REVANI - GREEK ALMOND CAKE WITH SYRUP



Revani - Greek Almond Cake with Syrup image

This classic is a timeless addition to all festive tables and a favourite on mine!

Number Of Ingredients 12

2 1/2 cups Water
1 ½ cups Sugar
1 Cinnamon Stick 1
1 Tbsp. Brandy
1 cup /225 g Unsalted butter
1 ½ cups granulated sugar
6 Large eggs (separated)
1 Tbsp. Brandy
1 Tbsp. Strained Fresh Orange Juice
2 cups Coarse Semolina Flour
1 Tbsp. baking powder
½ cup finely ground blanched almonds

Steps:

  • Bring water and sugar to a simmer. Add the cinnamon stick and brandy. Simmer over medium heat for 5 - 7 minutes. Remove and cool.
  • Preheat oven to 180C/375F. Butter a 12-inch / 30 c round springform pan.
  • Sift the semolina and baking powder together. Set almonds aside separately.
  • Whip the butter at high speed until creamy. Gradually add the sugar, beating. Add the yolks one at a time and whip after each addition. Whip in the brandy.
  • Add the semolina mixture to the egg yolks gradually, mixing well. Mix in the almonds.
  • Whip the egg whites to a medium stiff meringue. Fold a third of the meringue into the semolina mixture to lighten it and quickly fold in the remaining whites. Pour the mixture into the prepared pan and bake for about 30 - 35 minutes, until golden brown and spongy.
  • Remove from oven and, using a ladle, pour the cool syrup over the hot cake, tilting to distribute the syrup evenly all over the cake. Leave the cake to sit and absorb the syrup for at least an hour before cutting and serving.

1 cup granulated sugar.
1 1/2 cup water.
1 teaspoon vanilla extract.
Juice of one lime.
1/2 cup honey.
4 large eggs (at room temperature.)
½ cup (100g) granulated sugar
¼ cup (55g) butter, melted.
1 teaspoon vanilla extract . (Note1)
¾ cup (125g) fine semolina flour. (Note2)
3/4 cup (100g) all-purpose flour.
1 teaspoon baking powder.
¼ teaspoon salt.
1/2 cup shredded sweetened coconut.
1/2 cup ground pistachios.

Steps:

  • In a medium saucepan, combine the syrup ingredients, bring to a boil and simmer for 5 minutes.
  • Set aside to cool completely.
  • Preheat the oven to 350 °F.
  • In the bowl of your standing mixer, add eggs, sugar and whip on high until it triples in volume and gets pale yellow and fluffy. 4-5 minutes.
  • Add butter, vanilla extract and mix.
  • In a separate bowl, combine flour, semolina, baking powder and salt.
  • Fold the dry ingredients into the wet ingredients working in batches.
  • Bake in the oven for 25-30 minutes until a toothpick inserted in the middle comes out clean.
  • Poke the cake several times using the toothpick then pour the cooled syrup over.
  • Allow the cake to cool down and rest for 1-2 hours before inverting on a serving platter. Decorate with coconut flakes and pistachios if desired.

This is a lovely greek cake using semolina. The texture is coarser due to the semolina than what you're probably used to, but it is delicious and toothsome. Soaked in a light syrup and served with some whipped cream on the side, it is a dessert worthy of any occasion.

2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/4 teaspoon salt
6 eggs, separated
1 cup sugar

Steps:

  • Preheat oven to 350F.
  • Butter and flour a 13 X 9 inch pyrex baking pan.
  • Sift flour, baking powder and salt.
  • In large electric mixer bowl, beat egg whites until frothy.
  • Gradually beat in 1/2 cup of the sugar.
  • Continue beating until very stiff and glossy.
  • Set meringue aside.
  • Beat egg yolks, remaining sugar, and butter until very light and fluffy.
  • Add orange rind and vanilla.
  • Beat in dry ingredients alternately (slowly, on a low speed) with orange juice and semolina until incorporated.
  • Fold in meringue.
  • Turn into prepared pan and sprinkle with almonds.
  • Bake for 40-50 minutes, or until it tests done.
  • Cool.
  • For syrup: Boil sugar, water and cinnamon stick for 8 minutes.
  • Add brandy and remove cinnamon stick.
  • Pour hot syrup over cooled cake.
  • Cool and cut into squares.
  • Serve with a dollop of whipped cream.

