ROAST PORK WITH SWEET-AND-SOUR CHILE CILANTRO SAUCE

- Prepare pork loin:
- Preheat oven to 400°F.
- Coarsely crush coriander seeds with a mortar and pestle or an electric coffee/spice grinder, then stir together with bread crumbs, oil, pepper, and salt in a small bowl.
- Turn pork so a long side is closest to you and season with salt and pepper. Pat one third of seasoned crumbs onto pork, leaving a 2-inch border along top edge. Starting with side nearest you, roll meat into a cylinder and tie securely with kitchen string. Coat pork with remaining crumbs.
- Roast pork on a rack in a roasting pan in middle of oven 15 minutes. Reduce temperature to 325°F and roast until an instant-read thermometer diagonally inserted at least 2 inches into meat registers 155°F, 1 to 1 1/4 hours more. Let pork stand, loosely covered, 10 minutes.
- Make sauce while pork roasts:
- Simmer bell pepper, caribe, honey, lime juice, and salt in a 1-quart heavy saucepan over moderate heat, stirring occasionally, until sauce is slightly thickened, about 30 minutes. Cool sauce to warm or room temperature, then stir in cilantro just before serving.
- Slice pork and serve with sauce.

- Dissolve beef boullion cubes in warm/hot apple juice.
- Place all in crock pot.
- Let it do its thing for 6 hours on high. There's going to be a lot of juice -- like a pot roast/stew kinda thing. Its really fork-tender we suggest serving with garlic mashed potatoes.

SWEET N SOUR CROCK POT PORK

Steps:
- Salt and pepper and dredge roast(or ribs)in flour.
- Heat 2 tablespoons oil in skillet; and brown meat on all sides; remove to crock pot.
- Saute fresh mushroom and onions to soften. Do not over cook! Place mushrooms and onions in crock pot over meat.
- In small mixing bowl, combine duck sauce, wine/water, and red pepper flakes. Pour over meat and veggies.
- Cook on LOW for 6-8 hours or HIGH for 4 hours.
- Remove meat and cut into chunks. Thicken sauce if needed; return meat to sauce.
- Serve with rice or chow mein noodles.

- 1. Mix the spices and coffee into the sugar and coat the pork roast with it.
- 2. Place in a slow cooker on low for 8 hpours or on high for 3 1/2 hours. Serve with sweet potatoes and cranberry sauce. We served broccoli also
BARBECUE ROAST PORK WITH FRUITY SWEET AND SOUR SAUCE
This dish is so easy to make.The fruity sauce would go well with chicken or fish too. I made the pork and coated cooked baby potatoes in the juices, lovely. I've made this sauce twice now and everyone loves it. I'm going to try it with bananas too, I've made it with and without the apple and it's just as good.

- Preheat oven to 190°C.
- Mix Marinade ingredients together. Tomato puree, soy sauce, 1 tsp vinegar, honey, brown sugar, 5 spice, garlic, chilli and seasoning, coat the joint and marinate for an hour.
- Baste Pork and Roast for 1 3/4 hrs, basting occasionally.
- Sauté the onions and garlic in both oils until softened.
- Add the fruit,2 1/2 cups water, sugar, vinegar, ketchup and seasoning.
- Simmer for 10 minutes.
- Mix cornflour and tbsp water to runny mixture.
- Pour cornflour mixture into sauce, stirring until thickened.
- Simmer for another 5 minutes.
- Keep warm.
- When meat is ready take out and rest on a plate.
- Pour meat juices into a pan, warm and add cooked potatoes, coat and heat.
- Slice meat adding any juices to the potatoes.
- Serve with mixed vegetables eg carrots, broccoli and red cabbage for colour variety.
EMERIL LAGASSE'S ORANGE, CUMIN AND CILANTRO ROASTED PORK LOIN
I got this recipe from GMA's recipe mail. The combination of orange and cumin give this pork a tasty flavor. Enjoy it with the grilled sweet potato salad. I haven't tried it, but it look's like it is very easy to make.

- Preheat the oven to 400 degrees F.
- Heat a large skillet over medium high heat. Rub the pork loin well on all sides with the olive oil, and season it with the kosher salt, cumin, and black pepper. Place the pork loin, fat side down, in the skillet and cook, turning occasionally, until well-browned on all sides, 10 to 12 minutes. Remove the pork from the skillet and place it in a small roasting pan or baking dish that holds it snugly.
- In a medium bowl, combine the orange juice, lime juice, vinegar, and marmalade, and whisk well to combine. Drizzle the citrus mixture over the pork.
- Place the roasting pan in the oven, and cook until the pork reaches an internal temperature of 140°F, basting the pork with the pan juices occasionally. (Take care not to overcook the pork.) Should the pan juices evaporate and begin to scorch before the pork is done, add a bit of water to keep it from burning.
- Remove the pork from the oven, add the cilantro to the roasting pan, and swirl it in the pan juices. Allow the pork to rest for 7 to 10 minutes before slicing. Serve the pork thinly sliced, drizzled with pan juices.

TASTES AUTHENTIC SWEET AND SOUR PORK
This sauce is as good as any Sweet and Sour sauce I have ever had in any Chinese restaurant. This recipe works wonderfully with leftover pork roast and I once prepared shrimp using this recipe and it was great. Sometimes I make the sauce alone to use with frozen eggrolls for a really easy meal. I love sweet and sour dishes and this is the best one I have found as well as being very easy to prepare from ingredients on hand. (Prep time includes time needed to let meat sit, which is key to this recipe)

Steps:
- Remove excess fat from pork and cut into cubes.
- Combine: eggs, 1/2 tsp salt, Accent, 2 tsp soy sauce and 4 T cornstarch.
- Place pork into egg mixture and coat well.
- Roll pork in cracker crumbs and let sit 1/2 hour (it is important to let the pork set for 1/2 hour before cooking).
- Deep fry the pork and drain on paper towels.
- Prepare sauce: Combine vinegar, catsup, water, Tabasco, sugar, Worchestershire and 2 pinches salt in a large saucepan.
- Bring to a slow boil then simmer for about 1 minute.
- Keep heat at medium to medium-high.
- Add green peppers to sauce and cook for about 30 seconds.
- Combine water and cornstarch then add mixture to sauce, stirring well.
- Add pineapple and pork to sauce and stir, cooking for about 30 seconds until evenly mixed and thick.
