1 teaspoon kosher salt
½ teaspoon black pepper
2 pounds boneless pork shoulder, cut into 1-inch pieces
3 tablespoons olive oil
1 onion, cut into 1-inch pieces
2 medium green bell peppers, cut into 1-inch pieces
1 poblano chile, seeded and cut into 1-inch pieces
2 jalapeno peppers, seeded and chopped
½ teaspoon dried oregano leaves, crushed
3 cloves garlic, minced
2 cups Swanson® Mexican Tortilla Flavor Infused Broth
1 (4.5 ounce) can chopped green chiles, undrained
½ cup chopped cilantro
⅓ cup sour cream

Steps:

  • Stir the flour, salt and black pepper in a large bowl. Add the pork and toss to coat.
  • Heat 1 tablespoon oil in a 4-quart saucepan over medium-high heat. Add the pork to the saucepan in batches and cook until well browned, stirring occasionally. Remove the pork from the saucepan.
  • Reduce the heat to medium. Heat the remaining oil in the saucepan. Add the onion, green peppers, poblano chile, jalapeno peppers and oregano and cook for 5 minutes or until the vegetables are tender, stirring occasionally. Add the garlic and cook and stir for 1 minute.
  • Stir the broth, green chiles and cilantro in the saucepan. Return the pork to the saucepan. Reduce the heat to medium-low. Cook, uncovered, for 1 hour or until the pork is fork-tender, stirring occasionally. Serve with the sour cream and additional fresh cilantro.

4 medium carrots, sliced
1 medium onion, thinly sliced
4 garlic cloves, minced

3/4 cup flour
2 tsp salt
2 tsp garlic granules
1 tsp black pepper
1 1/2 pounds lean pork, cut in bite size pieces
6 ounces white mushrooms, sliced to bite size
28 ounces green enchilada sauce, medium heat
1 tsp chopped garlic
2 cups water
2 tsp chopped cilantro
3/4 cup uncooked white rice, basmati or jasmine, rinse well before using

Steps:

  • put inner pot in the Instant Pot, set to saute
  • add 1 TBSP of the cooking oil and let it heat
  • meanwhile mix the flour, salt, garlic granules, and black pepper in a bowl
  • add half the the cut up pork to the bowl and toss to cover with the flour
  • when the oil is hot in the Instant Pot add the dredged pork, use a slotted spoon to lift the pork out of the flour and place carefully in the hot oil
  • let it cook for 1-2 minutes before stirring, while it's cooking go ahead and get the rest of the pork rolled in flour
  • stir the cooking pork so it starts to brown on all sides, not completley cooking just lightly browing up the flour
  • when it's browned, 5 minutes total, remove to a plate covered with a paper towel or brown paper bag and let it drain
  • add the second TBSP of oil to the pot and repeat the cooking process for a total of about 10 minutes to brown all the meat
  • once it's done remove it from the pan to drain, add the water to the pan, it will steam up so be aware of that
  • while it's bubbling and boiling scrape the bottom of the pot to get all the browned bits off, then add the sliced mushrooms
  • pour in the enchilada sauce, the chopped garlic, cilantro, and browned pork, stir well
  • sprinkle the rinsed rice over the top of everything, and stir well
  • place the lid on the instant pot, set to seal
  • press cancel on the pot, then manual, set the time to 4 minutes for jasmine rice, 5 minutes for basmati
  • the pot should come to pressure fairly quickly because it was nice and hot to start with
  • once the timer counts down and the pot beeps let it natural release for 8-10 minutes before serving

2 pounds tomatillos (husked and rinsed)
2 poblano peppers (stemmed and sliced in half lengthwise)
3-4 jalapeno peppers (stemmed and sliced in half lengthwise)
2 tablespoons olive oil
3 pound boneless pork shoulder (cubed (do bite sized cubes))
2 tablespoon ancho chili powder (optional)
1 teaspoon cumin (optional)
Salt and pepper to taste
1 large onion (chopped (white or yellow))
4 cloves garlic (chopped)
1 tablespoon Mexican oregano
½ - 1 cup chicken stock
½ cup chopped cilantro
Juice from 1 large lime
Extra limes (sliced jalapeno peppers, fresh chopped cilantro, crumbly white cheese, spicy chili flakes)

