1 cup basmati rice (washed)
3/4 cup sugar
1 1/2 tablespoons vanilla extract
1/2 cup dried cherries
1 pinch cinnamon

Steps:

  • In a saucepan, bring milk, half & half and sugar to a boil.
  • Add rice and vanilla extract.
  • Cook at medium heat for 8 minutes.
  • Stir while heating until creamy and/or sticky.
  • Add cherries and stir for 2 minutes.
  • Set aside for 10 minutes.
  • Garnish with cinnamon.

Steps:

  • Cook the rice, milk, and sugar in a heavy-bottomed 2-quart saucepan over medium heat until the rice is tender and the milk is absorbed, 30-40 minutes. Remove from the heat and stir in the almond extract, almonds, and sherry. Using a rubber spatula, scrape the pudding into a bowl and chill for at least 1 hour. Whip the cream in an electric mixer on high speed (or by hand) until soft peaks form and then get a little firmer, and fold into the chilled pudding. Serve immediately or refrigerate until ready to serve. Top with warm or cold cherry sauce.

  • Place the cherries in a small saucepan with the wine, 1/2 cup water, and the sugar or jelly. Bring to a boil, reduce heat, and simmer until the cherries are tender and the juice is syrupy (approximately 10 minutes).

1/4 teaspoon ground cinnamon
3/4 cup uncooked white rice
1/2 cup dried cherries that have been rehydrated in 1/4 cup warm brandy
1/2 cup granulated sugar
1 cup heavy cream

Steps:

  • Combine the milk, vanilla, and cinnamon in a heavy pot. Slowly bring the mixture just to the boil over medium heat, being careful not to scorch the milk. Reduce the heat to low, add the rice, and cook at a low simmer for 1 hour, uncovered and stirring occasionally, or until the rice is thoroughly cooked and creamy. Remove from the heat. Stir in the cherries and the sugar and cool as quickly as possible. Refrigerate until completely cold.
  • Whip the heavy cream into stiff peaks with an electric mixer. Using a spatula, fold the cream into the chilled pudding, spoon into pudding cups, and serve immediately or refrigerate until needed.

Steps:

Does anyone still make the old time favorite creamy rice pudding? I remember my mom making it. Now I add dried cranberries instead of raisins, but you can put any berry or fruit in it of course. This recipe and picture came from allrecipes that I have been using.

3/4 c uncooked white rice
2 c milk, divided
1/3 c white sugar
1/4 tsp salt
1 egg, beaten
2/3 c golden raisins, i use dried cranberries
1 Tbsp butter
1/2 tsp vanilla extract
i like cinnamon on top

Steps:

  • 1. 1. In medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • 2. 2. In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups of milk, sugar and salt. Cook over medium heat until thick and creamy, 15-20 minutes. 1 can (12 ounces) evaporated milk
1 cup 2% milk
1/3 cup sugar
1/4 cup water
3/4 cup dried cherries

2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Generously grease a 6-qt. electric pressure cooker. Add rice, milks, sugar and water; stir to combine. Stir in remaining ingredients. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Allow pressure to naturally release for 5 minutes, then quick-release any remaining pressure. Stir lightly. Serve warm or cold. Refrigerate leftovers.

1/2 cup long-grain white rice
3 cups 1% fat milk
1/3 cup sugar
1 large egg
2 large egg whites
1 teaspoon vanilla
1/8 teaspoon ground cardamom
1/3 cup golden raisins
1/3 cup dried tart cherries

Steps:

  • Bring water with salt to a boil in a 2-quart heavy saucepan and stir in rice. Cover pan and reduce heat to low, then cook until water is absorbed, about 15 minutes. Stir in milk and sugar and cook over very low heat, covered, until mixture resembles a thick soup, 50 minutes to 1 hour.
  • Whisk together egg, egg whites, vanilla, cardamom, and a pinch of salt. Whisk about 1 cup hot rice mixture into egg mixture, then stir mixture into remaining rice. Cook over low heat (do not let boil), whisking constantly, until an instant-read thermometer registers 170°F, 1 to 2 minutes. Remove from heat and stir in raisins and cherries.
  • Transfer pudding to a 2-quart dish or 6 (8-ounce) ramekins and chill, its surface covered with wax paper, until cool but not cold, 1 to 2 hours.

1 (12 ounce) can evaporated skim milk
1/3 cup brown sugar
1/2 teaspoon orange zest
1/2 cup milk

1/2 cup dried cherries
1/4 cup slivered almonds, toasted

Steps:

  • Cook the rice until tender.
  • Add the evaporated milk, brown sugar and orange zest; cover and cook for 10 minutes.
  • Uncover and cook, stirring frequently, for 10 minutes or until the rice is very creamy and most of the liquid has been absorbed.
  • Stir in the milk, vanilla and almond extracts and remove from heat.

1 1/2 cups heavy cream
1/3 cup maple syrup
3 whole eggs, plus
3 egg yolks

1 cup mixed dried fruit, chopped (about 6 ounces)
1/2 cup golden raisin
1 cup cooked wild rice
1 cup cooked brown rice

Steps:

  • Preheat the oven to 325 degrees Fahrenheit. Butter a shallow 1-quart baking dish.
  • In a large bowl, combine the light cream, heavy cream, maple syrup, whole eggs, egg yolks, vanilla, nutmeg, dried fruit, raisins, wild rice, and brown rice.
  • Turn the mixture into the prepared dish and bake, uncovered, for 35 minutes.

  • Whisk cornstarch and 1 tablespoon milk in large bowl to blend. Add eggs; whisk to blend. Whisk in hot rice mixture. Return to saucepan. Add cherries; stir over low heat just until mixture comes to boil. Mix in vanilla and lemon juice. Serve warm or pour pudding into buttered medium bowl. Press plastic wrap onto surface. Chill until cold, at least 8 hours or overnight. Spoon pudding into bowls and serve.
