2 X 28 oz cans San Marzano Tomatoes
1/2 yellow onion (-diced)
8 cloves garlic (-minced)
1 leaf bay
4 sprigs basil
1/3 c fresh basil leaves (- sliced or torn)
4 tbsp extra virgin olive oil
1 pinch sea salt (( or to your taste))

Steps:

  • Heat a heavy bottom large pot on medium low flame. Add a lug of olive oil and the diced onion with a pinch of sea salt. Cook for about 10 minutes until traslucent taking good care not to burn it.
  • Stir in the minced garlic and let it infuse the oil for about 30 seconds.
  • Use your hands and crush the tomatoes as you add them to the pot with the onion and garlic. Rustic chunks are what we are after.
  • Add the bay leaf and the 4 sprigs of basil then bring everything to a gentle simmer. Partially cover with a lid and cook down until reduced and thick to your liking. About an hour or so. Stir a few times making sure the sugars from the tomatoes don't stick to the bottom.
  • After the sauce has reduced season to taste with the sea salt. Discard the bay leaf and basil sprigs.
  • Finish with a drizzle of extra virgin olive oil and the reserved fresh basil. Serve with your favorite pasta to transfer to jars and refrigerate up to one week.

  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. 1 cup diced onion

2 cups all-purpose flour, plus more for dusting work surface
¼ tsp kosher salt
3 cups Marinara Sauce, recipe follows
Shaved Parmesan, for serving
Chopped fresh basil, for garnish
¼ cup olive oil
3 cloves garlic, chopped
1 26-oz container chopped tomatoes, such as Pomi
½ tsp Italian seasoning
Kosher salt and freshly ground black pepper
2 Tbsp unsalted butter
6 leaves fresh basil, chopped

Steps:

  • Preheat the oven to 375ºF. Scrub the potatoes well and pierce in several places with the tip of a knife. Bake on a baking sheet until cooked through, about 1 hour. Set aside to cool.
  • Once they're cool enough to handle, peel the potatoes and pass the flesh through a ricer or the finest holes of a food mill. Place 1 1/2 cups of the flour on a clean work surface and put the potatoes in the middle. Season with the salt. Knead the potatoes and the flour together until it's a smooth ball of dough that's slightly sticky. If the dough is too sticky, add more of the remaining 1/2 cup flour gradually to achieve the smooth consistency.
  • Divide the dough into 4 equal pieces and cover 3 of them with a dampened kitchen towel. On a lightly floured work surface, roll the uncovered piece of dough into a 1-inch-thick rope. Cut into 3/4-inch pieces. Turn a fork over and hold at a 45-degree angle, with the tines touching the work surface. Working with one piece of dough at a time, roll it down the fork tines, pressing with your thumb to make ridges on one side. Place on a large baking sheet lined with a kitchen towel. Repeat with the remaining pieces of dough.
  • Bring a large pot of salted water to a boil. Add half the gnocchi and cook until they bob to the surface of the water. Transfer to a shallow bowl and cook the remaining gnocchi.
  • Serve the gnocchi warm with the Marinara Sauce. Top with shaved Parmesan and garnish with chopped basil.
  • Heat the olive oil in a large skillet over medium-high heat until starting to shimmer. Add the garlic and cook, stirring, until fragrant, 1 to 2 minutes. Add the chopped tomatoes, Italian seasoning, and salt and pepper to taste. Bring to a boil and cook for 5 minutes. Stir in the butter until melted. Remove from the heat and add the chopped basil.

My Italian roots make me love a good, slow-cooked tomato sauce with fresh herbs that simmers for hours, but sometimes you need a great version that's also quick. This quick and easy marinara sauce makes use of a lot of staple pantry items with very little prep and comes together in 30minutes or less.

1/4 cup extra virgin olive oil
1 medium yellow onion (diced)
3-4 cloves garlic (minced)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper
28 oz can crushed tomatoes
1 tablespoon tomato paste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon sugar
2 bay leaves

Steps:

  • Place the saucepan over medium heat and add the olive oil. While it's heating up, dice the onion and mince the garlic. When the olive oil is ready, add the diced onion and stir to coat in the oil. Cook, stirring occasionally until softened and translucent, but before it turns brown, about 6-7 minutes.
  • Add the minced garlic and the oregano, basil, black pepper and crushed red pepper and stir to combine. Cook until fragrant, about a minute more.
  • Pour in the can of crushed tomato and stir to combine with the olive oil. The sauce will look very oily at first, just keep stirring constantly for a minute or two until it begins to smooth out, then add the rest of the ingredients. Let it simmer and stir frequently until well combined.
  • Taste the sauce and add more salt or sugar if needed (I normally use about 2 teaspoons of each). If you're happy with it, cover the pot and turn the heat to low. Cook, stirring occasionally for another 20 minutes or so. Then your sauce is ready for the recipe you're using it in.
