For the Roasted Pumpkins and Squash:
4 small sugar pumpkins (1 1/2 to 2 pounds each; 675 to 900g)
1 large skin-on kabocha squash (about 2 pounds; 900g), halved and seeded
Extra-virgin olive oil, for drizzling
Kosher salt and freshly ground black pepper
For the Mushroom and Kale Filling:
2 tablespoons (30ml) extra-virgin olive oil
1 pound (450g) shiitake mushrooms (or a mix of mushrooms, such as oyster, chanterelles, and beech), stemmed, cleaned, and thinly sliced (see note)
Kosher salt and freshly ground black pepper
8 ounces (225g) lacinato kale (a.k.a. dinosaur, Tuscan, or black kale), tough stems removed, leaves cut into 1-inch pieces
4 tablespoons (60g) unsalted butter, cut into 4 pieces
2 medium shallots, finely minced (about 1/2 cup; 80g)
1 medium garlic clove, minced
2 tablespoons chopped fresh thyme leaves
1/4 cup (60ml) sherry
1 tablespoon (15ml) sherry vinegar
For the Spiced Cream:
2 cups (475ml) heavy cream
1 cup (240ml) whole milk
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Pinch ground cloves
Kosher salt and freshly ground black pepper
For the Glaze (optional):
2 tablespoons (40g) red miso paste
2 tablespoons (30ml) honey
1 tablespoon (15ml) water
To Finish:
10 ounces (285g) high-quality rustic bread, cut into 3/4-inch dice and toasted until dry
3/4 cup (120g) pepitas (shelled pumpkin seeds), toasted
3/4 cup (90g) pecans, toasted and roughly chopped
8 ounces (225g) shredded Gruyère cheese

Steps:

  • Roast the Pumpkins and Squash: Adjust oven rack to center position and preheat to 350°F (180°C). Line a rimmed baking sheet with parchment paper. Working with one pumpkin at a time, use a sharp paring knife to cut the top of the pumpkin off in one piece (as when making a jack-o'-lantern). Carefully run knife along the cavity of the pumpkin to loosen seeds and stringy pulp, then use a spoon to scoop them out and scrape the cavity clean. Using the paring knife, scrape seeds and pulp from the tops as well. Discard seeds and pulp or reserve for another use (try roasting the seeds with one of our seasoning combinations for a snack). Repeat with remaining pumpkins.
  • Make the Glaze (Optional): Whisk ingredients together in a small bowl and set aside.

1 cup uncooked brown rice
2 teaspoons chicken bouillon granules
1/2 teaspoon curry powder
1 pound bulk Italian sausage
4 cups sliced fresh mushrooms

5 tablespoons dried currants
1/4 cup chicken broth
1 teaspoon poultry seasoning

Steps:

  • In a large saucepan, bring the water, rice, bouillon and curry powder to a boil. Reduce heat; cover and simmer 45-50 minutes or until tender. , Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. In the same skillet, saute the mushrooms, onion and shallots 3-5 minutes or until vegetables are tender. Add garlic; cook 1 minute longer. , Reduce heat; add the currants, broth, poultry seasoning, sage and marjoram. Return sausage to the pan. Cook and stir 5-7 minutes or until liquid is absorbed. Remove from the heat; stir in rice., Wash pumpkins; cut a 3-in. circle around each stem. Remove tops and set aside. Remove and discard loose fibers; save seeds for another use. Prick inside each pumpkin with a fork; sprinkle with salt and garlic powder. Stuff with sausage mixture; replace tops. , Place in a 13x9-in. baking dish; add 1/2 in. water. Bake, uncovered, at 350° for 30 minutes. Cover loosely with foil; bake 45-50 minutes longer or until tender. Cut each pumpkin into 4 wedges to serve.

