared baking pan in a single layer.
  • Bake for 35-40 minutes or until tender and lightly browned, stirring occasionally. I cook a little longer, because I like mine brown and crispy!

1 pound small red potatoes
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

Perfectly seasoned with rosemary and lemon, these crispy roasted potatoes are packed with flavour and always a hit!

2 lbs. Yukon gold potatoes (900 g)
3 tbsp olive oil (45 ml)
2 tbsp finely chopped fresh rosemary plus several sprigs
2 tbsp lemon zest
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder

Steps:

  • Start bringing a large pot of water to a boil on the stovetop.
  • While you wait, chop the potatoes into approximately 1-inch chunks and prepare the lemon juice, lemon zest and chopped rosemary.
  • Once the water is boiling, add the potatoes and boil for 7 minutes.
  • Drain and shake off excess water then let cool for 5-10 minutes. While you wait, preheat the oven to 400 F (200 C) and line a large baking tray with parchment paper.
  • Add the potatoes and sprinkle/drizzle the rest of the ingredients over them. Use your hands or a spatula to mix well then evenly space the potatoes out on the tray in on layer. If you'd like to you place a few sprigs of rosemary around the pan along with some chopped pieces of the lemon.
  • Roast for 30-35 minutes until tender and browned.
  • Discard the rosemary sprigs and lemon from the pan and serve right away.

4 pounds unpeeled fingerling potatoes in assorted colors (such as red, white, and purple), rinsed, halved lengthwise
1/2 cup olive oil
1 cup extra-virgin olive oil
1/2 cup fresh lemon juice
6 tablespoons chopped fresh dill
4 teaspoons finely grated lemon peel
24 garlic cloves, sliced

Steps:

  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 375°. Spray 2 large rimmed baking sheets with nonstick spray. Toss potatoes with 1/2 cup olive oil in large bowl. Sprinkle generously with salt and freshly ground black pepper. Spread potatoes in single layer on baking sheets, dividing equally. Roast 30 minutes.
  • Meanwhile, whisk extra-virgin olive oil, lemon juice, dill, and lemon peel in small bowl to blend for dressing. Toss garlic and 2 tablespoons dressing in another small bowl. Divide garlic mixture between baking sheets with potatoes and toss; reverse baking sheets and continue to roast until potatoes are tender and brown around edges, about 15 minutes longer.
  • Toss roasted potatoes in large bowl with enough of remaining dressing to coat and serve.

If you're used to visiting Greece in the summer you'll most often see it fried in olive oil as the universal side dish. But what I want to share with you today is my all-time favorite recipe for roasted Greek lemon potatoes

2 pound potatoes, cut into wedges
1/3 cup extra virgin olive oil
4 garlic cloves, minced (a teaspoon of garlic powder would be ok)
1 tablespoon dried oregano
1/2 cup broth (chicken or vegetable) or water
2 teaspoons (or more to taste, especially if you're not using broth), kosher salt
1 teaspoon black pepper
2 lemons (juice and zest)
1/4 cup mustard (optional, but adds great depth of flavor)

Steps:

  • Preheat your oven to 425ºF (use the convection function if your oven has one). Cut your potatoes into wedges.
  • Toss potatoes in a roasting pan with olive oil, garlic, 2 teaspoons salt, pepper, oregano, and mustard (if you are using).
  • Mix the lemon juice with broth/water, and carefully pour into the pan around/between the potatoes, being careful not to wash the other seasoning off the potatoes.
  • Roast potatoes for 30 minutes. Then give them a shake/toss, and roast 15-20 minutes more.
  • Remove from oven. Garnish with parsley (optional), additional oregano, and lemon to taste.
