APPLE-CABBAGE SLAW

In the South, cole slaw is a must at big get-togethers. To modernize it, I add my favorite Arkansas Black apples and swap more than half of the usual mayo with yogurt, but it's still that classic Southern slaw that everyone loves.

2/3 head cabbage, about 2 cups, sliced and lightly packed
2 large apples, Arkansas Blacks or any firm apple
kosher salt
1/2 cup scallions, finely sliced
1/2 cup celery, minced
1/2 cup low-fat plain yogurt
1/4 cup mayonnaise
1 tablespoon freshly squeezed lime juice
3 tablespoons cider vinegar
1 teaspoon freshly ground cumin seeds
1/4 teaspoon freshly ground black pepper
1/4 cup flat-leaf parsley, chopped
1/4 cup mint leaves, chopped

Steps:

  • For the salad: Cut the cabbage around the core and julienne. Place in a large bowl and set aside. Core and julienne the apples and add them to the cabbage. Sprinkle with a pinch of salt. Add the scallion and celery to the cabbage/apple mixture.
  • For the dressing: Combine the yogurt, mayonnaise, half the lime juice, vinegar, cumin, and pepper in a small bowl. Add the remaining lime juice to the cabbage/apple mixture to prevent the apples from oxidizing. Season the dressing with salt to taste. Pour over the cabbage/apple mixture and set aside. Roughly chop the parsley and mint and add to the slaw. Toss to coat and let rest several minutes for the flavors to macerate. (Slaw can be made and refrigerated up to two hours in advance.)
  • Place slaw in a dish and serve.

8 cups mixed shredded red and green cabbage
1 12-ounce bag broccoli slaw mix
1/2 cup shredded carrots
1/2 cup thinly sliced scallions (about 4)
1 cup nonfat Greek yogurt
1/2 cup mayonnaise
2 tablespoons distilled white vinegar
1 tablespoon fresh lemon juice
1 teaspoon grated garlic
Kosher salt, freshly ground pepper
1 green apple, cored

Steps:

  • Combine red and green cabbages, broccoli slaw, carrots, and scallions in a large bowl. Toss to mix well.
  • Whisk yogurt, mayonnaise, vinegar, lemon juice, and garlic in a medium bowl until smooth. Season to taste with salt and pepper. DO AHEAD: Slaw mixture and dressing can be made 8 hours ahead. Cover separately and chill.
  • No more than 20 minutes before serving, cut core from apple and cut apple into matchstick-size pieces. Add apple to slaw mixture and toss to evenly incorporate. Add dressing (adding earlier will result in a soggy slaw) and toss to evenly coat.

Steps:

  • Mix the cabbage, apple, carrots and onion in a large bowl. In a separate bowl, mix the yogurt, lemon juice, vinegar and mustard. Season, then pour over the vegetables. Give everything a good stir to coat in the dressing and eat immediately, or chill until you are ready to serve.

As does the apple cider vinaigrette, making this a great choice when watching the waist line. The longer the slaw sits, the more the flavors have time to deepen - it's really good when left in the fridge overnight, and makes great leftovers!

1 carrot, grated

This recipe can be prepared in 45 minutes or less.

3/4 cup clear apple cider or apple juice
3/4 cup plain nonfat yogurt
2 tablespoons chopped fresh flat-leafed parsley leaves
2 tablespoons finely chopped fresh dill leaves
1/2 medium head red cabbage (about 1 pound)
1 large fennel bulb (sometimes called anise; about 1 pound)
1/2 English cucumber
2 Granny Smith apples

Steps:

  • In a small saucepan boil cider or juice until reduced to about 3 tablespoons, about 15 minutes. Cool cider or juice slightly and in a bowl whisk together with yogurt, parsley, and dill. Dressing may be made 1 day ahead and chilled, covered.
  • Halve cabbage lengthwise and with a mandoline or sharp knife cut crosswise into very thin shreds. Trim fennel stalks flush with bulb, discarding stalks, and cut fennel and cucumber into 1/4-inch dice. Vegetables may be prepared up to this point 4 hours ahead and chilled separately, covered.
  • Just before serving, cut apples into julienne strips and transfer with vegetables to a large bowl. Toss salad with dressing.