Steps:

  • Preheat the oven to 350°F.
  • Grease the bottom and sides of a 9"x13" pan.
  • In a medium bowl, mix together the flour, semolina, and baking powder.
  • Use a mixer to cream the sugar and butter until light and fluffy.
  • With the mixer still running, add the eggs one by one. Continue mixing until a light yellow color.
  • Add the vanilla extract and lemon zest.
  • Clean the beaters and whip the egg whites with a pinch of salt until soft peaks form.
  • Using a spatula, carefully fold the egg whites into the batter until just incorporated. The best way to do this carefully is to add the eggs in thirds.
  • Pour the batter into the pan, using the spatula to smooth it out, and bake for 45 minutes, or until golden brown.
  • Meanwhile, make the syrup by adding the water, sugar, and orange peel to a sauce pan and bring to a boil. Reduce heat and simmer for 5 minutes.

For the Syrup:
3 cups sugar
3 cups water
1/2 lemon (juiced)
For the Cake:
3 eggs
1/2 cup sugar
3/4 cup vegetable oil
1 lemon (zested)
1 teaspoon vanilla
1 cup plain yogurt
3 tablespoons flour
1 cup uncooked semolina
1/4 cup finely ground hazelnuts
1/2 teaspoon baking soda
2 teaspoons baking powder
Garnish: coconut flakes and ground nuts

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F / 175 C. Grease a 9 x 13-inch baking pan .
  • Before you start making the cake, prepare the syrup to give it time to cool down. Begin by mixing the sugar and water in a medium saucepan. Turn the heat on high and bring the mixture to a boil while continuously stirring it.
  • Once it boils, reduce the heat to low and let the syrup boil gently for about 10 minutes with the cover off. Add the lemon juice toward the end. Turn off the heat and let the syrup cool down while you make the rest of the recipe.
  • In a large mixing bowl, whisk together the eggs and sugar. Whisk the mixture briskly for several minutes until the sugar dissolves. The more you whisk, the better your revani will turn out.
  • Add the oil, lemon zest, vanilla, and yogurt and whisk for several minutes more.
  • Add the dry ingredients-flour, semolina, hazelnuts, baking soda, and baking powder-and mix together well until you have a smooth batter.
  • Pour the batter into the greased baking pan. Bake until the top is nicely browned, and a toothpick inserted in the center comes out clean, about 30 to 40 minutes. Once you remove the pan from the oven, let it rest for about 5 minutes.
  • Cut the cake into portion-sized squares or rectangles while still in the pan.
  • Using a large spoon, slowly drizzle all of the cooled syrup over the cake and let it soak in. Cover the cake with foil and refrigerate it for several hours.
  • Before serving, garnish each square of cake with a pinch of coconut and ground nuts.

Cake:
9 eggs, separated

grated rind from 1 lemon
2 cups semolina or farina (cream of wheat)

1 cup heavy cream, whipped with 1 tablespoon sugar

Steps:

  • To make the syrup:
  • Bring sugar, water, and lemon juice to a boil, simmer 15 minutes. Cool.
  • To make the cake:
  • Beat the egg yolks, sugar and lemon rind with an electric beater for 5 minutes or until pale yellow. Wash and dry the beater.
  • Fold the semolina and flour into the beaten yolks until well blended. Set aside.
  • Beat the egg whites with the clean beater until stiff. Alternate gently folding the egg whites and the melted butter into the yolk and flour mix.
  • Pour batter into a well greased and floured 9x12 inch or 10x12 inch baking pan. Bake in a preheated 350°F oven for 40 minutes, or until a pick inserted in the center comes out clean.
  • Pour the syrup over the hot cake. Let it stand for several hours until the syrup is absorbed and the cake is cool.
  • Cut the cake into squares. Serve with whipped cream and sprinkle nuts on top.
