ROASTED BEET, ONION, AND ORANGE SALAD



Roasted Beet, Onion, and Orange Salad image

1 pound beets, preferably very small ones
1 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
20 large pearl onions, about 1/2 pound
2 oranges, peeled and cut into wedges
2 tablespoons hazelnut oil
1 tablespoon coarsely chopped fresh coriander leaves (also known as cilantro) plus extra for garnish
1/2 cup freshly squeezed orange juice
2 tablespoons hazelnuts, toasted and peeled
1-ounce pecorino, optional, grated on medium-sized holes of box grater

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the stems and tails off the beets. Do not peel. Line the bottom of a baking pan with foil. Place the beets in the pan and toss them with half of the olive oil, salt and pepper. Roast for 25 minutes.
  • Trim both ends off the pearl onions. Then toss them with remaining olive oil and salt and pepper. Add pearl onions to the beets and roast an additional 15 minutes, until beets and onions are tender.
  • Peel and remove the membranes from the oranges with a sharp paring knife. Cut the oranges in half lengthwise and then crosswise into thin slices. Seed the slices, if necessary.
  • Peel and quarter the beets. Lay the beets on a large platter. Top the beets with the orange pieces. Scatter the roasted onions around the beats.
  • In a medium bowl, combine the hazelnut oil, coriander, and orange juice. Whisk until well combined and season with salt and pepper.
  • Drizzle the dressing on top and sprinkle with coriander, toasted hazelnuts and grated cheese. Serve immediately.

1 teaspoon balsamic vinegar
1 tablespoon sherry vinegar or red wine vinegar

1 tablespoon extra virgin olive oil
2 large or 4 small beets, roasted, peeled and cut in rounds or half-moons (depending on the size)
1 pound oranges, peel and pith removed, cut into slices or half-moons (depending on the size)
4 cups wild or baby arugula
2 tablespoons chopped cilantro
1/4 cup chopped walnuts (1 ounce)

Steps:

  • In a small bowl or measuring cup, whisk together the orange juice, balsamic vinegar, sherry or red wine vinegar, salt and pepper, and oils. Taste and adjust the acidity, adding a little more vinegar or orange juice if desired.
  • Toss the beets with 1 tablespoon of the dressing. Toss the arugula with 3 tablespoons of the remaining dressing and arrange on a platter or in a wide bowl. Arrange the beets and oranges on top of the arugula in an alternating pattern and drizzle on the remaining dressing. Top with the cilantro and walnuts, and serve.

I roasted golden and red beets together, and the red beets bled into the outside layer of the golden beets, making their color striking in the salad.

1 tablespoon olive oil
8 cups spring mix salad greens
2 medium oranges, peeled and sectioned

DRESSING:
1/3 cup orange juice

1 tablespoon grated orange zest
1 tablespoon brown sugar

6 - 8 small to medium beets (1 1/4 to 1 1/2 pounds total)
1 cup walnut halves
3 navel oranges
1 tablespoon red wine vinegar
1 teaspoon honey

1 cup loosely packed fresh flat-leaf parsley, chopped
2 ounces fresh goat cheese (optional)

Steps:

  • Preheat oven to 400°. Trim ends of beets. Divide beets between two 10-inch pieces of heavy foil. Drizzle each with 1 tablespoon water. Fold foil over beets; fold ends to seal. Place packets on a large baking sheet. Roast until beets are tender and easily pierced with a knife, 50 to 60 minutes. Carefully open packets to avoid the steam that escapes. When cool enough to handle, peel beets by rubbing them with a paper towel. Chop into cubes.
  • Meanwhile, toast walnuts in a dry skillet over medium until fragrant, about 5 minutes. Let cool.
  • Cut tops and bottoms off oranges. Cutting from top to bottom, use a small knife to cut off peel and pith from the sides. Working over a bowl to catch juice, cut between orange segments and membranes to release segments into the bowl. Squeeze the membranes over the bowl to extract any remaining juice.
  • For dressing, carefully pour juice from the bowl with orange segments into a separate bowl. (You should have about 3 tablespoons juice.) Whisk in vinegar, honey, salt and pepper. While whisking, slowly pour in olive oil and continue whisking until emulsified.
  • Just before serving, gently combine beets, oranges, walnuts and parsley in a shallow bowl or platter. Add dressing and toss to combine. If desired, crumble goat cheese over salad.

