PERSIMMON STEAMED ENGLISH PUDDING

Persimmon Steamed English Pudding image

This is an English pudding (or cake). A persimmon is a fruit with red-orange skin and flesh which comes in several varities and are in season from October to around Dec or Feb depending on your location. When selecting persimmons, look for plump, soft fruit but not mushy. Some helpful notes from our Zaar friend Maito, (who so kindly volunteered to be the test kitchen for this recipe that I found scratched down on paper from long ago and had not made personally) are as follows: Either of the two varieties of persimmons will work with this, as long as the fuyus are soft or hachiyas are super soft/almost mushy. Put greased parchment paper (greased side down) under the foil (so aluminum doesn't drip into your cake). It is also helpful to have a string to make a handle to help you lift the cake out (we did a crisscross around the whole pan). Before step 3, you might measure the amount of water you want first (with the pans and pot in place), before putting the batter in.

Time 3h20m

Yield 12 serving(s)

Number Of Ingredients 17

1 cup pureed persimmon
3/4 cup sugar
1 large egg, lightly beaten
2 tablespoons unsalted butter, softened
1 cup all-purpose flour
1/2 teaspoon cinnamon
2 teaspoons baking soda
1/2 cup milk
1/4 cup golden raisin, plumped in warm water drained and chopped
3/4 cup sugar
2 1/2 tablespoons cornstarch
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 cups warm water
2 tablespoons unsalted butter
1 1/2 teaspoons vanilla
1/2 teaspoon lemon zest

Steps:

  • In a large bowl combine persimmon puree, sugar, egg and butter and beat until smooth (an electric mixer really helps!).
  • Sift flour, cinnamon and baking soda together and stir into persimmon mixture along with the milk and raisins alternately.
  • Turn batter into a well buttered 1 quart steamed pudding mold and cover tightly with a lid or heavy foil secured with kitchen string.
  • Place mold on a rack in a kettle with a tight fitting lid.
  • Pour boiling water into kettle to reach 2/3 of the way up the sides of the mold and steam pudding covered for 2 hours over medium heat.
  • Remove pudding to a rack and cool uncovered for 15 minutes.
  • Invert onto a serving plate and serve with vanilla sauce.
  • VANILLA SAUCE:.
  • In a small saucepan combine sugar, cornstarch, nutmeg and salt.
  • Add water in a stream whisking constantly and then simmer sauce over low heat until thickened or just starts to come to a boil (about 3 minutes).
  • Off heat, whisk in butter, vanilla and zest.
  • Transfer to a serving bowl and serve with warm steamed pudding.
  • Makes 2 cups.

AS-YOU-LIKE-IT STEAMED PUDDING

As-you-like-it steamed pudding image

A steamed basin sponge hits the spot every time and uses up half-full jars of marmalade, syrup or jam - serve hot with custard!

Provided by Cassie Best

Categories     Dessert, Dinner

Time 3h15m

Number Of Ingredients 9

butter , for greasing
custard , to serve (optional)
4 tbsp jam (we used strawberry), marmalade, curd, golden syrup or chopped stem ginger (or 200g/7oz canned fruit, drained and roughly chopped)
175g/ 6oz butter , softened
175g/ 6oz caster sugar
3 eggs
175g/ 6oz self-raising flour
1 tbsp milk
1 tsp vanilla extract

Steps:

  • Generously grease a 1.2-litre pudding basin and put your chosen topping in the base. Boil a kettle of water. To prepare your steamer, put a snugly fitting upturned bowl in the base of a large, deep saucepan, big enough to hold the pudding.
  • Put the ingredients for the sponge in a food processor and blend until smooth (but don't overwork the mix), then tip into the pudding basin. Cover with a lid made of baking parchment and foil, and tie with string to secure (see step-by-step). Stand the pudding on the upturned bowl in your saucepan. Pour in enough hot water to come halfway up the side of the pudding basin. Set over a medium heat and bring to the boil. Cover the pan with a tight-fitting lid, lower the heat to a gentle simmer and leave to steam for 2½ hrs, topping up with boiling water if the level gets too low.
  • Check the pudding is cooked by inserting a skewer through the foil and parchment lid into the centre of the pudding. If the skewer still has some wet mixture on it, return the pudding to the steamer for a further 15-20 mins, then check again. Once cooked, uncover and turn the pudding onto a plate. Serve straight away with custard, if you like.

