SKILLET BURGERS
I grew up knowing these as "Sloppy Joes". When I wanted to make sloppy joes myself and bought a packet of sloppy joe seasoning, it did not taste like I remembered it! I asked my mom what I had done wrong, and she told me this was the recipe that she used for Sloppy Joes. I have not tried this yet myself, but I remember liking them as a kid.

Return the mixture to a simmer, then add the ketchup, mustard and tomato paste. Mix well, then stir in the stock. Add the noodles, stir to coat and bring to a simmer. BEEF BURGER WITH ROASTED TOMATO KETCHUP
Steps:
- To prepare the ketchup: Preheat the oven to 350 degrees F. Toss the tomatoes in 1 tablespoon of the olive oil and place on a baking sheet. Roast in the oven for 10 to 15 minutes or until soft.
- Transfer the tomatoes to a food processor and process until smooth. Strain the tomatoes, pressing against the solids with a wooden spoon to extract as much pulp and juice as possible.
- Heat the remaining olive oil in a medium saucepan over medium heat and saute the onions and garlic until translucent. Add the tomato puree and remaining ingredients and continue cooking, uncovered for 25 to 30 minutes, stirring occasionally until thick.
- To prepare the burgers: Shape the meat firmly into 4 round uniform patties about 1 1/2-inches thick. Brush both sides of the burgers lightly with the remaining olive oil and season with salt and pepper to taste. Heat a large cast iron skillet over medium high heat until just smoking. Cook the burgers until done to your preference, 5 to 6 minutes on each side for medium rare etc.

Steps:
- Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
- Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
- Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
- Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. Cover and cook until the cheese is melted and the burgers are done, 3 to 4 more minutes for medium.
- Lightly toast the buns on the grill. Spread the aioli on the top and bottom buns. Sandwich with the burgers, roasted tomatoes, caramelized onions and arugula.

EASY SKILLET HAMBURGER AND MACARONI DINNER
I don't know the origin of this recipe, but I've been making it for years, and it was always a family favorite. You can use as much, or as little, cheese as you like and any combination of cheese that suits you. I usually put parmesan down as my first layer, top that with shredded cheddar and then top that with some shredded mozzerella. (I like cheese). I have always used 1 1/2 cups of the dried elbows, 'cause I like my dish a little thicker. Enjoy.

SAVORY SKILLET BURGERS
A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!
