- Add the chopped lettuce, tomato wedges, cucumber chunks, onion slices, halved olives, half the feta and some parsley to a large bowl.
- Combine the olive oil, vinegar, sugar, garlic, 1/4 teaspoon salt, pepper and chopped olives in a bowl or mason jar. Whisk or shake together until combined. Taste and adjust seasonings (I almost always add a little more sugar).
- Pour the dressing over the salad ingredients, then add some salt and pepper. Toss with tongs or clean hands. Just before serving, top with the remaining feta and squeeze a little lemon juice over the top.

Sliced ripe olives could be substituted for the Greek olives.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. When cooked, drain, then toss with olive oil, and keep warm.
- Meanwhile, melt 1 tablespoon butter in a skillet over medium-high heat. Sear the rib-eye on both sides until rosy-pink in the center, 7 to 10 minutes depending on thickness. Remove steak from skillet and cut into bite-size pieces. Melt the remaining 1 tablespoon of butter in the skillet, and stir in the garlic and shallots. Cook 5 to 10 seconds until fragrant, then return the steak to the pan and cook for another 5 minutes or to desired doneness. Stir in the soy sauce, and cook a few seconds longer, allowing it to evaporate.
- Remove the skillet from the heat and stir in the sun-dried tomato pesto, olives, spinach, basil, parsley, feta cheese and sunflower kernels. Toss with the pasta in a large bowl and serve.

GREEK GRILLED STEAK PASTA SALAD
Grilled steak is the best to use for this salad, feel free to adjust all amounts to taste, if you prefer lots of dressing then double the ingredients using a large garlic clove.

- Combine all dressing ingredients in a processor until well combined; set half of the dressing aside and refrigerate to serve at the table.
- In a bowl combine the cooked shell pasta with the remaining half of the dressing, then mix in cucumber, olives, sliced onion, pimientos and 1/2 cup crumbled feta cheese; toss to combine, then refrigerate while grilling the steaks.
- Grill the steaks until desired doneness; place on a plate allow to rest for 15 minutes or more, then slice thinly.
- Line a large platter plate with lettuce leaves.
- Spread the pasta mixture over the leaves, then arrange the sliced steak over the pasta.
- Sprinkle about 1/4 cup or more crumbled feta cheese over the sliced steak.
- Serve with reserved dressing.
- Delicious!

- Prepare the vinaigrette (mix well together, oil, lemon juice, garlic and oregano).
- In a large salad bowl, mix the pasta, feta cheese, tomatoes, cucumber, olives, green pepper, parsley and green onion.
- As many black olives your little heart desires!
- Pour the vinaigrette over the pasta and vegetables; mix well.
- Salt and pepper to taste. Refrigerate for a few hours to allow flavours to blend.
- Remove from the refrigerator for about a half an hour before serving.
- You can use many types of pasta ie: rotini, farfalle, penne.
- You can half the recipe by cutting down the amount of pasta -- but I would still make the same amount of vinaigrette.
- It's way too yummy!

- PASTA: Bring water to a rolling boil and generously salt the water (See Note 1) before adding in the pasta. One tablespoon fine sea salt to about 16 cups of water is a good guide. Once the salt has been added, wait for the water to come back to a boil, and then add in all the pasta. Toss, add in feta, and toss again. Chill for 30 minutes to an hour before serving. At serving time, gently toss salad again and taste to adjust any seasonings as needed.
