We've been making these wings for a solid 20 years. They are a staple of our summer dinner table to the point that the first wing grill of the season is actually an observance in our family. But MOST notable is that they only require three ingredients-chicken wings, salt, and pepper.

3 1/2 pounds chicken wings ((about 1.5 kg))
2 teaspoons salt
2 teaspoons ground black pepper

Steps:

  • First, wash the chicken wings and pat dry. Place in a large mixing bowl. Sprinkle the salt and pepper over the wings and mix thoroughly with your hands. This helps the seasoning really adhere to the chicken.
  • Let marinate in the refrigerator for at least 5 hours. If you let them marinate overnight, all the better! When the wings are done marinating, fire up your grill. Let it get pretty hot--if your grill has one of those fancy thermometers, let it get all the way up to max heat.
  • Grilling is a rather inexact science, so let your resident grillmaster handle these. I'm happy to say that in recent years, I've very nearly usurped my dad--at least when it comes to wings! If you're a grilling novice and need a few more tips, though, here's how I cook them:
  • Place the wings on the grill, topside down. After about 3-5 minutes, you can turn them 90 degrees to brown them evenly. Close the grill to let them cook through as well. Though you should only close the grill for 45-60 seconds at a time, as grease flare-ups can occur pretty easily with wings. When the top of the wing is thoroughly grilled (you'll know it by the golden, lightly crisped and charred skin), flip the wings. Lower the heat to medium/medium high, and repeat these steps until the wings are cooked through, periodically closing the grill to let them cook through. Some wings will cook faster than others, so you can place those on indirect heat while the rest finish up.

1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
3 pounds whole chicken wings
6 tablespoons unsalted butter
1/3 cup hot sauce
1 tablespoon apple cider vinegar
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
  • Preheat a gas grill to medium heat (about 350 degrees F).
  • Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
  • In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
  • In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

2 pounds chicken wings (flats and drumettes attached or separated)
1 tablespoon vegetable oil
1 teaspoon kosher salt, plus more
1/2 teaspoon freshly ground black pepper, plus more

1/3 cup hot sauce, such as Frank's

Steps:

  • Pat wings very dry with paper towels. Toss wings, oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl to coat.
  • Melt butter in a small pot over medium-high heat. Remove from heat, stir in hot sauce, and set aside in a warm place.
  • Prepare a grill for two zones, medium and medium-high, or heat a grill pan over medium. Working in batches if necessary, grill wings over medium heat, turning occasionally, until skin is starting to brown and fat is rendering, about 12 minutes. Move wings to medium-high zone of grill or increase heat under grill pan to medium-high. Cook wings, moving to a cooler section of grill or reducing heat if they start to burn, and brushing with about 1/4 cup hot sauce mixture during last minute of cooking, until cooked through, an instant-read thermometer inserted into the flesh but not touching the bone registers 165°F, and skin is crisp and lightly charred, 5-10 minutes.
  • Pour remaining sauce into a large bowl, add grilled wings, and toss to coat. Season with salt and pepper and serve immediately.

1/4 cup Worcestershire sauce
1/4 cup terriyaki marinade
chicken wing sauce (we use a brand called Buffao Brand Chicken Wing Sauce)

Steps:

  • Mix Worchestersire sauce& marinade.
  • Split Wings.
  • Grill on gas grill.
  • Brush on sauce while grilling.
  • Once done, put all wings in large bowl with lid.
  • Add the wing sauce and shake to coat all wings.
  • Let sit for about 15-20 minutes for the sauce to soak in.
  • Eat& Enjoy!

1 cup louisiana hot sauce
1 (12 fluid ounce) can Coke
1/4 teaspoon cayenne pepper (to taste)
1/4 teaspoon ground black pepper (to taste)

  • Procedure:
  • Preheat a grill to medium heat.
  • In a large pot, mix together the hot sauce, cola, cayenne pepper, black pepper and soy sauce.
  • Add the wings to the sauce - frozen is okay.
  • Place the pot to one side of the grill, so the sauce comes to a simmer.
  • Use tongs to fish wings out of the sauce, and place them on the grill for 8 to 10 minutes.
  • Then return to the sauce to simmer.
  • Repeat this process for about 50 minutes.
  • The sauce will thicken.
  • When the chicken is tender and pulls easily off of the bone, you have two options.

3 pounds of chicken wings
1/3 cup relatively mild hot sauce
4 tablespoons melted butter
1 tablespoon sherry vinegar or white vinegar
1 tablespoon minced garlic

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes. (You can also broil in the oven on a sheet pan, flipping wings halfway through.)
  • While the wings cook, combine 1/3 cup relatively mild hot sauce, 4 tablespoons melted butter, 1 tablespoon sherry vinegar or white vinegar, 1 tablespoon minced garlic, salt and pepper in a large bowl.
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill and cook, uncovered, turning as necessary, until they're nicely browned on both sides. (Or return to the broiler for a few minutes.)