Steps:

  • Make your verde sauce first. Preheat your oven to broil.
  • Slice the peeled and rinsed tomatillos in half through the horizontal center (not up and down) and arrange on a lightly oiled baking dish with the skin sides up.
  • Place the peppers on a separate lightly oiled baking sheet skin sides up.
  • Bake the peppers and tomatillos about 12-15 minutes until skin side is blistering on both the tomatillos and peppers. Rotate the baking sheets if needed. You may need up to 20 minutes, depending on your proximity to the heat element.
  • Remove from heat and cool slightly. Peel off the pepper skins and discard them. You can peel off the tomatillos skins if you'd like, but I leave them on.
  • Add the tomatillos and peppers to a food processor. Process until smooth. Set aside for now.

6 lbs cubed pork stew meat
1/4 cup vegetable oil
2 large yellow onions
6 cloves garlic, minced
1 tablespoon sea salt
fresh ground pepper, to taste

4 1/2 quarts chicken broth
8 fresh poblano chiles, seeded and chopped
4 fresh jalapeno peppers, seeded and chopped
2 yellow bell peppers, seeded and chopped
3 lbs fresh tomatillos, husks removed
1 cup cilantro leaf, coarsely chopped

Steps:

  • In a large stock pot over high heat sear the pork in the vegetable oil until browned.
  • Remove the pork from the pot, reserve 3 tablespoons oil in the pan.
  • Saute the chopped onion and garlic seasoned with salt and pepper in the reserved oil until onions are tender.
  • Add the cumin, then stir in pork and chicken stock.
  • Simmer for 1/2 hour.
  • Add in poblanos, jalapenos and bell peppers.
  • Puree the tomatillos and cilantro in a blender, and add them to the pot.
  • Cook for an additional 30 to 45 minutes.
  • Serve with Mexican/Spanish rice and refried beans.

Pull out the surgical gloves for this one- lots of chile chopping that leads to great flavor, and a mild heat that tingles your tongue but will burn your fingertips! I made this for my own chile verde cookoff. My DBF chose this one as the winner, and I went with recipe #369095 as my favorite. I mixed the two together and shared it with my colleagues who eagerly ate some for lunch and then brought home little bowls to share with their families. I'm happy they thought it was good enough to share- I hope you enjoy it too! Chile Verde always tastes better the second day! 1/4 cup vegetable oil or 1/4 cup lard
2 large yellow onions, chopped

Steps:

  • Trim off any excess fat from the pork and cut into 2 inch squares. In a large (6 to 8 quart) stock pot, over a high heat, sear the pork in the vegetable oil until golden brown. Remove the pork from the pot and pour off any oil or fat drippings, but leave 2 tablespoons of oil. In the same pot, over a medium heat, add the chopped onion, garlic, salt, and pepper and saute until transparent. Add the cumin, pork, and chicken stock, and cook for 1/2 hour.
  • Add the poblanos, jalapenos, and bell peppers. Puree the tomatillos and cilantro in a blender. Add them to the pot and cook an additional 30 to 45 minutes. (Mine took a bit longer for the meat to get tender). Serve with white beans and rice. Garnish with grated sharp white cheddar cheese.

