SPICED PUMPKIN WAFFLES

Spiced Pumpkin Waffles image

These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

Provided by Sherri35

Categories     Breakfast

Time 15m

Yield 8 Belgian waffles

Number Of Ingredients 12

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar
1 cup canned pumpkin puree
1 2/3 cups milk
4 tablespoons butter, melted and cooled

Steps:

  • Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  • In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  • Gently fold in the flour mixture.
  • Cook according to your waffle iron directions.
  • I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
  • They come out a nice deep, golden brown.
  • These are great with a little bit of syrup, but would also be great with honey butter.

Time 20m

Number Of Ingredients 10

1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda

1 cup canned pumpkin puree (not pumpkin pie filling)
2 eggs
3 Tbs butter (melted)
1⁄4 cup dark brown sugar
1 cup milk (plus extra if needed)

Steps:

  • Heat your waffle iron.
  • In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice and salt.
  • In a medium bowl whisk together the pumpkin, eggs, butter, brown sugar and milk until well combined.

PUMPKIN SPICE WAFFLES

Pumpkin Spice Waffles image

Nothing says good morning on a crisp fall day like these pumpkin spice waffles. Chopped pecans and a drizzle of pure maple syrup are the perfect topping, but truth be told, I've been known to devour them plain, straight from the waffle iron.

Provided by Food Network

Categories     main-dish

Time 35m

Yield about 5 waffles

Number Of Ingredients 13

1 1/4 cups milk
3/4 cup 100 percent pumpkin puree (not pumpkin pie filling)

1/2 cup whole-wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon baking soda
1/8 teaspoon salt
Nonstick cooking spray

  • Whisk buttermilk, pumpkin puree, melted butter and eggs together in a large mixing bowl. Continue to whisk until mixture is smooth.
  • In a separate large mixing bowl, whisk (or stir) together flour, sugar, baking powder, salt, and pumpkin pie spice. Pour wet batter into bowl with the dry ingredients. Stir only until all ingredients are mixed and moistened. It's okay if batter is a little bit lumpy... don't overmix.
  • Preheat waffle iron, brushing with oil, if suggested by manufacturer instructions. If using a standard sized waffle iron, use about 1/2 cup of batter for each waffle (yield of 4-6 waffles). If using a Belgian waffle maker, use about 1 cup of batter per waffle (yield of 3 waffles). Cook according to manufacturer instructions. Depending on the type waffle make you use, they will typically cook for somewhere between 3-5 minutes. When done, waffles should be crispy and lightly browned. Remove waffle; serve immediately, topped with butter and maple syrup. Enjoy!
