Seriously Amazing Swedish Meatballs in Brown Gravy image

My favorite recipe for Swedish meatballs nuzzled in a simple yet creamy brown gravy! Just like IKEA but only better. It's so good you'll wanna slurp it through a straw!

1 small onion, finely chopped
5 tablespoons butter
2 slices of bread, torn into small pieces
3 tablespoons milk
1 ¼ pound lean ground beef
1 large egg
1 teaspoon salt + ½ teaspoon black pepper
¼ teaspoon ground nutmeg
½ teaspoon EACH ground allspice AND garlic powder
1 tablespoon EACH oil AND Worcestershire sauce
2 tablespoons flour
1 ¾ cup beef or chicken broth, low sodium
½ cup sour cream
½ - 2 teaspoons yellow mustard
buttered egg noodles or mashed potatoes, for serving

Steps:

  • In a large skillet, heat a tablespoon of butter over medium heat. Add the onions and allow them to soften and become translucent about 3-5 minutes. Remove to a medium bowl and allow them to cool.
  • In a small bowl, pour the milk over the bread and press down with a spoon or your fingers so that the bread soaks up all the milk, let sit 5 minutes.
  • When the onions have cooled, add the ground beef, bread mixture, an egg, salt, pepper, nutmeg, and allspice to the bowl and mix until just combined. Don't overmix the meat as it will result in tough meatballs. Shape into 18-22 meatballs that are about 1- 1 ¼ inch in diameter.
  • Heat 1 tablespoon of butter along with oil in a skillet over medium-high heat. Add the meatballs and cook for 6-9 minutes, turn every couple of minutes to ensure even browning. Remove to a plate. If you don't have a skillet large enough to hold all the meatballs, do it in batches, do not overcrowd the pan, you don't want them to steam as they won't develop that brown outer crust and as a result, the sauce will be very light in color.
  • Add the remaining 3 tbsp of butter to the skillet on medium-low heat. Sprinkle the flour in and whisk for 1-2 minutes or until it turns golden brown. Slowly pour the beef broth in while you whisk. Lower the heat, whisk in the sour cream until it dissolves completely.
  • Add the garlic powder, a ½ teaspoon of mustard, and Worcestershire sauce and let come to a gentle simmer before lowering the heat. Allow sauce to thicken for 6-10 minutes or until it reaches desired consistency. Taste and adjust with additional mustard as desired. Add meatballs in when there are 4 minutes remaining. Keep in mind the sauce will thicken as it sits, so if you aren't serving right away, consider leaving it a little thinner. Serve on top of buttered egg noodles or mashed potatoes. Top with fresh parsley if desired!

1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Steps:

  • Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
  • Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
  • For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
  • Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

6 cloves garlic, thinly sliced
Two 28-ounce cans whole peeled tomatoes, crushed by hand
Handful torn fresh basil leaves
Kosher salt
2 slices stale white sandwich bread
1/2 cup milk
1 1/2 pounds ground beef
1 1/2 pounds ground pork
1 cup grated Parmesan
2 large eggs, beaten
1 small onion, grated
1/2 cup fresh parsley, roughly chopped
3 cloves garlic, finely grated
Kosher salt
Large pinch crushed red pepper flakes
Olive oil, for the baking sheets

Steps:

  • For the sauce: Swirl the oil and garlic in a medium saucepan over medium heat until the garlic is just lightly browned and fragrant, about 4 minutes. Add the tomatoes and 1 cup water, and bring to a high simmer. Reduce the heat to medium-low, add the basil and 2 teaspoons salt and simmer, uncovered, until thickened, 20 to 25 minutes. Set aside and keep warm.
  • For the meatballs: Preheat the oven to 425 degrees F. Tear the bread into very small pieces and put it in a small bowl. Pour the milk over the bread, and let sit until the bread is soft, about 5 minutes.
  • Combine the bread mixture with the beef, pork, Parmesan, eggs, onions, parsley, garlic, 2 teaspoons salt and red pepper flakes in a large bowl, and thoroughly mix with your hands. Divide the mixture evenly into 36 mounds, and roll each into a ball.
  • Brush 2 rimmed baking sheets generously with oil. Evenly divide the meatballs between the sheets, and roll them around to coat in oil. Bake until golden brown and cooked through, rotating the sheets halfway through if needed, 15 to 20 minutes.
  • Transfer the meatballs to the warm sauce, and cook for 5 minutes over medium-low heat. Let the meatballs and sauce cool completely, divide evenly among four 1-quart containers and freeze for up to 1 month.
  • To reheat: Let a container of the meatballs and sauce thaw in the refrigerator overnight. Transfer them to a microwave-safe container, and microwave in 2-minute increments, gently stirring after each, until the meatballs are heated through.

