SPICED COFFEE

Spiced Coffee image

A deliciously spiced coffee which enhances the coffee drinking experience, and is therefore particularly welcome when you're aiming to reduce the calories in your daily diet. Because it has no milk, it has NO fat and, at 17 calories, it is super-low in calories. Compare that with a creamy cappuccino! Adapted from Australian chef flip shelton's 'green: modern vegetarian recipes', and posted for the post-ZWT Healthy for the Holidays Challenge! When I make this next time, I'm going to try it without the fennel seeds and with a tablespoon of orange juice.

SPICED MOROCCAN COFFEE

Spiced Moroccan Coffee image

This recipe makes a large batch of Moroccan coffee and serves up to four large mugs. It is difficult to scale the recipe down because the spice measurements are fairly small. If you can reliably measure tiny amounts of spices, then you can adjust the recipe to your desired volume freely.

Provided by Sean Brennan

Categories     Drinks

Time 11m

Number Of Ingredients 8

32 oz water
2 oz dark roast coffee (coarsely ground)
¼ teaspoon ground cinnamon
¼ teaspoon ground black peppercorns
¼ teaspoon ground nutmeg
¼ teaspoon ginger
⅛ teaspoon ground cardamom pods
⅛ teaspoon ground clove

Steps:

  • Start by preparing your coffee as you normally would for brewing a regular cup of French press coffee. Grind dark roast coffee on a coarse setting.
  • If you have a spice grinder, use it to grind the spices. Otherwise, measure pre-ground spices and add them to the French press with the coffee.
  • In a small saucepan, pour enough milk for the desired number of cups. The amount is entirely up to you.
  • Heat the milk on low until it's hot but not boiling.
  • Pour between 180 g and 200 g of boiling water over the coffee-spice mixture. Start a timer.
  • Wait 1 minute before pouring the remaining water up to a total of 900 g (32 oz).
  • After 4 minutes, press the plunger on the French press with even pressure. Try to move the plunger slowly and smoothly. Be sure not to press the coffee and spices into the bottom of the French press, as doing so will produce bitter, harsh coffee.
  • Decant the coffee into mugs and add hot milk to taste. You can also add sugar to taste, although we recommend trying it without sugar first. There are so many flavors present in the cup that even people who regularly take their coffee with sugar often drink Moroccan coffee without it.

PUMPKIN-SPICED IRISH COFFEE

Pumpkin-Spiced Irish Coffee image

Unless I can basically put a wedge of pumpkin pie from my Thanksgiving leftovers into the blender and stir it into hot coffee, it's likely not "pumpkin spice" enough for me! I took the heart of my pie filling recipe and converted it into a mix I keep in the fridge. I just spoon a few tablespoons into a cup with searing hot coffee and foamed hot milk for a latte that feels homemade and has such a clear, deep flavor.

Provided by Alex Guarnaschelli

Categories     beverage

Time 15m

Yield 2 to 4 drinks

Number Of Ingredients 12

About 3/4 cup Pumpkin Spice Mix, recipe follows
1/2 cup whole milk
1 1/2 cups hot strongly brewed coffee
Two 2-ounce shots whiskey
Whipped cream, to serve
Ground cinnamon, to serve
One 15-ounce can pumpkin puree
1 cup whole milk
1 cup sugar
2 tablespoons molasses
1 tablespoon pumpkin pie spice
1/2 teaspoon kosher salt

Steps:

  • If the pumpkin spice mixture is not warm, heat it in a small saucepan or microwave. In a small saucepan, heat the milk over medium heat, whisking as it heats, until it simmers and becomes foamy, 3 to 4 minutes. (Alternatively, microwave the milk until it's hot and then whisk.) Add the warm pumpkin spice mixture into the warm milk and continue to whisk until frothy.
  • To serve, divide the hot coffee and whiskey between two tall heat-resistant glasses or mugs. Divide and stir the pumpkin-milk mixture into the glasses, stirring to keep the foam up, until smooth. Top with whipped cream and a dusting of cinnamon.
  • Make the pumpkin mix: In a medium saucepan, whisk together the pumpkin puree, milk, sugar, molasses, pumpkin pie spice and salt. Mix until thoroughly combined. Bring to a simmer over medium heat, stirring, 2 to 3 minutes. If not using immediately, transfer to a storage container and refrigerate for up to 1 week.

MOROCCAN SPICED COFFEE OR ESPRESSO

Moroccan Spiced Coffee or Espresso image

This Moroccan spiced coffee recipe is well-suited for brewing in an automatic drip maker, stovetop Moka, or French coffee press.

Provided by Christine Benlafquih

Categories     Breakfast     Brunch     Coffee     Beverage

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 8

1/2 cup coffee beans, or espresso beans
1 tablespoon ground cinnamon
1 or 2 whole cloves
Seeds from 3 or 4 cardamom pods
1/4 teaspoon nutmeg , freshly grated
1/4 teaspoon ground ginger, optional
1/4 teaspoon black pepper, optional
Sugar and hot milk, for serving, optional

Steps:

  • Gather the ingredients.
  • Place all ingredients into a coffee grinder and process.
  • The spiced coffee is best used immediately. If you don't need all of it, store the spiced ground coffee in a light-proof, airtight container.

MOROCCAN COFFEE WITH SIX FRAGRANT SPICES

Moroccan Coffee With Six Fragrant Spices image

A jolt of Moroccan coffee with warming spices might just put body and soul back together at any time you like. I use double the amount of the spices. Use the amount that will best suit your taste.

Provided by Annacia

Categories     Beverages

Time 12m

Yield 4-6 serving(s)

Number Of Ingredients 10

1/4 teaspoon freshly ground cinnamon
1/4 teaspoon freshly ground black peppercorns
1/4 teaspoon freshly ground ginger
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon freshly ground green cardamom seeds
1/8 teaspoon freshly ground clove
scant 1 cup freshly roasted coffee beans
4 cups boiling water
hot milk, to taste
sugar, if desired

Steps:

  • Combine the spices with the coffee beans in a grinder and whirr until the beans are finely ground.
  • Bring 4 cups of water to boil.
  • Put some milk-a cup or more-in a small saucepan over a low flame to heat. Do not let it come to a boil.
  • If you are making the coffee in a filtered maker: Pour the coffee mixture into the paper-lined brewing cup. Pour about 2 ounces of boiling water over the coffee to allow the grounds to "bloom." Then slowly add the rest of the water, allowing it to drip through the grounds into the pot below.
  • Or (for Mikekey) if you are using a French press: Put the coffee and spice mixture in the bottom of the press pot. Pour in the requisite amount of boiling water, put the top in place and let the mixture steep for 4 to 5 minutes. Press the plunger down.
  • Pour the spiced coffee into cups and add hot milk (and sugar) if desired. Serve at once.