Throwing a vegan dinner party in the autumn or winter months? Bake a pumpkin with a gorgeous stuffing of rice, fennel, apple, pomegranate seeds and pecans

1 medium-sized pumpkin or round squash (about 1kg)
4 tbsp olive oil
100g wild rice
1 large fennel bulb
1 Bramley apple
1 lemon, zested and juiced
1 tbsp fennel seeds
½ tsp chilli flakes
2 garlic cloves, crushed
30g pecans, toasted and roughly chopped
1 large pack parsley, roughly chopped
3 tbsp tahini
pomegranate seeds, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the top off the pumpkin or squash and use a metal spoon to scoop out the seeds. Get rid of any pithy bits but keep the seeds for another time (see our pumpkin seed recipe ideas). Put the pumpkin on a baking tray, rub with 2 tbsp of the oil inside and out, and season well. Roast in the centre of the oven for 45 mins or until tender, with the 'lid' on the side.
  • Meanwhile, rinse the wild rice well and cook following pack instructions, then spread out on a baking tray to cool. Thinly slice the fennel bulb and apple, then squeeze over ½ the lemon juice to stop them discolouring.
  • Heat the remaining 2 tbsp oil in a frying pan. Fry the fennel seeds and chilli flakes, then, once the seeds begin to pop, stir in ½ the garlic and the fennel. Cook for 5 mins until softened, then mix through the apple, pecans and lemon zest. Remove from the heat. Add the mixture to the the cooked rice, then stir in the chopped parsley and taste for seasoning.
  • Pack the mixture into the cooked pumpkin and return to the oven for 10-15 mins until everything is piping hot. Meanwhile, whisk the remaining lemon juice with the tahini, the rest of the garlic and enough water to make a dressing. Serve the pumpkin in the middle of the table, topped with pomegranate seeds and the dressing.

1 ounce dried porcini mushrooms
1 3/4 lbs egg bread, crust trimmed and cubed
6 tablespoons unsalted butter
4 cups leeks, coarsely chopped
1 cup shallot, chopped
1 1/4 lbs cremini mushrooms, sliced
1/2 lb fresh shiitake mushroom, sliced
2 cups celery, chopped
1 cup fresh parsley, chopped
1 cup toasted hazelnuts, chopped
3 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
2 eggs, beaten
3/4 cup chicken stock
salt, to taste
ground black pepper, to taste
1 cup dried porcini mushrooms

Steps:

  • Combine the 2 cups hot water and the porcini mushrooms, let stand until the mushrooms are soft. About 30 minutes. Drain, reserving soaking liquid. Squeeze porcini dry and chop coarsely.
  • Preheat oven to 325*. Divide cubed bread between two baking sheets. Bake until beginning to brown. About 15 minutes. Cool then transfer to a very large bowl.
  • Melt the butter in a heavy Dutch oven over medium-high heat. Add the leeks, shallots, crimini or button and shiitake mushrooms. Saute until golden and tender, about 15 minutes. Mix in the celery and porcini mushrooms and saute for another 5 minutes. Transfer mixture to the bowl with the bread crumbs. Mix in the parsley, hazelnuts, thyme and sage. Season with salt and pepper and stir in the beaten eggs.
  • To bake the stuffing in a turkey: Fill the main cavity with the stuffing. Combine the broth and 1/2 cup of the reserved porcini soaking liquid in stuffing to moisten. Spoon remaining stuffing into a buttered baking dish. Cover with buttered foil. Bake stuffing in dish alongside turkey until heated through, about 30 minutes. Uncover and bake until top is crisp, about 15 minutes.
  • To bake all stuffing in pan: Preheat oven to 325*. Butter 15x10x2-inch baking dish. Mix 3/4 cup reserved porcini soaking liquid and 3/4 cup broth into stuffing. Transfer stuffing to prepared dish. Cover with buttered foil and bake until heated through, about 1 hour. Uncover and bake unil top is crisp, about 15 minutes.

3 tablespoons butter
1 1/2 cups diced sweet onions
1 1/2 cups diced celery
1/4 cup finely chopped fresh thyme leaves
1/4 cup finely chopped sage leaves
Salt and cracked black pepper
2 1/2 cups stale cornbread
1 egg, beaten
1/4 cup chicken stock
Parsley sprigs, for garnish

Steps:

  • Preheat the oven to 425 degrees F
  • Cut pumpkin in half, and then cut each half into several pieces. Place the pumpkin on a baking sheet and roast until tender, about 30 minutes. Let cool, peel away skin, and dice. Lower oven temperature to 350 degrees F.
  • In a large skillet, melt 2 tablespoons butter over medium heat. Add onion, celery, thyme, and sage, and saute for 5 minutes or until tender. Season, to taste, with salt and cracked black pepper.
  • Meanwhile, crumble the stale cornbread into a large bowl. Add sauteed vegetables to the corn bread crumbs. Stir in remaining 1 tablespoon butter, beaten egg, and roasted pumpkin and mix well. Then add the chicken stock and mix well.
  • Transfer stuffing into a medium-sized casserole dish. Bake for 45 minutes.
  • To serve, cut stuffing into squares and garnish with a couple sprigs of parsley.