2 tablespoons vegetable oil
2 pounds boneless pork shoulder, cut into 2-inch pieces
1 yellow onion, diced
2 teaspoons kosher salt, or to taste, divided
2 teaspoons dried oregano
2 teaspoons ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
10 fresh tomatillos
3 jalapeno chile peppers, seeded
1 poblano chile pepper, seeded
6 cloves peeled garlic
½ cup packed cilantro leaves
1 bay leaf
2 ½ cups chicken stock, or as needed
1 ½ pounds Yukon Gold potatoes, quartered
freshly ground black pepper
¼ cup sour cream
pickled red onions (optional)
1 tablespoon chopped fresh cilantro

Steps:

  • Heat vegetable oil in a pot over high heat until it's nearly smoking. Add pork shoulder cubes in a single layer. Let sear until brown on one side, 4 to 5 minutes. Mix and turn pieces over and brown on the other side, 4 to 5 minutes. Add onion, 1/2 teaspoon salt. Cook, stirring until onions turn translucent, about 4 minutes. Add oregano, cumin, coriander, and cayenne. Stir and cook until seasonings get fragrant, about 2 minutes. Reduce heat to low.
  • Remove paper husk from tomatillos and rinse. Cut into quarters. Place in blender with garlic, jalapeno pepper, poblano, cilantro, and chicken broth. Pulse on and off until pieces start to break down. Then blend until mixture has liquefied, about 30 seconds. Stir sauce into the meat mixture. Add 1 teaspoon salt and bay leaf. Increase heat to high and bring to a boil. Reduce heat to low to maintain a slow but steady simmer for about 1 hour. Add potatoes, 1/2 teaspoon salt, black pepper. If mixture has reduced to where potatoes are not immersed, add more broth to cover. Simmer until meat and potatoes are tender, 45 minutes to 1 hour.
  • Garnish individual servings with a dollop of sour cream, some pickled red onions (if desired), and cilantro leaves.

4 pounds pork butt, cut into 1-inch cubes, trimmed of fat
4 yellow onions, chopped
4 Anaheim chiles
2 jalapeno, minced
4 tablespoons garlic, chopped
1 pound tomatillos, husk removed
1/2 cup white wine
1/4 cup white vinegar
1 cup chicken stock
2 tablespoons ground oregano
2 tablespoons ground cumin
1 tablespoon salt
1 tablespoon ground black pepper

Steps:

  • In a medium Dutch oven, heat the oil, add the onion, peppers and garlic. Saute until translucent, do not brown. Remove and set mixture aside.
  • Lightly grill the tomatillos on open flame until lightly charred. Remove from heat, place in bowl and cover with plastic wrap to keep warm for 20 minutes.
  • Add pork butt to Dutch oven and cook over high heat until browned on all sides
  • Add the onion-pepper mixture and tomatillos to the pork. Mix thoroughly and then deglaze with white wine and vinegar. Let reduce for 5 minutes, then add chicken stock, oregano, cumin, salt and pepper.
  • Let simmer for 1 hour.

This authentic pork chile verde recipe will rival any you find in a Mexican restaurant! Tender pieces of pork slow cooked with a fantastic homemade green chile sauce (salsa verde). Serve this delicious stew alongside warm tortillas, rice and beans.

3 pounds pork loin or pork shoulder (, trimmed of fat and cut into 1'' pieces)
salt and freshly ground black pepper
2 Tablespoons oil ((vegetable or canola oil))
1 large yellow onion (, chopped)
3 cloves garlic (, minced)
1/2 Tablespoon ground cumin
1/2 Tablespoon dried oregano leaves
2 cups low-sodium chicken broth
4 fresh poblano chiles (, seeded and sliced in half)
2 fresh jalapeño peppers (, seeded and sliced in half (*see note))
1.5 pounds fresh tomatillos (, husks removed)
1/2 cup fresh cilantro (, coarsely chopped)

Steps:

