2 pounds mixed wild mushrooms, such as cremini, shiitake, porcini, and portobello
1/2 cup good olive oil
1 cup chopped shallots (4 large)
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped garlic (6 cloves)
1 cup chopped flat leaf parsley

Steps:

  • Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
  • Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the shallots and cook over low heat for 5 minutes, or until the shallots are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.

3 garlic cloves

2 pounds assorted fresh wild mushrooms (such as chanterelles, morels, boletes, portobellos, crimini, oyster and stemmed shiitakes), large mushrooms quartered, medium mushrooms halved
1 tablespoon fresh lemon juice
Additional fresh Italian parsley

Steps:

  • Finely chop 1/2 cup parsley with 1 garlic clove; set parsley mixture aside. Finely chop remaining 2 garlic cloves. Whisk chopped garlic, 4 tablespoons oil and 1/2 teaspoon salt in large bowl to blend. Add mushrooms and toss to coat.
  • Heat remaining 1 tablespoon olive oil in heavy large skillet over high heat. Add mushroom mixture and saut é until mushrooms are brown and just tender, about 10 minutes. Remove skillet from heat. Mix in parsley mixture and lemon juice. Season to taste with salt and pepper. Transfer mixture to bowl. Garnish with additional fresh parsley and serve.

Steps:

  • Heat oil in a large skillet over medium heat. Add shallots and garlic and saute 1 minute. Add mushrooms and cook 3 to 5 minutes, until mushrooms are tender. 1 pound wild mushrooms* (shiitake, porcini, hen of the woods, black trumpet, oyster , lobster, chanterelle, morels, Portobello, or a combination)
3 tablespoons olive oil
2 shallots, sliced thin
2 cloves garlic (chopped fine)
1/4 cup dry white wine
2 teaspoons chopped mixed herbs (rosemary, sage, thyme, and marjoram are all great with mushrooms)
1/2 cup chopped Italian parsley
Sea salt and freshly ground pepper

Steps:

  • Gently wipe the mushrooms.
  • Trim and discard any tough stems. (Shiitake stems are great for stocks, but are too tough to eat. The very bottom of mushroom clusters like hen of the woods may have a slightly woody layer, so trim it away).
  • Slice the mushrooms 1/8 of an inch to 1/4-inch thick.
  • Warm the olive oil over medium-high heat in a large skillet. Add the shallots, cook 1 minute, and add the mushrooms.
  • Cook, stirring frequently, for 8 to 10 minutes, until the mushrooms have released their juices and begin to brown.
  • Stir in the garlic and white wine, increase the heat to high, and cook about 2 more minutes, until the wine has evaporated.
  • Toss in the herbs; stir well and season to taste. Stir in the parsley and serve.

  • Heat olive oil and butter over medium high in a heavy skillet until butter foams. Add shallot and cook, stirring, until it begins to soften, about two minutes. Add mushrooms and season with salt and pepper. Cook, stirring, until mushrooms begin to soften, about four minutes, and add sherry. Continue cooking and stirring until liquid has evaporated and mushrooms are tender and beginning to brown. Serve immediately.

These mushrooms are delicious atop slices of crusty French baguette smeared with brie cheese, as a main dish tossed with warm buttered pasta, as a topping for baked potatoes, -or- as an earthy accompaniment to grilled meats, fish or poultry. They are also wonderful folded into an omelet. Adapted from Ina Garten. Variation: A delicious variation that my German grandmother made (with her own wild foraged mushrooms!) was to simply saute the 'shrooms in butter until tender, add a little cream and heat through, then season to taste with salt and pepper and snipped fresh parsley. 1 1/2 lbs mixed wild mushrooms
3 tablespoons butter
2 tablespoons olive oil
3 medium shallots, minced
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1/2 cup coarsely chopped fresh herb, such as parsley,oregano and chives
crusty French bread (for serving)

Steps:

  • Rinse the mushrooms thoroughly in cold water.
  • Lift the mushrooms from the water and drain well.
  • Cut the larger mushrooms into 1 inch pieces.
  • Melt the butter in the oil in a large saucepan.
  • Add the mushrooms and saute over high heat until the liquid released has evaporated and the mushrooms are browned all over, about 20 minutes.
  • Add the shallots, garlic, salt and pepper and saute for 1 minute.
  • Sprinkle the herbs on the mushrooms and serve with bread.

CREAM OF CAULIFLOWER SOUP WITH SAUTéED WILD MUSHROOMS



Cream of cauliflower soup with sautéed wild mushrooms image

1large cauliflower (about 1.3kg/3lb), stalks discarded and florets chopped
1large potato , peeled and chopped into large chunks
1medium onion , chopped
25g butter
4 tbsp olive oil
1.2l light chicken or vegetable stock
600ml full-fat milk
142ml carton double cream
250g wild mushroom - choose from ceps, girolles (chanterelles), morels (either a mixture or just one type)
1-2 tbsp finely snipped chives

Steps:

  • Put the cauliflower, potato and onion in a large saucepan with the butter and half of the oil. Gently heat the contents until they start to sizzle, then cover with a lid and sweat over a low heat for about 10 minutes, stirring occasionally. The vegetables should be softened but not coloured.
  • Pour in the stock and bring to the boil, then pour in the milk and return gently to a boil. This way, there will be no scum forming from the milk. Season to taste then simmer, uncovered, for 10-15 minutes until the vegetables are soft. Pour in half the cream.
  • Blend everything in a food processor or blender, in batches. For an extra creamy texture, push the purée through a sieve with the back of a ladle. Stir in the rest of the cream. (If preparing ahead cool, cover and chill for up to a day.)
  • To serve, pick over the mushrooms. Wild mushrooms can be gritty so wash them quickly in a bowl of cold water then drain well and pat dry. Trim the stalks and chop or slice the mushrooms neatly. Heat the remaining oil in a frying pan and, when very hot, stir fry the mushrooms quickly until nicely browned, seasoning with salt and freshly ground black pepper as you cook them.
  • Reheat the soup until piping hot. Check for seasoning and ladle into warmed bowls. Spoon the mushrooms into the centre and sprinkle lightly with the chives. Italy's elegant, mildly citrussy whites, such as Vernaccia di San Gimignano, or a Chardonnay would suit this rich soup.

1 pound fresh wild mushrooms, like chanterelles, morels, porcini or any cultivated mushrooms of your choice
2 tablespoons olive oil
Salt and freshly ground pepper to taste
1 tablespoon butter
2 tablespoons fine bread crumbs
1 tablespoon finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons finely chopped parsley

Steps:

  • Trim the mushrooms, wash them in cold water and drain well.
  • If the mushrooms are large, slice them or cut them in halves or quarters.
  • Heat a large, heavy skillet and add the olive oil. When it is very hot and almost smoking, add the mushrooms, salt and pepper. Cook over high heat, shaking and tossing the skillet so that the mushrooms cook evenly until they are browned and crisp. They should be almost mahogany in color.
  • Add the butter, and quickly sprinkle in the bread crumbs, shallots and garlic, and toss well for 10 seconds. Add the parsley and serve immediately.
