BASIC BUTTERMILK SHEET PAN PANCAKES
Steps:
- Preheat oven to 425 degrees.
- Line a large sheet pan with parchment paper and a light oil spray.
- In a medium bowl, mix wet ingredients - buttermilk, vanilla, eggs, and melted butter.
- In a different medium bowl, mix dry ingredients - flour, baking powder, salt, baking soda, sugar, optional cinnamon.
- Pour the wet ingredients into the dry ingredients and mix so that everything is blended. DO NOT OVER MIX.
- You will still see lumps.
- Mix in Fruity Pebbles at this time if you are making Funfetti Pancakes.
- Pour onto a large sheet pan and evenly spread the batter over the pan.
- (If you are adding toppings, now is the time to evenly place them on top of the batter)
- Bake for 14 minutes or until the center is cooked all the way through. Use a toothpick or fork to carefully check the middle.
- Enjoy immediately if possible. If not, you can easily rewarm a slice in your microwave. You can also freeze your portion for later.

- Preheat oven to 425ºF. Line an 11-by-17-inch rimmed baking sheet with parchment paper, coat the parchment and sides of the pan with nonstick cooking spray, and then set aside.
- Whisk buttermilk, eggs, vanilla, and 2 tablespoons melted butter in a medium bowl until combined.
- In a separate large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Add the milk-egg mixture and stir until just combined. (Do not overmix.)
- Scrape batter into the prepared baking sheet, smoothing into an even layer with a spatula.
- Bake until the pancake is lightly golden and springs back in the center when poked, 11 to 13 minutes. Remove from the oven and heat the broiler to high.
- Brush the remaining 2 tablespoons melted butter onto the pancake. Broil until golden brown, 1 to 2 minutes, rotating halfway.
- Cut into 12 slices and serve warm.

- Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk the eggs, buttermilk, vanilla and melted butter in a medium bowl until incorporated. Whisk the egg mixture into the flour mixture until just combined (it's OK if there are a few lumps).
- Heat a griddle or large nonstick skillet over medium heat; lightly brush with butter. - Position the oven rack in the center of the oven and preheat to 500 degrees F. Whisk the buttermilk, eggs, salt, vanilla and 1/3 cup granulated sugar together in a large bowl until completely combined. Whisk the flour, baking powder and baking soda together in another large bowl until completely combined. Fold the buttermilk mixture into the flour mixture with a silicone spatula until just combined (it's OK if there are a few lumps). Reserve 2 tablespoons of batter in small bowl and set aside.
- Brush 2 tablespoons butter on a 18-by-13-inch sheet pan and pour in the batter, using a spatula to smooth out the top. Tap the tray on the counter a few times to even out and flatten the batter.
- Stir the warmed jam in a small bowl until pourable. Imagine the batter in the pan divided into four sections (2 across and 2 down). Dollop the jam, about 1 teaspoon at a time, over the surface of one section. (You want to see red dots of jam sitting on top of the batter.) Using a toothpick or small skewer, swirl the jam into the batter, making a marbled pattern. Top with sliced strawberries.
- Sprinkle chocolate chips over a second section of the batter. Arrange banana slices in a herringbone pattern over a third section of the batter and sprinkle the fruit with the remaining 1 to 2 teaspoons granulated sugar.
- Mix the brown sugar, cinnamon and reserved batter together in a small bowl, and dollop, about 1 teaspoon at a time, over the last section of the batter. (You want to see a lot of brown dots sitting on top of the batter.) Using another toothpick or small skewer, swirl the cinnamon mixture into the batter, making a marbled pattern.
- Put the sheet pan in the oven and immediately reduce the temperature to 400 degrees F. Bake, rotating the sheet pan halfway through baking, until golden brown and a cake tester inserted into the center of the pancake comes out clean, 18 to 23 minutes.
- Brush the pancake with the remaining 2 tablespoons butter and let cool 15 minutes before cutting. Stir together the confectioners' sugar and 1 teaspoon water in a small bowl and drizzle over the cinnamon swirl quadrant.
- Serve the pancakes with maple syrup and whipped cream.

- Preheat the oven to 450 degrees F and line a baking sheet with parchment paper.
- Prepare pancake batter. Combine dry ingredients in one bowl. Whisk wet ingredients in a separate bowl. Combine the two bowls and stir until smooth.
- Prepare pancake mix-ins.
- Strawberry: Add all but 10 slices of strawberries to a food processor. Add in 1 Tablespoon of heavy cream and ½ Tablespoon sugar. Purée and set aside. Rinse food processor.
- Blueberry: Add ½ of the blueberries to a food processor with ½ Tablespoon of sugar and 1 Tablespoon of heavy cream. Purée and set aside. Rinse the food processor.
- Cinnamon Swirl: combine cinnamon, 1 Tablespoon sugar, and 1 Tablespoon of melted butter in a small bowl and whisk.
- Honeybun: combine honey and 1 Tablespoon melted butter in a small bowl and whisk well.
- Carefully pour the batter into the baking sheet over the parchment paper. Use a spatula to smooth the batter until even.
- Picture the baking sheet in 4 quadrants. Add the strawberry cream into the center of one section and use a knife to swirl it with the pancake batter. Top with sliced strawberries. In another quadrant, do the same with the blueberry cream. Sprinkle blueberries over the top. In the third section, swirl the cinnamon. And in the last section, swirl the honey.
- Place into the oven on the center rack. Bake for 12 minutes.
- Allow to cool slightly before serving. Dust with powdered sugar.
