Steps:

  • Add the milk to a heavy medium-size saucepan; bring to a simmer.
  • Remove from the heat and slowly beat the hot milk in the the eggs in a medium mixing bowl.
  • Pour the entire mixture back into the pan and put over low heat.
  • Stir constantly with a whisk until the custard slightly thickens (be careful not to let the mixture boil or the eggs will scamble).
  • Remove from the heat and stir in the chocolate; stir until the chocolate is melted.
  • Pour the hot custard through a strainer into a large, clean bowl.
  • Allow the custard to cool slightly, then stir in the cream and vanilla.
  • Cover and refrigerate until cold or overnight.
  • Stir the chilled mixture; freeze in 1 or 2 batches in an ice cream maker according to the manufacturer's directions.
  • May eat ice cream immediately or transfer to a freezer container and freeze at least two hours for a firmer ice cream.

  • Gather the ingredients.
  • Whisk together the milk, cocoa powder, and sugar. Whisk until the sugar and cocoa completely dissolve.
  • In a large bowl, beat the heavy cream until it forms stiff peaks. Fold the whipped cream along with the vanilla extract into the cocoa powder mixture.

3/4 cup Dutch-process cocoa powder
1/2 cup sugar
2 tablespoons whole milk
1 1/2 cups half-and-half

1 vanilla bean
1/4 cup stone-ground grits, plus more for garnish, optional
1/2 cup chopped (3-ounces) dark semisweet chocolate
Shaved chocolate, for garnish, optional

Steps:

  • In a large bowl, beat the egg yolks lightly with a whisk, about 30 seconds. Add the cocoa, sugar, and 2 tablespoons of the milk and beat until thickened and dark, glossy brown in color, about 3 minutes.
  • In a small saucepan, heat 1 1/2 cups half-and-half and the cream over medium-low heat until a candy thermometer registers150 degrees F. (You may see steam rising from the pan, but the milk and cream should not start to boil.)
  • With a sharp knife, slice the vanilla bean lengthwise, scrape the tiny black seeds into the half-and-half, and add the vanilla bean to the pan. Add the grits and continue to cook, stirring occasionally and maintaining the temperature around 150 degrees F, until the grits swell and the mixture thickens to the consistency of a thin porridge, about 10 to 20 minutes, depending on the freshness of the grits and the coarseness of the grind. Remove the vanilla bean and discard.
  • Whisk 1 cup of the half-and-half and grits mixture slowly into the cocoa mixture, stirring constantly until the liquids are thoroughly incorporated. Add the chopped chocolate to the grits mixture remaining in the saucepan and stir until it dissolves, 2 to 3 minutes. Stir the cocoa mixture into the grits and chocolate mixture and cook over low heat, stirring occasionally to prevent scorching, until the custard thickens to the texture of a thick, liquid pudding, 8 to 12 minutes. Let cool to room temperature and transfer to a container. Press plastic wrap onto the surface of the custard and refrigerate for 4 hours or overnight, until the custard is very cold.
  • Pour the custard into an ice cream maker and churn according to the manufacturer's instructions until the ice cream becomes very thick and holds its shape. Quickly transfer the ice cream to a container with a tight-fitting lid. If there is any space between the surface of the ice cream and the lid, pat a sheet of plastic wrap on the surface. Cover the container.
  • Freeze the ice cream until it has hardened, at least 2 hours. Remove from the freezer 10 minutes before serving and remove the plastic wrap.
  • Serve small scoops of ice cream in bowls, and garnish with shaved chocolate or for fun, a pinch of dry, raw grits.

  • Melt the chocolate in the top of a double boiler, stirring occasionally, being careful not to scorch the bottom.
  • Combine the egg yolks and the sugar and whip to a creamy and smooth yellow.
  • Combine the milk, cream and vanilla bean in a pot over medium heat and bring to a boil.
  • Temper the eggsugar combination by whisking into the egg mixture 1/3 of the hot milk. Stir this in to temper the eggs before adding them to the remainder of the milk. Using a whip to whisk the milk, pour the tempered eggs into the hot milk, and cook the milk and egg mixture together. Stir with a wooden spoon until the mixture thickens enough to coat the back of a wooden spoon.
  • Add the melted chocolate to the hot milkegg mixture by whipping in with a wire whisk.