4 garlic cloves, chopped
1 medium onion, chopped

1/2 cup grated Parmesan
1 teaspoon salt
1 cup water
1/2 cup fresh basil leaves, cut into thin strips
1 pound ground sirloin or lean ground beef, pork, turkey, veal, chicken, or any combination
2 eggs
6 garlic cloves, finely chopped, plus 3 garlic cloves, chopped
1 cup seasoned bread crumbs
1 tablespoon salt
1 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
1/2 cup milk
1 cup all-purpose flour
1 pound pork spare ribs, trimmed
1 cup extra-virgin olive oil
1 (6-ounce) can tomato paste, for sauce and ribs

Steps:

  • Strain the plum tomatoes in a colander to extract the juice, breaking the tomatoes apart with your hands. Discard the pulp and set aside.
  • Heat the olive oil in a large pot over medium-high heat. Add 4 cloves garlic, the onion, red pepper and black pepper. Saute until the onion is soft and beginning to brown, about 5 minutes. Add juiced tomatoes, red wine, Parmesan and salt. Add the tomato paste and the water and stir together over medium heat. *Cook's Note: Tomato paste should be added after making meatballs and ribs.
  • Put the ground meat in a mixing bowl. Beat the eggs and add them to the meat along with 6 cloves garlic, the bread crumbs, salt, pepper, Parmesan and milk. Mix this all together with your hands. Wet your hands with water and continue to wet them as you pinch meat from the bowl and roll into 2-inch balls. Roll the balls in the flour.
  • Heat 1/2-cup of oil in a large skillet. Add 3 cloves chopped garlic and saute until golden brown. Remove the garlic with a slotted spoon and set aside. Add the meatballs and saute over medium-high heat, turning them until they are brown all over.
  • *Cook's Note: As soon as you can pick them up with a fork, they are ready. You don't want them to be well done. If the meatball slides off the fork when you pick it up, it needs to cook a little longer.
  • Cut the ribs apart and remove the membrane. Saute them in 1/2-cup oil until very brown and remove.
  • Return the garlic to the oil and add tomato paste (for the sauce) to the pan; Cook, stirring, over medium heat for about 3 minutes until it softens. Remove from the heat and add to the sauce.
  • Add the meatballs and spareribs to the sauce. Bring to an easy boil, then simmer over low heat for 2 hours. Add the basil and simmer for 15 minutes more. The spareribs should be very tender, falling off the bone and the meatballs should float in the sauce

  • In a large bowl, combine the first eight ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-3/4-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake at 350° for 25-30 minutes or until a thermometer reads 160°; drain., Meanwhile, in a large saucepan, saute onion and garlic in oil until tender. Stir in the tomatoes, tomato sauce and paste, water, parsley, sugar, basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. , Add meatballs to sauce; simmer 5 minutes longer or until heated through. Serve with spaghetti.

Steps:

  • In a large bowl, beat the egg, milk, cornstarch, onion, salt, pepper, nutmeg, allspice and ginger. Add beef; mix well. Shape into 1-1/2-in. meatballs. (Mixture will be very soft. 1 lb bone in country-style spareribs or 1 lb pork neck bones
1 lb mild Italian sausage
5 garlic cloves (I use 5)
1/2 cup tomato paste, less than
3 (14 1/2 ounce) cans peeled whole tomatoes (or if you want use peeled fresh tomatoes from the garden)
salt and pepper
fresh basil leaf (you can buy it in the produce section)
3 garlic cloves, minced
1 lb ground beef
3/4 cup Italian breadcrumbs
3 eggs
1/2 cup parmesan cheese or 1/2 cup finely grated pecorino romano cheese
3 tablespoons chopped fresh Italian parsley
salt and pepper

Steps:

  • SAUCE: Heat oil in large heavy pot (use a seasoned pot if you have one). Place the pork in the pot and brown until just about cooked. Transfer pork to plate. Do the same with the sausage and transfer to plate. Leave fat in pot. Add whole peeled garlic cloves cook until tender. Put garlic on plate with meat and stir in tomato paste until "saucy". Chop up tomatoes leaving the tomato juice in the cans (I use my chopper) and add them to the pot.
  • Then add 1/2 of one can of the juice to the pot. Add salt and pepper to taste. Add the meats and garlic to the sauce and bring to a boil. Turn down to low and cook for about 1 1/2 hours. Leave the sauce on low and remove all the meat and garlic cloves.
  • Mix all ingredients for meatballs and shape into balls. Add to sauce turn up just a little higher than low and let cook the raw meatballs until they are done (1/2 hour) THATS IT!
  • Now this is an old recipe, but I have seen it in the sopranos cookbook and this is a bit different.
  • I used this sauce to make the ziti al forno from the sopranos cookbook (Recipe #73939) and it was the most amazing thing I have ever eaten, so I posted that too.