Steps:

  • Preheat oven to 400 degrees.
  • Wash the beets and roast them, tightly covered, with 1/4 cup of water.
  • Roast for 1 hour or until tender.
  • Place the walnuts on a baking sheet and toast them in the oven for about 5 minutes.
  • With a sharp knife, trim off the top and bottom of each orange.
  • Pare of the rest of each peel, making sure to remove all pith.
  • Slice the oranges into 1/4 inch rounds.
  • Make a vinaigrette by mixing together the vinegar, orange juice, and zest.
  • Stir in olive oil.

1 apple (cored & sliced)
1 tbsp lemon juice
3 tbsp olive oil (extra virgin)

Steps:

  • Preheat oven to 400°
  • With cooking spray, lightly spray a piece of foil large enough to loosely wrap quartered beets.
  • Place beets on the oiled side of the foil, and loosely wrap to make a sealed package.
  • Put foil-wrapped beets on a baking sheet in the center of the oven and roast 30-45 minutes until tender.
  • In the last 5 minutes of roasting time, spread walnuts on the baking sheet alongside the roasting beets to toast.

Steps:

  • Preheat oven to 425F.
  • Rinse and wrap the beets completely in aluminum foil so no air gets in. The red beets and yellow beets can NOT be cooked together. The red oranges will bleed into the yellow ones and your dish will not look beautiful. Wrap the beets in their own packets of aluminum foil.
  • Roast beets on a baking sheet ~ 1 hour or until tender when poked with a fork. Be careful when removing aluminum foil to check - you don't need a steam burn!
  • Remove beet skin when cool enough to handle. If the skin is not loose enough to pull off with your hands, then use a knife or peeler to gently pull away the skin. You may want to wear gloves to avoid staining your hands with red beet juice. Slice beets thinly.
  • Remove the peel of the two remaining oranges with a knife. Slice thinly.
  • Arrange beets & oranges on a tray or individual plates. Drizzle with vinaigrette over the top and garnish with walnuts and extra thyme sprigs.

1 head red leaf lettuce, rinsed, dried, and torn into pieces

1/2 teaspoon fennel seeds, crushed in a mortar and pestle
2 tablespoons fresh lemon juice
1/4 cup walnut oil

  • 1. Heat the oven to 350°F. Lay the beets on one half of a large piece of aluminum foil. Sprinkle with olive oil and season with salt. Fold the foil in half to make a packet and roll the edges to seal. Lay on a baking sheet and roast until tender, 45 to 60 minutes. Let cool. Peel the beets and slice into 1/2-inch-thick wedges.
  • 2. Keep the oven at 350°F; toast the walnuts on a baking sheet for a few minutes, 5 to 7, until they smell good. Remove the nuts and let them cool while you wash and dry the lettuce and tear it into a salad bowl.
  • 3. Zest one orange-you need 1 teaspoon grated zest. Using a very sharp knife, cut the ends from the oranges, slicing just deep enough to expose the flesh. Cut off the remaining peel and pith. Then, working over a bowl, remove the segments, cutting between the membrane. Place the segments in a strainer to drain off excess juice.
  • 4. Whisk together the dressing ingredients-the shallot, fennel seeds, and lemon juice-in a small bowl, adding the oil last, whisking as you pour it in so the dressing emulsifies a bit. Taste and adjust the seasoning.
  • 5. Toss the nuts, beets, oranges, and the dressing with the salad, adjust the seasoning, and serve immediately.

(The first recipe calls for canned beets; sometimes I buy fresh beets and cook them -- this variation is after the canned beet recipe.) When using the fresh beet recipe, I make the beets ahead of time to allow for cooling in the fridge and then just cut them up when assembling the salad.