1/3 cup flour
1/4 teaspoon baking soda
4 egg yolks
1/4 cup unsweetened cocoa powder
1/2 teaspoon vanilla
1/3 cup sugar
4 egg whites
1/2 cup sugar
2 cups softened ice cream
powdered sugar (to garnish)

Steps:

  • Grease and lightly flour a 15x10-inch jelly roll pan, and set aside.
  • Stir together flour, cocoa powder, and baking soda and set aside.
  • In a medium mixing bowl beat egg yolks and vanilla with an electric mixer on high for 5 minutes or till thick and lemon colored.
  • Gradually add 1/3 cup sugar beating on high till sugar is almost completely dissolved.
  • Thoroughly wash beaters.
  • In separate bowl beat egg whites on medium speed till soft peaks form.
  • Gradually add the 1/2 cup sugar, beating till stiff peaks form.
  • Fold egg yolk mixture in with egg whites.
  • Sprinkle flour mixture over egg mixture, folding gently just till combined.
  • Spread batter evenly in the pan.
  • Bake 375°F for 12 to 15 minutes.
  • Cake should spring back when touched lightly.
  • Immediately loosen edges of cake and turn over on towel lightly sprinkled with powdered sugar.
  • Roll the cake up w/ the towel jelly roll style, short end to short end.
  • Cool on wire rack, unroll and spread w/ softened ice cream.
  • Roll up again wrap in plastic wrap and freeze at least 2 hours before serving.

  • Break up the chocolate and place with the unsalted butter in a warm-ish oven for about 15 minutes. Remove and stir until melted and blended together.
  • Over a low heat dissolve the sugar in the water then turn up the heat and boil rapidly for a few minutes to get a light syrup. It's ready before the syrup takes any colour, when a little dropped on to a cold plate forms a thread when stretched between finger and thumb. Leave the mixture to cool for just a minute.
  • Place the egg yolks in a basin and begin whisking (ideally with an electric whisk), trickling in the hot syrup as you go. Continue whisking until the mixture is thick and mousse-like. Whisk in the cream. Then fold in the melted chocolate and butter until thoroughly blended. Then pour the mixture into an ice cream machine and churn until frozen.

200g dark chocolate (at least 70% cocoa solids), chopped into small pieces
500ml double cream
340g can sweetened condensed milk
1 tsp vanilla extract
3 tbsp organic cocoa powder, sifted
50g milk chocolate chips
sea salt flakes, to serve (optional)

Steps:

  • Melt the chocolate in a heatproof bowl set over a pan of just-simmering water, ensuring the bowl doesn't touch the water, or do this in the microwave in 20-second bursts until smooth and glossy. Leave to cool slightly. Pour the cream, condensed milk and vanilla into a second bowl and beat for 3 mins using an electric whisk until slightly thickened and the beaters leave a trail in the mixture when lifted across the bowl. Be careful not to overwhip, as you don't want the mixture to be too stiff - as soon as the beaters leave a trail, it's ready.
  • Gently fold the melted chocolate and cocoa powder into the cream mixture until thoroughly combined, ensuring the spatula is reaching the bottom of the bowl so all the chocolate gets mixed in. Fold in most of the chocolate chips, reserving a small handful. Scrape the mixture into a 1-litre freezerproof container, then scatter over the reserved chocolate chips. Cover and freeze for at least 6 hrs until firm but scoopable. Will keep frozen for up to a month. To serve, scoop the ice cream into chilled bowls or ice cream cones and sprinkle with a pinch of sea salt, if you like.

1 1/2 cups whole milk, chilled
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
5 pounds ice (about 7 cups)
2 cups rock salt or ice cream salt
1/2 cup cold brew or brewed strong coffee, chilled
1 1/2 cups full-fat chocolate milk, chilled
2 tablespoons chocolate syrup, optional
1/2 cup crushed chocolate sandwich cookies (about 5 cookies)

Steps:

  • For the vanilla ice cream base: Add the heavy cream, milk, sugar and vanilla to a 10-ounce metal coffee can with a lid (see Cook's Note). Close the lid and secure it with duct tape, making sure the can is completely sealed. Shake the mixture lightly to combine. Place the sealed can into an empty 3-pound coffee can with a lid.
  • Put on rubber gloves to protect your skin from the ice and salt. Add the ice around and on top of the sealed can, so the can is completely encased in ice. Pour 1 cup of the rock salt over the ice. Close the large can with the lid and secure it with duct tape.