STICKY DATE & RAISIN PUDDING

Sticky date & raisin pudding image

Keep everyone happy with this sticky toffee-like steamed basin pudding packed with dried fruit

Provided by Good Food team

Categories     Dessert

Time 4h

Number Of Ingredients 10

250g stoned date , roughly chopped
100g raisin
150ml milk
150ml brandy or rum
140g butter , softened, plus extra for greasing
50g soft brown sugar
2 large eggs
175g self-raising flour
1 tsp mixed spice
zest 1 orange

Steps:

  • Put the dates, raisins, milk and brandy or rum in a small saucepan and bring to the boil. Simmer for 5 mins until the fruit is soft and the liquid has been absorbed - don't worry if it looks a little curdled. Leave to cool. Meanwhile, generously butter a 1.2-litre pudding basin.
  • To prepare your steamer, place a snugly fitting upturned bowl or saucer in the base of a large, deep saucepan, big enough to hold your pudding basin. Cut out a large circle of baking parchment and one of foil, both 5cm wider than the rim of your pudding basin. Make a sharp pleat down the centre of both, then butter one side of the parchment - this will be your lid. Set aside. Boil the kettle for the steamer.
  • In a mixing bowl, beat the butter and sugar with an electric whisk until pale and fluffy. Add the eggs, beating again until well combined. Finally, add the flour, mixed spice, orange zest, date mixture and a pinch of salt, and stir everything well with a spatula until there are no visible lumps of flour. Tip the cake mixture into your pudding basin. Cover the bowl with the parchment, butter-side down and pleat on top, then the foil. Push the sides of the lid down, then tie a piece of string securely under the lip of the basin. Use any overhanging string to create a handle to help you lift the pudding.
  • Stand the pudding basin on top of the upturned bowl or saucer in the saucepan and fill the pan with enough boiling water to come halfway up the side of the basin. Bring to a gentle simmer, then cover the pan with a lid and leave to steam for 2½ hrs, topping up with boiling water if the level gets low. Check the pudding is cooked by inserting a skewer into the centre. If the skewer has any uncooked mixture on it, return it to the pan to steam for another 15 mins, then check again. Once cooked, you can cover the pudding with clean baking parchment and foil and keep for up to a week. Re-steam the pudding for 1 hr before serving.

CUMBERLAND RUM BUTTER

Cumberland Rum Butter image

I was born and bred in Cumberland (or Cumbria as it is now called, which you will perhaps know as the English Lake District). Rum Butter is a traditional Cumbrian dish which is served at Christmas time or any festive occasion especially babies Baptisms. When the rum butter dish was empty, silver coins were placed in it as a gift for the baby. This is my Mothers recipe which was handed down from her Mother....

This was one of the courses that we cooked in a cooking class that I recently took and all the recipes were from Australian Delicious. Suggested you serve with cream or custard they served with cream on the night.

TRADITIONAL ENGLISH CUMBERLAND RUM BUTTER

Traditional English Cumberland Rum Butter image

A lightly spiced butter, laced with dark rum - this traditional old recipe originates from the county of Cumberland in the Lake District of Northern England. In Cumberland, rum butter served with oatcakes or buttermilk scones were given to friends who called at the house to see a new baby. In turn they would leave a silver coin, and on the day of the christening, when the butter bowl was empty, the coins were placed in it. A sticky bowl, with plenty of coins sticking to it, meant that the child would never be wanting. The saying goes...... "Butter symbolizes the richness of life, sugar the sweetness of life and rum, the spirit of life." Cumberland rum butter is traditionally served with Christmas pudding and mince pies; it also makes a wonderful gift for any new parents or to give throughout the festive season.