EASY MEATBALLS IN DIJON GRAVY

  • In a large bowl, mix together all of the meatball ingredients until fully combined. You can knead it with your hands or mix it in a stand mixture with a dough hook attachment.
  • Form balls with the meat mixture with your hands or a cookie scoop. Place the meatballs on a baking sheet and place in the freezer for 5-10 minutes.
  • Heat some oil on a large skillet. Brown the meatballs on all sides until the meatballs are cooked through. Remove from the saucepan and set aside.
  • Melt the butter on the skillet. Whisk in the flour until medium brown. Pour in the broth and simmer until thickened. Add in the milk and mustard. Simmer until thick and creamy.
  • Place the meatballs in the sauce and cook until the meatballs are heated through.

2 jumbo yellow onions, chopped
1 cup celery, chopped

1 (28 ounce) can whole peeled Italian tomatoes
3 (6 ounce) cans tomato paste

1 cup chopped green onion (green part only)
1 jumbo yellow onion, chopped
2 cups chopped celery
1/2 cup chopped parsley

6 large eggs, lighltly beaten
1 cup Italian seasoned breadcrumbs
salt and pepper
1 cup olive oil (or as needed)

Steps:

  • To make sauce: Melt butter in a large heavy pot. Add the green onions, yellow onions, celery, bell pepper, parsley, garlic, and Italian seasoning and saute over medium heat for 15 minutes. Add the bay leaves and whole tomatoes and mash tomatoes against the side of the pot to crush. Lower heat and simmer for 1 hour, then add tomato paste and sauce, and salt and pepper to taste. Cover and let simmer 2 hours. Add sugar, cover and let simmer another 2½ hours, stirring occasionally. If the sauce looks too thick a little water may be added.
  • Prepare meatballs by mixing all ingredients, except olive oil, together. Roll into 1½- to 2-inch balls. Heat a few tablespoons of oil in a large skillet and saute in batches until nicely brown. Set aside.
  • Add meatballs to sauce and continue simmering another 30 to 45 minutes. Remove bay leaves. Serve over spaghetti (cooked al dente) and top with freshly grated Romano cheese.

3/4 cups grated Pecorino Romano cheese
2 garlic cloves, chopped

1/4 cup olive oil
1 medium onion, chopped
1 garlic clove, chopped
1 (6-ounce) can tomato paste
2 (28-ounce) cans ground tomatoes
3/4 (28-ounce) can water (from empty ground tomato can), or 21 ounces water
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon chopped fresh parsley leaves

  • For the meatballs: Combine all ingredients except the olive oil in a large bowl. Mix well. Form about 16 meatballs and place on a platter. Heat the olive oil in a large skillet and fry meatballs over medium heat until browned. Repeat until all meatballs are browned. Place meatballs on new clean platter. Do not discard the oil.
  • For the Gravy: In the skillet, heat the reserved oil, add the onion and garlic and saute for approximately 2 minutes. Add the tomato paste and cook on medium heat for 3 minutes, stirring constantly. Fill the empty tomato paste can full of water, add to the skillet, and cook for 1 minute, stirring. Remove from heat and set aside.
  • In an 8-quart saucepan, add the ground tomatoes and cook on medium heat for 5 minutes. Fill the empty ground tomato can 3/4 full of water and add to the saucepan, along with the tomato paste mixture from the skillet and the reserved browned meatballs. Mix thoroughly but carefully with a wooden spoon so as to not break the meatballs. Add the salt, ground pepper, and parsley and cook on medium heat for 15 minutes, then cover and cook on low heat for 2 1/2 hours, stirring every 15 minutes to prevent sticking and burning on bottom of pan. Serve over al dente pasta and sprinkle with some grated Pecorino Romano cheese, along with crusty Italian bread and a good bottle of red wine.