  • Season pork pieces on all sides with salt and pepper.
  • Heat a large stock pot over high heat. Add oil. Once hot, sear the pork pieces until browned on all sides.
  • Remove the pork from the pot. Add a little additional oil to pan, if needed.
  • Add onion and saute until tender. Add garlic and cook for 30 seconds.
  • Stir in the cumin and oregano. Return pork to the pot and add the chicken broth.
  • Reduce heat to medium-low, cover, and simmer for 2-4 hours.
  • Meanwhile, make the sauce.
  • Place rack on second to top level of oven and turn the oven to high broil.
  • Lightly spray a jelly roll pan with cooking oil. Wash the poblano peppers, jalapeños and tomatillos.
  • Slice the tomatillo and both types of peppers in half, and remove stems. Seed the peppers and remove the white veins inside if if you do not want the chile verde to be very spicy. (See my note below about spice level). Do not seed the tomatillos.
  • Place the poblano peppers, jalapeño and tomatillos on baking sheets cut side down. Broil for about 7-10 minutes or until browned.
  • Immediately place peppers in a plastic bag and tie the bag. Allow them to steam for 5 minutes, and then peel off their outer layer of skin. (It should come off easily)
  • Add the peppers, tomatillos and cilantro to a blender and puree.
  • Add mixture to the pot with the pork and cook everything together for an additional 30 to 45 minutes.
  • Serve with tortillas, and a side of Mexican rice and beans.

Steps:

  • Set the oven to low broil. Remove tomatillos from their husks and rinse well. Cut them in half and add tomatillos to a sheet pan in a single layer. Broil 8-10 minutes until the skin blackens slightly.
  • In a blender add tomatillos, small white onion, garlic, vinegar, cilantro, jalapeno, and salt. If you want the salsa hotter, do not deseed the jalapenos.
  • Cut pork butt into 3-4 inch sections and cut off any excess fat. Rub all sides of pork generously with Chipotle Lime Rub and Chili Verde Sea Salt.
  • In a large dutch oven over medium high heat add in 3 Tbsp Hatch Chili Olive Oil and heat until shimmering. Add the pork to the pot, in batches if needed, careful not to overcrowd the pan, and sear each side of pork about 2-3 minutes a side until they are golden brown.
  • Add 1 cup salsa verde and mexican lager to the pot. Bring to a boil, then reduce heat to medium low, cover and cook for 2-3 hours or until meat shreds easily with a fork.Remove meat from the pot and shred with a fork
  • To serve pork carnitas, warm your tortillas then layer with shredded pork, spoonful of fresh salsa verde, cilantro, cotija cheese, Mexican Crema, and a squeeze of lime.

2 lbs pork (cubed into 1" pieces, I used boneless pork sirloin chops, but pork shoulder is good as well)
3 cloves garlic (minced)
1/2 yellow onion (diced small)
1 red bell pepper (chopped small, green bell pepper works as well)
1 29 ounce can whole tomatoes
1/2 cup or 4 ounces green chile (roasted, peeled and chopped small, frozen or canned is fine also)
1 teaspoon ground cumin
1/8 teaspoon ground cloves
1/2 teaspoon kosher salt (adjust to taste)
2 tablespoons fresh lemon juice
1/2 cup beef broth ((or 1/2 cup water, plus 1/2 teaspoon beef base))
1/4 cup fresh parsley (about 2 tablespoons minced)

Steps:

  • Heat the oil, over medium high heat, in the bottom of a large dutch oven or soup pot with a lid. Brown the pork and then add the onion, garlic and bell pepper. Saute for a few minutes, until the vegetables begin to soften. Add the tomatoes and crush them with your hands or a wooden spoon. Add the rest of the ingredients, except the parsley, and stir to combine.
  • Bring to a simmer and then reduce the heat to medium low. Cook, covered with a lid, for about 2 hours, stirring occasionally. The mixture should be barely simmering. After two hours, remove the lid and add the parsley. Taste and adjust seasonings if desired. Simmer for about 30-45 minutes, until the mixture has thickened. Enjoy!

This green pork chili is made on the stove, but the pork can either be cooked in slow cooker or on the stove as well. This recipe for pork chile verde takes about 6 hours to make if going the slow cooker pork chile verde route.

