4 rib lamb chops (about 3/4 pound)
1/2 c. olive oil
4 sprigs torn mint (stems included)
2 roughly chopped large garlic cloves
kosher salt and freshly ground black pepper
For Gremolata:
1 small garlic clove, chopped
1/4 tsp. lemon zest
1/4 tsp. kosher salt
1/2 c. loosely packed mint leaves, plus more for garnish
2 tsp. olive oil

Steps:

  • Place chops, olive oil, mint, garlic, and 1/2 teaspoon pepper in a large, sealable plastic bag. Toss to coat lamb chops and marinate in refrigerator for 2 hours.
  • Remove chops, wipe off excess marinade, and season with salt and freshly ground pepper. Broil chops on high until medium-rare, about 3 minutes per side. Remove and let rest for 5 minutes.
  • Meanwhile, make gremolata: Crush garlic, lemon zest, and salt into a paste using the side of a large knife or a mortar and pestle. In a small bowl, stir together garlic paste and mint leaves with olive oil. Transfer chops to serving plate, drizzle with mint gremolata, and garnish with fresh mint.

3 sprigs flat leaf parsley ((leaves only))
1 Granny Smith apple (cored and sliced)
1/3 cup olive oil
1 tbsp lemon juice
1 rack of lamb
1/4 cup olive oil
3 cloves garlic (minced)
2 tsp fresh rosemary (finely chopped)
salt and pepper (to taste)

Steps:

  • Add all of the sauce ingredients into a food processor and pulse until well combined. Place the sauce in a glass jar and store in the refrigerator until needed.
  • Slice the rack of lamb into individual chops. Place the olive oil, garlic and rosemary into a glass baking dish and stir together. Place the chops into the baking dish, coat both sides and marinate for 30 minutes.
  • Heat a grill on medium-high heat. Place the lamb chops on the grill for approximately 3 minutes each side. Let the chops sit for a few minutes before serving with the mint apple sauce.

4 lamb chops, about 360 g total weight
2 tsp. herbes de Provence (a mixture of dried rosemary, thyme, basil, bay and savory)
245 g jar hollandaise sauce
125 g (4oz) cucumber
125 g (4oz) petit pois
Lemon to squeeze
3 tbsp. roughly chopped fresh mint
Mint sprigs and lemon wedges to garnish

Steps:

  • Season the lamb chops and sprinkle each side with the herbes de Provence. Cook on a griddle pan or under a hot grill for 4min on each side or until medium rare.
  • Put the hollandaise sauce in a pan with the finely chopped, deseeded cucumber and the petit pois. Bring to the boil and bubble for about 1min. (Don't overcook the sauce as the cucumber and peas may discolour.)
  • Season to taste; add a squeeze of lemon juice and the chopped mint. Garnish with mint sprigs and lemon wedges. Serve with new potatoes.

1 bunch fresh mint

2 anchovy fillets
1 clove garlic

2 tablespoons sour cream

Steps:

  • For the spice rub and lamb: Stir together the salt, pepper, coriander, cayenne and lemon zest in a small bowl. Season the lamb chops on both sides with the spice rub. Allow to sit at room temperature while you make the mint sauce.
  • For the mint sauce: In a food processor, add the mint, parsley, anchovies, garlic and some red pepper flakes. Process, adding olive oil as you go, until the sauce is just loose enough to drizzle. Taste and add salt if needed.
  • Heat a grill pan or grill on medium-high heat. Oil the grill and pat the chops dry. Grill the lamb until done to your liking, 2 to 3 minutes per side. Serve with the mint sauce and Baked Sweet Potato with Sour Cream and Mint.
  • Pierce the sweet potato several times with a fork and microwave on high according to the manufacturer's instructions until cooked through, 5 to 10 minutes.
  • Cut the potato open, add the sour cream and snip the mint leaves over the top to garnish.

2 tablespoons vegetable oil
1 cup thinly sliced shallot (4 oz)
1/2 cup beef broth
2 tablespoons balsamic vinegar
2 tablespoons unsalted butter
4 tablespoons finely chopped fresh mint

Steps:

  • Stir fresh cherries together with sugar and macerate while browning chops. If using frozen cherries, stir with any juices and sugar and thaw, about 1 1/2 hours.
  • Pat lamb dry and sprinkle with salt and pepper. Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté 4 chops, turning over once, about 6 minutes total for medium-rare. Transfer to a plate and loosely cover with foil. Cook and transfer remaining 4 chops in same manner.

1 cup Greek yogurt
1/2 cup finely chopped mint leaves
2 teaspoons freshly minced garlic
1 tablespoon fresh juice from 1 lemon

  • Salt lamb on both sides and let sit at room temperature for 40 minutes while preparing grill
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. 2 cloves smashed garlic
12 loin lamb chops, 1/2 to 3/4-inch thick each

3 rounded tablespoons prepared grain mustard
2 tablespoons white wine vinegar, 2 splashes
1 tablespoon honey, a good drizzle
1/4 cup mint leaves, a couple of handfuls of sprigs, reserve 4 leaves for garnish
4 leaves radicchio lettuce

  • Preheat broiler to high. Place garlic in a small saucepan and add 2/3 cup oil, to cover. Heat oil and garlic over low heat for 5 minutes. Remove oil from heat. Arrange lamb chops on broiler pan. Drizzle 3 teaspoonfuls of the garlic oil over the lamb and spread the oil over the chops with a brush to coat evenly. Season chops with salt and pepper, to taste. Set aside.
  • To a food processor or blender, add mustard, vinegar, honey. Turn processor or blender on and stream in remaining garlic and oil. Turn the processor or blender off and add mint to the container. Pulse and grind the dipping sauce to incorporate the leaves.
  • Broil chops 3 minutes on each side, then let them rest up to 10 minutes for the juices to distribute. The lamb will be cooked to medium. Serve 3 chops per person with dipping sauce portioned in radicchio leaves along side the chops. Garnish with sprigs of mint. 3 egg yolks, at room temperature

  • Brush the chops on both sides with a little oil and season with black pepper.

3 teaspoons extra-virgin olive oil
1 teaspoon sugar
2/3 cup chopped mint
Kosher salt and ground pepper
8 lamb chops (each 3 ounces, 3/4-inch thick), frenched

Steps:

  • In a small bowl, whisk together the vinegar, 2 teaspoons of the oil, and the sugar. Add mint and stir to combine. Season with 1/2 teaspoon salt and pepper to taste and set aside.
  • Heat a skillet over medium-high heat, and add the remaining olive oil.
  • Season lamb with salt and pepper. Working in batches, cook chops in skillet until medium rare, about 2 minutes per side. Transfer to a cutting board and tent with foil. Let rest 5 minutes.
  • Top with the mint mixture and serve immediately.
