GROUND TURKEY AND SPINACH CASSEROLE

- Preheat the oven to 350 degrees F. Grease a 10x12 baking dish. Heat the oil in a large skillet over medium-high heat. Add the turkey and onion and cook, stirring frequently, until the turkey is cooked. Stir the cream of chicken soup into the skillet and bring to a simmer. Transfer the turkey mixture to the baking dish. Drain as much liquid as possible from the thawed spinach and then place the spinach in a bowl. Add the salt, pepper, and eggs. Mix well. Spread the spinach mixture over the top of the turkey layer in the baking dish. Sprinkle it with the Mozzarella cheese. Place the baking dish in the oven and bake at 350 degrees F for 30-40 minutes or until the center is bubbly and the cheese is melted and browned. Serve hot.

- Prepare wild rice according to package instructions. Set aside.
- Preheat oven to 375°F
- In large pot over medium/high heat, brown turkey.
- Reduce heat to medium. Sprinkle in the flour and immediately stir to coat. Cook while stirring for 30 seconds.
- Add milk, Italian season, garlic powder, onion powder, salt, pepper and spinach.
- Stir and cook until sauce begins to thicken and spinach wilts. Add chopped artichokes.
- Cook and stir 1-2 more minutes or until mixture is bubbling.
- Stir in rice. Add additional salt/pepper to taste if needed.
- Remove mixture from heat. Transfer to a 2qt casserole dish. Top with shredded cheese and bake for 15 minutes.
- Broil on high for 1-2 minutes to brown top.
- Let cool for 5 minutes before serving.

- Combine rice, turkey, mushrooms, carrot, broccoli and 1/2 cup swiss cheese in a 2-quart baking dish.
- Combine half and half, sherry and pepper.
- Fold into turkey mixture.
- Cover with remaining swiss cheese.
- Sprinkle with parmesan cheese.
- Bake for 30 to 40 minutes or until hot and bubbly.
