Air Fryer Three-Cheese Turnovers image

Creamy ricotta, sharp provolone, and salty pecorino blend together to create the perfect cheesy filling for these easy-to-prepare appetizer-sized turnovers.

1/2 pound ricotta cheese
2 ounces grated provolone cheese
2 ounces grated pecorino cheese
1 large egg
2 tablespoons chopped fresh basil
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
1 sheet thawed frozen puff pastry
Melted butter, for brushing
Sesame seeds, for sprinkling
Marinara sauce, warmed, for serving

Steps:

  • Preheat an air fryer to 375˚ F. Combine the ricotta, provolone, pecorino, egg, basil, salt and pepper in a medium bowl; mix well.
  • Roll out the puff pastry just to remove the creases; slice into 16 equal squares. Dollop a tablespoonful of the cheese mixture onto a pastry square. Lightly brush the edges with melted butter, fold in half to form a triangle and pinch closed; crimp the edges with a fork. Repeat with the remaining pastry squares, refrigerating the finished turnovers on a parchment-lined pan while you form the rest.
  • Brush the tops of the turnovers with more melted butter and sprinkle with sesame seeds. Place 5 or 6 turnovers in the air fryer basket and cook until puffed and golden brown, 8 to 10 minutes. Repeat with the remaining turnovers. Serve with warm marinara sauce.

APPLE TURNOVER

You can never go wrong with Chuck Hughes ' tender apple turnover topped with delectable sheep's cheese.

Number Of Ingredients 9

2 tablespoons/45ml butter
3 tablespoons/45ml brown sugar
1/2 teaspoon/2ml cinnamon
6 apples, such as Honeycrisp, Cortland, Spartan or Empire, peeled, halved, cored and cut into 1/2-inch cubes (about 3 cups)
1 pound/450g puff pastry
All-purpose flour, for the work surface
2 eggs
2 tablespoons/30ml confectioners' sugar, sifted
Soft, fresh sheep's or goat's milk cheese, yogurt or ice cream, for serving

Steps:

  • For the apple filling: Melt the butter in a saucepan over medium heat. Add the brown sugar, cinnamon and apples and cook until the apples are caramelized and have started to soften, 10 to 15 minutes. Transfer to a bowl and let cool, then keep in the refrigerator.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • For the turnover: Roll out the puff pastry to 10 by 10-inch square with a 1/8-inch (3mm) thickness on a lightly floured surface. Transfer to a large baking sheet lined with parchment paper. Spoon the apple filling over half the pastry, leaving a border around the edge. Beat the eggs with 1 teaspoon water for the egg wash. Brush the edges of the pastry lightly with some of the egg wash. Fold the pastry over the filling to form a triangle. Press the edges to seal and enclose the filling completely, then press with the back of a fork to make a tight seal. Using a small knife, cut two 1/2-inch-long slits in the top of the crust. Brush the top with the egg wash.
  • Bake the turnover until the crust is puffed and golden and the juices are bubbling through the slits in the crust, about 25 minutes.
  • Sprinkle the turnover with the confectioners' sugar. Turn the oven to broil, and cook until the sugar is caramelized, watching it closely so it doesn't burn. This will give the turnover a browned crust. Carefully run a metal spatula under the turnover to loosen and transfer to a wire rack to cool slightly.
  • To serve, cut the turnover into wedges and serve warm with a dollop of cheese, yogurt or ice cream.

CHOCOLATE TURNOVERS

1 sheet of frozen puff pastry dough, 9 1/2 inches square, thawed according to package directions
1 egg yolk
2 tablespoons heavy cream
2 1/2 ounces semisweet chocolate, chopped fine
2 1/4 teaspoon blanched almonds, chopped fine

Steps:

  • Preheat the oven to 400 degrees.
  • Place the puff pastry on a lightly floured work surface. Sprinkle the pastry with a little flour and roll out to form a 12inch square. Brush away any excess flour and trim the edges to make a perfect square.
  • Cut the puff pastry into nine 3 1/2inch squares. Transfer them to a parchment-lined baking sheet.
  • In a small bowl, whisk together the egg yolk and heavy cream. Neatly brush a little of the egg wash along 2 of the edges of each square. Place the chocolate, divided equally, and 1/4 teaspoon of the almonds on each square. Fold down the unwashed edges to enclose the chocolate, forming a triangle. Using your fingers, gently but firmly press the puff pastry edges together to seal them.
  • Place the baking sheet in the freezer for 20 minutes, or until the pastry is thoroughly chilled. Remove from the freezer and brush the tops of the turnovers with the remaining egg wash.
  • Place in the oven and bake until the turnovers are puffed and golden, about 15 minutes.

ORANGE-FIG TURNOVERS



Orange-Fig Turnovers image

1/2 cup fresh orange juice (from about 2 oranges)
1/2 cup dried figs, stems trimmed
2 tablespoons raisins
2 tablespoons honey
1/4 teaspoon finely grated orange zest
1/4 teaspoon finely grated lemon zest
1/4 teaspoon ground cinnamon
1 14-ounce box refrigerated pie dough
All-purpose flour, for dusting
Confectioners' sugar, for topping

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Combine the orange juice, figs and raisins in a small microwave-safe bowl and microwave until hot, about 1 minute. Let sit until the dried fruit is soft, about 10 minutes.
  • Transfer 1 tablespoon of the juice to a food processor, then drain the dried fruit and add to the processor. Add the honey, orange zest, lemon zest and cinnamon and pulse to make a paste.
  • Roll out 1 piece of dough into a 10-inch round on a lightly floured surface. Cut out circles using a 2 1/2-inch cookie cutter. Drop 1 teaspoon of the dried fruit paste in the center of each circle; fold the dough over to form a half-moon shape, pinching the edges together to seal. Crimp the edges with a fork, then poke a few small holes in the top of each. Repeat with the remaining dough and filling.
  • Transfer the turnovers to the prepared baking sheets; bake, switching the pans halfway through, until golden brown, 15 to 20 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely. Dust with confectioners' sugar.

1 cup fresh blueberries
1/2 teaspoon pure vanilla extract
1 egg, beaten with 2 teaspoons water
2 tablespoons granulated sugar
2 sheets frozen puff pastry, thawed
1/2 cup blueberry preserves
2 tablespoons cornstarch
2 tablespoons brown sugar

Steps:

  • Lightly flour a work surface. Roll out the puff pastry sheets into squares 12 inches by 12 inches; the pastry will become slightly thinner. Cover with plastic wrap and chill.
  • Heat the oven to 375 degrees F.
  • In a small mixing bowl, stir together the preserves, cornstarch, brown sugar, and lemon zest. Fold in the fresh blueberries and vanilla, and chill while you cut the dough. Using a sharp knife, cut each puff pastry sheet into 4 (6-inch) squares.
  • Lay a pastry square on a work surface and brush the edges with egg wash. In the center of the square, place 2 heaping tablespoons of blueberry filling. Brush the edges of the pastry square with egg wash and fold it in half to create a triangle. Carefully press the edges together to seal them well with fork tines. Transfer to the cookie sheet and keep refrigerated. Repeat with the remaining ingredients, placing the turnovers 1-inch apart. Brush the tops with the egg wash and sprinkle with granulated sugar. Bake until golden brown, 20 to 25 minutes.
  • Serve warm or let cool to room temperature. Serve within 1 day.
