A classic Lemon Curd recipe, made with lemon juice and zest, whole eggs, and butter. Use your lemon curd on scones, in yogurt, or between layers of meringue.

Number Of Ingredients 5

1/2 cup fresh lemon juice
2 teaspoons finely grated fresh lemon zest
1/2 cup sugar
3 large eggs
3/4 stick (6 tablespoons) unsalted butter, cut into bits

Steps:

  • Whisk together juice, zest, sugar, and eggs in a 2-quart heavy saucepan. Stir in butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubble appears on surface, about 6 minutes.
  • Transfer lemon curd to a bowl and chill, its surface covered with plastic wrap, until cold, at least 1 hour.

This showstopping dessert tastes just as luscious as it looks! A tangy lemon curd filling is layered on a from-scratch buttery shortbread crust (just press right into the tart pan, no rolling required!) and garnished with beautiful, fresh berries to make this tart the star of any show. Top individual servings with sweetened whipped cream for an extra-sweet touch.

3/4 cup butter, softened
1/4 cup sugar
2 cups Gold Medal™ all-purpose flour
1 cup sugar
3 tablespoons cornstarch
1 cup water
1 1/2 teaspoons grated lemon zest
1/4 cup fresh lemon juice
2 egg yolks
2 tablespoons butter, cut into pieces
Fresh assorted berries and sweetened whipped cream, as desired

Steps:

  • Heat oven to 350°F. Spray 9-inch tart pan with 1-inch rim and removable bottom with cooking spray.
  • In large bowl, beat 3/4 cup softened butter and 1/4 cup sugar with spoon until well mixed. Stir in flour until blended (dough will be crumbly but can be pressed together). Pat and press dough very firmly on bottom and up sides of tart pan. Bake 14 to 18 minutes or until crust is set in center but still pale. Cool 15 minutes.
  • In 2-quart saucepan, mix 1 cup sugar and the cornstarch. Gradually stir in water, lemon zest and lemon juice until smooth. Cook and stir over medium-high heat. Heat to boiling; boil 1 minute, stirring constantly, until mixture is bubbly and thickened. Remove from heat.
  • In small bowl, beat egg yolks with whisk. Gradually beat about 1/2 cup hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture in saucepan. Cook over medium heat, stirring constantly, until mixture starts to gently boil. Cook 2 minutes longer, stirring constantly. Remove from heat; stir in 2 tablespoons butter. Pour over cooled baked crust. Cool at room temperature 15 minutes; refrigerate at least 3 hours until set.
  • When ready to serve, sprinkle fresh berries on top. Serve with whipped cream. Store loosely covered in refrigerator.

By constantly stirring the mixture, you'll end up with luscious, velvety smooth curd. Store lemon curd in an airtight container or jar in the refrigerator for up to 1 week.

2 eggs
2 egg yolks
1 cup (220g) caster (superfine) sugar
1 tablespoon finely grated lemon rind
1/2 cup (125ml) lemon juice
1 1/3 sticks (150g / 2/3 cup) cold unsalted butter, chopped into 3/4-inch cubes

Steps:

  • Place the eggs, egg yolks, sugar, lemon rind and lemon juice in a medium bowl and whisk to combine.
  • Transfer the mixture to a large saucepan over medium heat and cook, stirring, for 2 minutes or until the sugar has dissolved.
  • Reduce the heat to low and add the butter, 3 pieces at a time, stirring continuously until melted.
  • Cook, stirring constantly, for a further 4-6 minutes or until the curd has thickened and coats the back of a spoon.
  • Immediately strain into a heatproof bowl, discarding any solids. Allow to cool slightly and cover with plastic wrap. Refrigerate for 1 hour or until chilled.

8 tablespoons unsalted butter
1 cup white sugar
1 cup fresh lemon juice
8 large egg yolks
2 tablespoons grated lemon peel

Steps:

  • Mix all of the ingredients, except the lemon peel, in a saucepan.
  • Stirring well, cook over a very low heat. Do not let the mixture boil
  • or the eggs will curdle and be ruined.
  • Cook until a creamy consistency is reached.
  • Pour into a small dessert bowl and garnish with the lemon peel.
  • Allow to cool and then serve.

2 lemons, zest and juice
100g caster sugar
50g butter
2 eggs, beaten

Steps:

  • Put the lemon zest, juice, sugar and butter in a heatproof bowl over a pan of simmering water. Stir occasionally until the butter has melted. Then, using a small whisk or fork, stir in the beaten egg. Keep gently whisking the mixture over the heat for around 10 mins until thickened like custard.
  • Pour the cooked curd through a sieve into a clean jug to remove the zest, then pour into sterilised jars. Keeps in the fridge for up to 2 weeks.

6 ounces shortcrust pastry
1 1/2 ounces butter
2 ounces vanilla sugar
2 egg yolks
1 tablespoon flour
1/2 lemon, juice and zest of
8 ounces cottage cheese
1 tablespoon flour
1 tablespoon sugar
1 tablespoon butter, melted
1 egg, beaten
powdered sugar, to dust

Steps:

  • Preheat oven to 350°F (gas mark 4), warm a baking sheet and grease a loose-bottomed flan tin.
  • Roll out the shortcrust pastry until thin, then line the flan tin with the dough, trimming off any excess.
  • Chill pastry case in the fridge.
  • Cream the butter and sugar together until fluffy, then beat in the egg yolks, flour, lemon rind, lemon juice and sieved cottage cheese.
  • Mix well, then spoon into the pastry case.
  • Mix topping ingredients together and spread on top of the curd filling.
  • Place the flan tin on the warmed baking sheet and bake for approximately 1 hour or until the top is lightly browned and slightly firm.
  • Dust with powdered sugar and serve cool but not chilled.
