BACON, PEAR, AND BLUE CHEESE SALAD



Bacon, Pear, and Blue Cheese Salad image

Seckel pears and shallots, caramelized in the oven, are placed on watercress and sprinkled with crisp bacon. The dressing is a tart, syrupy reduction of pure apple cider. Blue cheese on croutons is served alongside.

4 cups apple cider, or juice
1 small baguette, cut diagonally into 12 slices (1/2 inch each)
8 tablespoons (1 stick) unsalted butter, melted
9 Seckel pears
Juice of 1 lemon
8 medium shallots, peeled and cut into quarters
2 teaspoons sugar
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
6 thick slabs bacon (6 ounces each), cut crosswise into 1-inch squares
2 watercress, washed and large stems removed
1/2 pound blue cheese

Steps:

  • Place cider in a medium saucepan, and bring to a boil. Cook until reduced to 1/2 cup, about 30 minutes. Cider should have a syrupy consistency. Remove from heat, and keep warm.
  • Preheat the oven to 400 degrees. Make croutons: Place bread slices on a baking sheet, and brush with 4 tablespoons butter. Toast until golden brown, about 10 minutes. Set aside to cool completely.
  • Cut pears in half; remove seeds with a small melon baller, and discard. Place pears in a medium bowl. Squeeze lemon juice over, and toss to combine. Add shallots to bowl. Drizzle with remaining 4 tablespoons melted butter; sprinkle with sugar, salt, and pepper; and toss to coat. Place in roasting pan, pears cut side down. Roast until golden brown and soft when pierced with a knife, 35 to 45 minutes, stirring occasionally and gently with a wooden spoon.
  • While pears are cooking, heat a large skillet over medium-high heat. Add bacon, and saute until golden, about 3 minutes. Transfer to paper towels to drain; set aside. Remove pears and shallots from pan, and keep warm.
  • Arrange watercress on six serving plates, top with warm pear mixture, and sprinkle with bacon. Place two croutons with a piece of blue cheese on each plate. Drizzle reduced cider over salad. Serve immediately.

Pear Walnut Blue Cheese Salad is a fresh and delicious mixed green salad with candied walnuts, freshly sliced pear, a homemade salad dressing, and topped with a crumble of blue cheese.

1 tablespoon butter
1/4 cup sugar
1 tablespoon water
1 cup walnuts
Salad Dressing
Juice of a lemon
1/4 teaspoon lemon zest
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/2 cup olive oil
1/4 teaspoon salt
Salad
5 ounces mixed salad greens package
2 fresh pears, sliced
1 cup candied walnuts
1/3 cup dried cranberries
1/3 cup blue cheese crumbles (optional)

Steps:

  • Using a medium skillet over medium-high heat, add in the 1 tablespoon butter and once it begins to melt add in the 1/4 cup granulated sugar, 1 tablespoon water, and 1 cups walnuts.
  • Stir continuously for about 5 minutes and transfer the candied walnuts to a parchment lined baking sheet in a single even layer and allow them to cool and harden, about 15 minutes.
  • In a blender or food processor, add in the lemon juice, 1/4 teaspoon lemon zest, 1 clove of garlic, 1/2 teaspoon Dijon mustard, 1/2 cup olive oil, 1/4 teaspoon salt, and blend or pulse until the salad dressing is completely smooth.
  • Clean and dry the 5 ounce package of mixed salad greens. Place into a large bowl to assemble the salad. Clean and slice the 2 pears and add on top of the salad greens. Add in the 1 cup of candied walnuts and 1/3 cup dried cranberries.
  • Drizzle on as much of the salad dressing as you would like and toss the salad until everything comes together. Top with the 1/3 cup blue cheese and serve immediately.
  • Store any leftovers in an airtight container in the refrigerator up to 3 days.

1 teaspoon white wine vinegar

1/4-1/2 teaspoon maple syrup or 1/4-1/2 teaspoon honey
2 teaspoons finely minced green onions
salt and pepper
1 cup walnut halves
1/2 teaspoon butter

1 dash cayenne or 1 dash hot smoked paprika
1/2 lb arugula, mesclun, romaine, mache, spinach (whatever may be your preference)
3 firm bartlett pears, washed, cored and sliced into very thin wedges (skin remaining)
4 ounces blue cheese, crumbled (gorgonzola, Stilton, etc.)
2 slices bacon, cooked until crisp and well drained
1/2-1 lb cooked sliced chicken (optional)

Steps:

  • Whisk together all vinaigrette ingredients until well blended; set aside.
  • In a small frying pan set on a medium heat, melt the butter, stir in the maple syrup or honey and then stir in the walnuts. Continue to heat the walnuts, stirring continuously, for approximately 2-3 minutes or until they are fragrant, caramelized and lightly browned. Remove from the heat; set aside.
  • Place the greens in a large salad bowl or, if individual servings are preferred, distribute them equally among 6 salad plates. Sprinkle over the pears, blue cheese and walnuts. Place over chicken then drizzle with dressing and toss.
  • Note: I find having the chicken warmed is superior to cold chicken.

