7 cups chopped, one inch cubed yams ((equivalent to 3 big ones. scrubbed and skinned))
1/2 cup granulated sugar
1/8 cup granulated sugar
1 stick of unsalted butter ((chopped into pieces))
4 cups mini marshmallows
Ground Cinnamon to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a big mixing bowl, mix the 1/2 cup and 1/8 cup of sugar with the chopped yams.
  • Place chopped yams in a greased 9x13 inch baking dish.
  • Take the chopped butter pieces and place them on top of the yams, making sure to spread out the pieces.
  • Take the ground cinnamon and sprinkle on top of the butter and yams.
  • Bake for 45 minutes.
  • Sprinkle the 4 cups of mini marshmallows on top.
  • Bake for another 10 minutes or until marshmallows start to brown.

Steps:

  • Preheat the oven to 350 F.
  • Wash the yams.
  • Peel, then chop the yams ( make sure that they are about 1/2 inch thick.)
  • Place the yams into a 9x13 bake dish.
  • Place the butter into a medium sized pot, then melt it over medium heat.
  • Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
  • Turn the stove off, mix the ingredients, then add in the vanilla extract.
  • Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
  • Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
  • Remove the yams from the oven, and baste them with the candied mixture.
  • Cover the yams, and bake them for another 15-20 minutes.
  • Remove the yams from the oven, and let them sit for about 10 minutes before serving.

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl.   • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.

Steps:

  • Preheat oven to 375F. Spray a 3 quart baking dish with nonstick cooking spray and set aside.
  • Peel sweet potatoes and rinse clean. Slice potatoes to 1/2 inch thick slices. Try to keep them roughly the same thickness so they cook evenly.
  • In a medium bowl, combine brown sugar, melted butter, maple syrup, ground cinnamon, vanilla extract and salt. Whisk until smooth. If the mixture is very thick, pop in the microwave for 30 seconds to loosen it up.
  • Transfer sliced sweet potatoes to the prepared baking dish and spread evenly.

1 1/2 tablespoons vegan butter or high-heat oil
1/4 cup (50 g) brown sugar (or sub coconut sugar)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
1/2 cup (60 g) pecan pieces
Optional: flaky salt, for serving

Steps:

  • prepare a steam bath for the sweet potatoes; I filled a large pot with 1/2″ of water and placed a metal sieve over top of it. Once the water starts to steam, add in the sweet potatoes and cover. Steam for 10 to 12 minutes, until fork tender. Once tender, remove from the pot and set aside; save 2-3 tablespoons of the steaming water for step 3.
  • Melt the butter in a large saucepan or skillet over medium heat. Once melted, add in the brown sugar, cinnamon, ginger, and salt and whisk well, until a glossy syrup forms. Add 1 tablespoon of the steaming liquid to the pot and quickly whisk until the brown sugar has melted (add more water only if necessary).
  • Add the steamed sweet potatoes and pecans to the butter/sugar mixture, spreading them evenly across the pan. Use a spatula to flip or stir the mixture every 2 min, cooking for 10-12 minutes total. Potatoes are done when slightly browned and nuts are golden.
  • Transfer to a serving dish and top with flaky salt, if desired. Serve warm; leftovers will keep in the refrigerator for up to 5 days.

1/2 cup strawberry preserves

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Candied yams are an old-fashioned African-American recipe. A sweet potato soul food side dish cooked to perfection in a cinnamon-brown sugar glaze.

3 pounds sweet potatoes (3 -3 ½ pounds)
6 cups water (cool water)
½ cup water
½ cup butter (unsalted butter, or vegan butter)
½ cup brown sugar
½ cup sugar (granulated )
2 teaspoons cinnamon (of ground )
½ teaspoon nutmeg
2 tablespoons maple syrup
¼ teaspoon ginger (ground or minced)
¼ teaspoon cloves (ground )
1 tablespoon vanilla extract
1 ½ cups marshmallows (*Optional - miniature marshmallows for topping)

Steps:

  • Wash the sweet potatoes. (I like to use this vegetable scrubber HERE.)
  • Peel and cut the sweet potatoes into thick round wedges.
  • Then set them aside to soak in a bowl of cool water to prevent browning while you're preparing the candied yams syrup.
  • Melt the butter in a medium-sized bowl in the microwave.
  • Add the brown sugar, granulated sugar, cinnamon, nutmeg, maple syrup, ginger, ground clove, and vanilla extract to the melted butter.
  • Mix the ingredients well to create the syrup glaze for the candied yams.
  • Next, Drain the sweet potato rounds in a colander.
  • Open the Instant Pot lid and add ½ a cup of water and the sweet potato rounds to the stainless-steel inner pot.
  • Pour the syrup glaze over the sweet potatoes.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 5 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 5 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
  • Optional - Open the Instant Pot lid and sprinkle the miniature marshmallows over the cooked, candied yams.
  • With the lid placed not entirely on the Instant Pot (in a resting position, so it doesn't lock back into position on the pot) continue with the setting on 'keep warm.'
  • After about 5 minutes, check to see if the marshmallows have melted.
  • Once the marshmallows are melted, turn off the Instant Pot and transfer your Black folks' Southern candied yams recipe to a serving dish.
  • Serve right away and enjoy!

8 tablespoons (1 stick) salted butter

One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Candied yams are a holiday side dish staple. This version uses fresh sweet potatoes and turns out delicious. It's made with simple ingredients and an easy dish to prepare. Once baked, the sweet potatoes are dripping in a buttery brown sugar sauce filled with cinnamon flavor. We could seriously have eaten spoonfuls of the sauce.

3 lb fresh sweet potatoes
2 c water
1 1/2 tsp vanilla extract
6 Tbsp butter, melted
1 c sugar
1 c brown sugar, light
1 tsp ground cinnamon
1 tsp all spice (or 1/2 teaspoon nutmeg)

Steps:

  • 1. Pre-heat oven to 400 degrees. Peel the sweet potato and place in a baking dish.
  • 2. Pour water and vanilla into the baking dish.
  • 3. Now, add both sugars, cinnamon, and allspice.
  • 4. Sprinkle butter over this.
  • 5. Cover the baking pan tightly with aluminum foil. Bake for about 65 minutes.
  • 6. Remove sweet potatoes from the oven.
  • 7. Slice or mash the potatoes.
