1 pound tomatillos, husks removed
1 small sweet onion, cut into 1/2-inch slices
4 garlic cloves, unpeeled
1/2 cup fresh cilantro leaves
1 serrano pepper, seeded
1 tablespoon lime juice
Dash salt and pepper
TACOS:
1/4 cup lime juice
1/4 cup olive oil
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
2 pounds halibut steaks
8 corn tortillas (6 inches)
2-1/2 cups shredded cabbage

Steps:

  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. For salsa, place the tomatillos, onion and garlic on a grilling grid; place on a grill rack. Grill, covered, over medium heat until tender and browned, turning frequently. Cool to room temperature., Remove skin from garlic. Transfer grilled vegetables to a food processor. Add the cilantro, serrano pepper, lime juice, salt and pepper. Cover and pulse until chunky. Refrigerate until serving., In a large resealable plastic bag, combine the lime juice, oil, salt, garlic powder, coriander, cumin and cayenne; add halibut. Seal bag and turn to coat; refrigerate for up to 1 hour., Drain and discard marinade. Grill halibut, covered, over medium heat for 4-6 minutes on each side or until fish flakes easily with a fork. Flake fish into 1-1/2 in. pieces; cool to room temperature., To serve, top tortillas with fish, cabbage and salsa.

1/2 pint red pear tomatoes, halved
1/2 pint yellow pear tomatoes, halved
1/2 cup pitted kalamata olives
1/2 small red onion, diced
1/4 cup chopped flat-leaf parsley
2 tablespoons chopped fresh tarragon leaves, plus 2 tablespoons, for garnish
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
5 cloves garlic, crushed to a paste
1/4 cup olive oil
4 (8-ounce) halibut fillets

Steps:

  • Combine tomatoes, olives, onion, parsley, tarragon and extra-virgin olive oil in a small bowl and season with salt and pepper, to taste. Let sit at room temperature for 30 minutes before serving.
  • Combine the garlic and the olive oil in a small bowl. Brush both sides of the halibut with the oil and let marinate for 15 minutes.
  • Heat the grill to high.
  • Season the halibut with salt and pepper, to taste, on both sides and grill until slightly charred and just cooked through, about 5 minutes per side. Remove from the grill to a platter. Garnish with tarragon and serve immediately with the tomato relish on the side.

¼ cup olive oil
¼ cup chopped cilantro
1 jalapeno pepper, diced
1 tablespoon ground ancho chile powder
¼ teaspoon ground cumin

½ pound halibut fillets
8 corn tortillas
2 cups shredded cabbage
1 (8 ounce) jar salsa
1 cup shredded pepper Jack cheese
1 avocado, sliced

Steps:

  • Stir lime juice, olive oil, cilantro, jalapeno, chile powder, cumin, salt, and pepper together in a large bowl or resealable zip-top bag. Add halibut and marinate for 20 to 25 minutes. Do not over-marinate, as lime juice will start to 'cook' the fish.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Drain marinade; grill fillets for 5 minutes. Turn and cook until fish flakes easily with a fork, about 2 minutes more.

1 lb halibut fillet
2 tablespoons olive oil
1/2 cup green onion, thinly sliced
2 tablespoons fresh dill, chopped
1 pint cherry tomatoes, cut in half

Steps:

  • Preheat the boiler.
  • Brush the fish with 1 tablespoons of the oil, season with salt and pepper and place under the broiler for 5 minutes per side or until the fish flakes readily with a fork.
  • Meanwhile, make the sauce by heating the remaining 1 tablespoons of olive oil in a frying pan.
  • Add green onions and cook until translucent but not browned.
  • Add dill and tomato halves.

1 cup hoisin sauce
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
4 garlic cloves, coarsely chopped
1 teaspoon sesame oil
16 thin pork chops (or 8 regular)
6 green onions
2 tablespoons olive oil (plus a little for brushing)
1 medium pineapple, peeled and diced (or canned)
1 jalapeno pepper, finely chopped
2 tablespoons fresh lime juice
1 tablespoon honey
2 tablespoons cilantro, coarsely chopped

Steps:

  • In a small bowl, combine hoisin, vinegar, soy, garlic and sesame oil.
  • Place the chops in a shallow pan and pour the marinade over them. Refrigerate 2-3 hours.
  • Preheat grill hot.
  • Brush the green onions with a little olive oil and season with salt and pepper.
  • Grill until almost cooked through, 4-5 minutes, and finely slice.
  • Place in a bowl and add the rest of the relish ingredients. Stir to combine.
  • Remove the chops from the marinade, shaking off the excess and discard the marinade.
  • Season chops with salt and pepper and grill until medium well.
  • Arrange on a large serving platter and serve with relish alongside.

I live in the "Halibut Capitol of the World" and we love it and eat a lot of halibut. Halibut tacos are popular in my family and we have two styles, one son makes the battered and fried style..this is how my oldest son, Cody makes them...usually with leftover halibut. Both styles are really yummy!

2 tablespoons salsa
2 tablespoons taco seasoning
1 teaspoon cumin
1 lime, juice of
tortilla, warmed (corn or flour)

1/2 cup salsa (for topping)
1 cup cheese, grated (cheddar or jack)
tomatoes, diced (optional)
onion, diced (optional)
avocado, diced (optional)
black olives, sliced (optional)
sour cream (optional)

Steps:

  • Flake the cooked halibut into a skillet. Add the 2 tablespoons of salsa, taco seasoning and cumin, and gently stir til combined and hot. 2 teaspoons canola oil
2 garlic cloves, minced
2 teaspoons chili powder

  • Cut the halibut into bite size pieces and place in bowl with the other ingredients and toss until well covered. Place bowl in refrigerator while you prepare relish.
  • Combine all the relish ingredients in a bowl, stir well, and place in refrigerator while halibut is grilling.
  • Spray grilling surface with canola oil spray and warm the grill to 350 degrees. NOTE:I use a grilling pan placed on top of the grates of the grill.
  • Wrap tortillas in aluminum foil and place to the side of the heat source in the grill to warm.
  • Close grill lid - check after 3 minutes and turn halibut and tortillas.
  • When halibut flakes it is done, remove along with the tortillas.
  • Plate with yogurt, avocado slices and chopped lettuce.
