PICKLED GREEN BEANS (DILLY BEANS)

This recipe was originally my Great Grandmother's I just recently found it in my Mother's stuff after she passed away a few months ago.

4 lbs green beans
1/2 teaspoon crushed red pepper flakes, per jar
1/2 teaspoon mustard seeds, per jar
1/2 teaspoon dill seed, per jar
1 whole garlic clove, per jar
5 cups vinegar
5 cups water
1/2 cup salt

Steps:

  • Clean and Cut beans to fit in tall Mason Jars. (one pint).
  • Place ingredients 2-5 into each jar.
  • Add beans to jar(s) until full.
  • Bring to boil ingredients 6-8.
  • Pour boiling liquid over beans.
  • Tighten lids.
  • Process in boiling water for 5 minutes. *Correction: Processing time should be 10-15 min, not 5.*.
  • I use what ever amount of beans I have on hand and make the liquid accordingly.

3 cups fresh green beans, strings removed
1/4 cup cider vinegar
1 tablespoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 medium red onion, very thinly sliced
2 teaspoons olive or vegetable oil

Steps:

  • In 2-quart saucepan, heat 1/2 cup water to boiling over high heat. Add green beans; cover and return to boiling. Reduce heat; simmer covered 10 to 12 minutes or until tender. Drain; cool in colander under cold running water.
  • Meanwhile, in shallow bowl, stir vinegar, sugar, salt and pepper until sugar is dissolved. Add onion; toss to coat. Let stand 10 minutes, tossing occasionally. Drain, reserving 1 tablespoon vinegar mixture.
  • In medium serving bowl, place beans; top with onion. Drizzle with reserved vinegar mixture and the oil; toss to coat.

2 pounds fresh green beans, rinsed and trimmed
4 cloves garlic, peeled
8 sprigs fresh dill weed
4 teaspoons salt
2 ½ cups white vinegar
2 ½ cups water

Steps:

  • Cut green beans to fit inside pint canning jars.
  • Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well.
  • Pack the beans into four hot, sterilized pint jars. Place 1 clove garlic and 2 sprigs dill weed in each jar, against the glass. Add 1 teaspoon of salt to each jar.
  • In a large saucepan over high heat, bring vinegar and water to a boil. Pour over beans.
  • Fit the jars with lids and rings and process for 10 minutes in a boiling water bath.

1 ½ lb. fresh green beans, washed, stem ends trimmed or snapped off
2 cups water
1/4 cup apple cider vinegar
1 1/2 tablespoons kosher salt
1 tablespoon granulated sugar
1 clove garlic, peeled
1 teaspoon whole mustard seeds
1 teaspoon whole peppercorns
1/4 teaspoon red pepper flakes
3 sprigs fresh dill leaves

Steps:

  • In medium sized saucepan, combine water, vinegar, salt, and sugar; over medium high heat, bring to a boil, boiling until sugar and salt is dissolved, stirring occasionally. Set aside to cool slightly.
  • Place garlic clove, mustard seeds, peppercorns, and red pepper flakes at the bottom of a large jar (most likely a quart size jar depending on the length of green beans). Arrange green beans vertically in jar and tuck dill sprigs into the jar.
  • Pour the brine into the jar, covering green beans completely.
  • Cover jar and place in the fridge at least overnight but preferably three days or more before eating.
  • Store the jar of pickled green beans in the refrigerator for up to 1 month.

4 Cups Arugula Greens
About 2 Cups Fingerling or baby potatoes
About 1/2 Pound or 2 handfuls fresh green beans
1 Tbs Vegan Mayo
1 Tbs Dijon Mustard
1 Tbs Sugar
1 tsp Garlic Powder
1 tsp All seasoning Mix (optional, I like Trader Joes 21 Seasoning Solute)
Pickled Red Onions (Recipe Below)
Optional: Your favorite nut to top. I used walnuts today (but hazelnuts are also great!)

Steps:

  • Steam, boil, or bake potatoes until tender.
  • Steam green beans until tender. Place in a bowl of cold water to cool down, and stop cooking process. You want them to be tender, but still have some bite to them.
  • Combine mustard, mayo, sugar, garlic, and seasoning, and stir until combined.
  • Gently toss potatoes in sauce.
  • Place arugula in the bottom of serving bowl.
  • Top with green beans, potatoes, and pickled onions.
  • Top with nuts!