1 Tbsp pre-diced garlic

Steps:

  • In a large mixing bowl, beat the egg and milk together, then whisk in cornstarch, onion, yellow mustard, pepper, nutmeg, allspice and ginger. Add beef and mix well by hand.
  • Form and roll into golf ball size meatballs. Mixture will be soft due to less binder. Don't worry if balls flatten somewhat.
  • Pre- heat a large iron skillet over medium high heat, coat the pan with olive oil spray and brown the meatballs. Don't overcrowd and only do half at a time, for about 10 minutes or until all sides are nicely browned. Remove meatballs to paper towels to drain. Carefully drain off any excessive grease from the skillet retaining the flavor bits.
  • For gravy, add butter to remaining drippings. Then stir and work in flour. Add no salt added beef broth, garlic, bouillon and milk. Bring to a low boil and stir for 2 minutes or until thickened. Return meatballs to skillet; heat through on low.
  • Double the meatball recipe for extra leftover that can be frozen.
  • Serve on noodles, rice or mashed potatoes.

1 cup seasoned bread crumbs
1 cup romano cheese, freshly grated

5 garlic cloves, crushed
2 (6 ounce) cans tomato paste
1 cup water
2 (28 ounce) cans crushed tomatoes
3 (28 ounce) cans tomato puree

1 tablespoon parsley
1 teaspoon sugar
1 tablespoon salt
3 pork bones (neckbones)

Steps:

  • Place ground beef, pork, bread crumbs, Romano cheese, eggs, milk, seasoned salt and basil into a large bowl.
  • Mix well with hands; shape into 24 balls.
  • Brown meatballs in pan, making sure to keep a thin layer of water on the bottom of the pan at all times to prevent burning.
  • While meatballs are cooking, start the gravy.
  • Brown onion lightly in olive oil in a large pot.
  • Add garlic and cook 1 or 2 minutes.(Do not burn.).
  • Add tomato paste and water.
  • Stir until tomato paste is thinned.
  • Add remaining ingredients and mix well.
  • Bring to a slow boil and reduce heat.
  • When meatballs are done, add to sauce.
  • Simmer, covered loosely, over low heat about 2 hours, stirring frequently to prevent burning.
  • If sauce is too thick water may be added.

½ cup breadcrumbs
1 large egg
½ cup very finely diced onion
2 tablespoons ketchup
1 tablespoon mustard
1 tablespoon Worcestershire sauce

½ teaspoon onion powder
1/2 teaspoon garlic powder
Black pepper
oil ( for pan frying)
2 tablespoons butter
1 onion (halved and sliced)
2 tablespoons flour
1 ½ cups beef broth (or more as needed; I usually do 2 cups but we do prefer a thin gravy)
salt, pepper and Worcestershire sauce (to taste)

Steps:

  • Shape meatballs: Add all ingredients for the meatballs (EXCEPT for the oil) to a large bowl. Mix well, then shape into firm meatballs (I use about 2 teaspoons of mixture per meatball).
  • Brown meatballs: Heat oil in a large skillet over medium-high heat, then brown the meatballs in batches on all sides. Be very careful when flipping them - slide a spatula underneath to keep them from breaking up. Set browned meatballs aside on a plate.
  • Make the gravy: Lower heat to medium. Add butter to the skillet and melt, then add sliced onion and cook for 5-10 minutes, until very softened and golden brown. Stir in the flour, then stir in the beef broth until smooth.
  • Simmer gravy: Simmer gravy until thickened, then carefully add the meatballs and finish simmering until meatballs are done in the middle. Serve over mashed potatoes.

A simple tomato sauce with lots of flavour is perfect for spaghetti and meatballs. A weeknight classic. This is designed to be a low cost recipe.

1 tbsp olive oil
1 brown onion, chopped
1 garlic clove, finely chopped
1 tsp dried mixed herbs
400g tin tomatoes
500ml/18fl oz vegetable or beef stock (from a cube)
400g/14oz dried spaghetti
salt and pepper
400g/14oz beef mince
1 garlic clove, finely chopped
½ tsp dried mixed herbs
1 tbsp olive oil

Steps:

  • Heat a large saucepan over a medium heat and add the olive oil. Once hot, add the onion and cook gently without browning for 4-5 minutes, or until softened and translucent. Add the garlic, continue to cook for 2 minutes until aromatic, then add the dried herbs, tomatoes and stock. Bring the sauce to a simmer, reduce the heat and simmer gently while you make the meatballs.
  • For the meatballs, mix together the beef, garlic and herbs along with a decent pinch of salt and pepper. Using wet hands roll into 20 balls.
  • Heat a frying pan over a medium heat and add the olive oil. Once hot, fry the meatballs on all sides until nicely coloured, being careful not to burn them. You may need to do this in batches. Transfer to the saucepan containing the sauce.
  • Continue to simmer the sauce for 10 minutes while you cook the spaghetti.
  • Bring a large saucepan water to the boil, add a pinch of salt and cook the spaghetti according to the packet instructions. Once cooked, drain and tip into the saucepan with the meatball sauce. Mix well and serve hot.