1 bunch watercress
1 bunch arugula
1 tablespoon cider vinegar
2 teaspoons whole-grain mustard
1/4 teaspoon kosher salt, plus more to taste

3 tablespoons extra-virgin olive oil
1 Belgian endive
2 ripe pears, such as Anjou, Bartlett, or Comice
2 ounces mild blue cheese (about 1/2 cup loosely packed crumbles)

Steps:

  • Preheat oven to 350 degrees F. Spread the nuts on a sheet pan in a single layer. Bake, shaking the pan occasionally, until the nuts are toasted and fragrant, about 7 to 10 minutes. Let the nuts cool, and then coarsely chop.
  • Trim the stems of the watercress and arugula. Wash and dry the leaves.
  • Meanwhile, whisk the vinegar and mustard together in a large salad bowl. Season with the 1/4 teaspoon salt and some pepper. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth, slightly thick dressing.
  • Halve the endive lengthwise, cut out core, then thinly slice crosswise and add all the lettuces to the bowl. Quarter and core the unpeeled pears and thinly slice; add to the salad. Scatter the cheese and nuts over the salad, and season with salt and pepper, to taste. Toss the salad gently to evenly dress all the greens. Divide among 4 plates and serve immediately.

3 oz. blue cheese, crumbled
4 slices thick-cut bacon, cooked crispy and crumbled
1/3 c. walnuts, finely chopped
3 large Bartlett pears
3 T. honey, divided
1 c. balsamic vinegar
3 c. fresh arugula

Steps:

  • Place the top oven rack in the centre position and pre-heat the oven to 400°F. Combine blue cheese, crispy bacon, and chopped walnuts in a medium bowl and stir to combine. Set aside. Cut pears in half from stem to bottom and carefully scoop out seeds and inside flesh with a spoon to create a cavity. Do not cut all the way through to the outside while doing so. Carefully slice off a small section on the backside, as shown, so the pear halves will sit flat while baking. Place in a baking dish and set aside. Roughly chop the removed pear flesh and add to the blue cheese mixture. Stir to combine and set aside. Drizzle the inside of the pears with half the honey and place the baking dish in the preheated oven. Roast for 30 minutes, then remove the baking dish from the oven. Divide the blue cheese mixture equally between the pear halves and drizzle with the remaining honey. Return the baking dish to the oven for another 15 minutes, or until the blue cheese is completely melted and the pears are fork-tender. While the pears are roasting, heat the vinegar in a small skillet set over medium heat. Cook, stirring frequently until the vinegar thickens and is reduced to 1/3 of its original volume, approximately 10 minutes. Remove from heat and set aside. Remove baking dish from oven and cool slightly. Divide the arugula between six serving plates and top each with a stuffed pear. Drizzle with the warm balsamic glaze and serve immediately.

2 cups ruby Port
1 shallot, sliced

Steps:

  • Preheat oven to 350°F. Spread walnuts on baking sheet. Bake until toasted, about 5 minutes. Cook bacon in heavy medium nonstick skillet over medium-high heat until crisp and brown, about 5 minutes. Using slotted spoon, transfer bacon to paper towels to drain. Coarsely chop bacon. Prepare barbecue (medium heat) or preheat broiler. Cut pears into 1/4-inch slices and spray lightly with nonstick spray. Grill or broil pear slices until brown in spots, about 2 minutes per side.

1 (100 g) package blue cheese, crumbled, divided
2 ounces cream cheese, at room temperature
1/4 cup 2% low-fat milk, more if required
6 cups mesclun or 6 cups other mixed salad greens

Steps:

  • Whisk together in a small bowl, half the blue cheese with the cream cheese and milk until well combined. If you find the dressing too thick add a little more milk. May be made ahead and refrigerated. (If you buy the crumbled blue cheese you will need a 175g package).

¾ cup white sugar
2 teaspoons salt
1 cup canola oil
2 heads romaine lettuce, chopped
4 ounces crumbled blue cheese
2 pears - peeled, cored and chopped
½ cup toasted chopped walnuts
½ red onion, chopped

Steps:

  • In a small bowl, mix ketchup, vinegar, sugar, and salt. Gradually pour in oil, stirring constantly, until well blended.
  • In a large serving bowl, toss together lettuce, blue cheese, pears, walnuts, and red onion. Pour dressing over salad, and toss well to coat.