3 lbs pork loin
salt and pepper to season
1 1/2 lbs of tomatillos
3 jalapenos
1/2 chopped medium white onion
3 tbsp garlic.
1 1/2 cup chicken broth
garlic salt to season
1/2 cup cilantro

Steps:

  • Spray crock pot with nonstick spray and put place pork loin in it. Rub loin with salt and pepper. Cook on high for about 3-4 hours or until the internal temperature reads 145 degrees.
  • During the last hour of cooking, begin making the chili verde sauce. Remove the tomatillo shells and wash off the tomatillos. Cut them in half horizontally and place on a tin foiled pan with the cut side facing down. Broil them for about 5 minutes. Transfer them to a blender (skin and all), add jalapenos, and blend until mixture is almost smooth.
  • When the pork is done, remove from crock pot and place on a plate. Let cool a little bit so that you can touch it when you cut it. Cut into bite size pieces. Place in a deep dish skillet with 3 tbsp olive oil. Add white onion and garlic. When onion turns translucent, pour in the blender mixture. Add in chicken broth. Season with garlic salt and cilantro leaves. Let simmer on low-medium heat covered for about 2 hours. Taste test before serving the pork chile verde to see if it needs more garlic, salt, pepper, etc. Serve over rice.

1 teaspoon freshly ground black pepper
Flour for dredging
1/4 cup vegetable oil
3 yellow onions
2 green bell peppers, cut into 1-inch cubes
2 Anaheim or Poblano chiles, cut into 1-inch cubes
2-3 jalapenos, seeds removed, and finely chopped
3 garlic cloves, peeled and finely chopped
1 1/2 pounds tomatillos, roasted, peeled and chopped
1 tablespoon dried oregano
2 teaspoons ground cumin
2 tablespoons coriander seeds, crushed and soaked in a scant amount of water
2 bay leaves
1 bunch cilantro leaves, cleaned and chopped
4 cups chicken stock

Steps:

  • Season the pork meat generously with salt and pepper, lightly flour. Heat oil in a heavy-bottomed skillet over medium high heat and brown pork chunks well in small batches, on all sides. Lift pork out of pan and place in a wide soup pot. Discard fat and place the onions and peppers in the same skillet and sweat over moderate heat, stirring occasionally until limp, about 5 minutes. Add all of the chiles and cook an additional 3-4 minutes, then add the garlic and cook 1-2 minutes more.
  • Add the Sauteed vegetables, chopped tomatillos, dried herbs and cilantro to the meat, cover with the chicken stock and bring up to a boil and reduce to a slight simmer. Cook for 2-3 hours uncovered or until the pork is fork tender.
  • Adjust the seasoning to taste with salt and pepper. Serve with red rice for a delightful contrast.

3 pound boneless pork shoulder roast (in 1"-2" cubes)
1 1/2 pounds tomatillos (peeled and rinsed)
5 cloves garlic (unpeeled)
1 large jalapeno
1 cup fresh cilantro
1 large white onion (roughly chopped)
1 medium green bell pepper (seeded and roughly chopped)
1 1/2 cups chicken stock
2 tablespoons fresh oregano ( or 1 teaspoon dried)
salt and pepper ( to taste)
optional tortillas, fried plantains, avocado, pickled red onion

Steps:

  • Cut tomatillos in half and place on a baking sheet cut side down with unpeeled garlic. Broil on high about 5 minutes or until charred.
  • Remove everything from pan and place in bowl to cool.
  • Meanwhile, heat a large cast iron pan or stockpot over medium high heat.
  • Season pork chunks with salt and pepper. Add 1 tablespoon oil and half the pork in a single layer. Cook until seared on all sides. Remove and repeat until all the pork is browned.
  • Reduce heat to medium. Add chopped onion, bell pepper and 1/4 teaspoon salt to pan. Saute until softened.
  • Peel garlic and place in a food processor with the cooled tomatillos, jalapeno, cilantro and oregano. Pulse until smooth. Makes about 3 cups of green salsa. Keep 1 cup for to serve with your meal and reserve the rest.
  • Add pork back to skillet with the softened green bell peppers and onions. Pour 2 cups of green salsa over pork mixture and add chicken stock to cover.
  • Bring to a boil then reduce heat and simmer uncovered 2-3 hours or until tender.
  • Season to taste and serve.