Steps:

  • Roll ground beef into balls of whatever size you want (I like about bouncy ball size). Put them into skillet and place lid on top. Turn to medium heat and let cook until grease drains out and outside of meatballs turn grayish brown.
  • While meatballs are cooking, get a medium bowl and combine spaghetti sauce and sugar. Pour into saucepan big enough to hold meatballs and sauce.
  • When meat is done, drain excess grease and put meat into sauce. Simmer for at least 1 hour.

3 center-cut pork chops (total weight 1 to 1 1/4 lb.)
1 1/4 lbs sweet Italian sausage, halved horizontally
1 cup chopped onion
2 plump garlic cloves, peeled and finely minced
1/4 teaspoon fennel seed
1/2 teaspoon fine sea salt
3 1/2 cups pureed canned tomatoes
1 (6 ounce) can tomato paste
parmigiano-reggiano cheese, rinds (or end bits of Pecorino Romano)
1 lb spaghetti or 1 lb rigatoni pasta
freshly grated pecorino romano cheese
12 ounces ground beef
4 slices white bread, crusts removed and discarded, cut into tiny cubes
1/4 cup milk
3/4-1 cup freshly grated pecorino romano cheese
3 fresh basil leaves, torn into small pieces
1 tablespoon chopped fresh flat-leaf parsley
1 egg, lightly beaten
1/2 teaspoon fine sea salt

Steps:

  • Make the meatballs: In a large mixing bowl, combine beef, bread, and milk.
  • Add the cheese, basil, parsley, egg, and salt.
  • Mix gently but thoroughly.
  • Form into small meatballs, no more than 1 1/2 inches in diameter; set aside (can cover and refrigerate while you are making the sauce).
  • Heat olive oil in a heavy-bottomed stockpot.
  • Add pork chops and sausages and brown on all sides.
  • Transfer pork chops to a plate to make room for the onions.
  • Toss the onions into the pot with the garlic, fennel seeds, and salt.
  • Saute over medium heat stirring frequently and scraping up any bits left behind by the pork and sausages, until the onions are soft and golden.
  • Put the pork chops back in the pot with any juices on the plate.
  • Add the tomatoes, 4 1/2 cups water, and tomato paste.
  • Drop in a few cheese rinds or ends if you have any.
  • Cover the pot, bring to a boil; decrease the heat, and simmer for 30 minutes.
  • Gently drop in the meatballs, 1 at a time, shaking the pot a bit to encourage them to nestle in with the pork and sausage and to make room for the addition of more meatballs.
  • After all the meatballs have been added, continue to simmer, covered, for 1 hour longer, or until the pork chops are very tender.
  • To finish the gravy, transfer the pork chops to a cutting board.
  • Remove and discard the bones, chop up the meat, and return it to the sauce.
  • Keep warm over low heat while you cook the pasta.
  • Bring a large pot of water to a boil.
  • Generously salt the water and drop in the spaghetti.
  • Cook, stirring often, until al dente; drain pasta.
  • To serve--start with a large, heated deep platter or pasta bowl.
  • Cover the bottom with a ladleful of gravy and a good sprinkling of Pecorino Romano.
  • Top with half the pasta.
  • Add more gravy and cheese, the remaining pasta, and another layer of gravy and cheese.
  • Serve immediately with more grated cheese.
  • Pass the meatballs, sausage, pork, and additional gravy in a bowl at the table.

Steps:

  • Meatballs: In a bowl mix together the milk and egg. Add mixture to bowl of bread cubes. Toss to coat. Let the bread stand for 15 minutes. Mash the bread cubes and add to a 1 pound of ground beef, grated Romano, garlic, and parsley. Mix together. Add salt and pepper to taste With wet hands form walnut size balls. Brown the meatballs lightly in olive oil. Add meatballs to 6 cups sauce bubbling in pot. Simmer 45 minutes Tomato sauce: Heat oil in a casserole. Add garlic and stir until lightly golden. Then add the crushed tomatoes with their juice, 2 tomato cans of water, the ground pepper, chopped parsley, chopped fresh basil and salt. Then taste it. If it seems a little acidic, add a little sugar Bring to a boil and simmer, stirring occasionally, for 45 minutes.