2 cups warm water
1 ounce dried funghi porcini
1 loaf challah egg bread, crusts trimmed, cubed 1-inch pieces, about 11/2 pounds total weight, before trimming (about 4 quarts bread cubes)
6 tablespoons unsalted butter
4 large leeks, white and pale green only, chopped, washed, dried
6 shallots, chopped (1-cup)
1 lb button mushroom, sliced
12 ounces fresh shiitake mushrooms, stems discarded, caps sliced
2 cups chopped celery
1 cup chopped parsley
salt and pepper
1 cup hazelnuts, toasted, skinned, coarsely chopped
3 tablespoons chopped thyme leaves or 1 tablespoon dried thyme leaves
2 tablespoons chopped fresh sage or 2 teaspoons crumbled dried sage
2 large eggs, lightly beaten in a bowl
3/4 cup low sodium chicken broth

Steps:

  • Pour the water over the porcini, stir, and set aside for at least 30 minutes. Retrieve the mushrooms with a slotted spoon onto a double layer of paper towels. Dry lightly, then coarsely chop. Strain porcini liquid, through a fine sieve into a cup or bowl, leaving behind any sediment that may have accumulated.
  • Place the bread cubes onto two rimmed sheets and bake at 325 or 350 for 10-15 minutes, or until dried lightly. Remove and place in a bowl or cool on sheets.
  • Put the butter, leeks, shallots, button mushrooms, and shiitake mushrooms into a heavy sauté pan, 12-inch skillet, or oven casserole, and turn the heat to medium-high. Cook, stirring often, for about 10-12 minutes, or until golden and softened. Add the celery, porcini, 1-cup of the cleared soaking liquid, and salt and pepper to taste. Reduce fully. Sauté a few minutes more, over lower heat. Stir in parsley, hazelnuts, and herbs. Transfer to bowl with bread. Stir to combine. Taste for salt and pepper. Stir in the eggs.
  • To do the stuffing in a turkey, use it just as it is. The remainder will need to be moistened with a mix of chicken stock and reserved mushroom liquid. Moisten lightly, and put into a greased casserole dish of suitable size. Cover with foil and bake for about 30 minutes, alongside the turkey, uncover to bake 10-20 minutes more, to crisp.
  • To do entirely in a dish, combine stock and liquid, use to moisten stuffing cubes, not allowing it to become to soaked, not all of the liquid will be used. Transfer to a greased 4-quart dish, cover with greased foil and bake slow, at 325 for an hour, uncover and bake 10-15 minutes more.

6 c pumpkin wheat bread, will submit additional recipe
1 c butter, unsalted
2 c red onion, diced
2 c wild mushrooms, mixed variety, sliced
2 Tbsp rosemary sprigs, leaves, chopped
2 Tbsp tarragon, chopped
2 Tbsp chives, chopped
2 Tbsp parsley, chopped
2 tsp salt
1 tsp black pepper, freshly ground
6 Tbsp chicken stock

Steps:

  • 1. Cut the pumpkin bread into 1/2 to 3/4 inch cubes. Dry the cubes overnight or, lightly toast them in a slow oven for one hour in a single layer on a cookie sheet. Place bread cubes into large bowl, set aside.
  • 2. Butter a 2 quart casserole dish and set aside.
  • 3. Melt butter in large skillet. Add onion and sauté until slot and translucent, about 8 minutes. Add mushrooms and sauté for about 6 minutes.
  • 4. Add the contents of the skillet into the bread cubes, toss lightly. Add stock and herbs, toss lightly until everything is well distributed. If mixture is too dry, add 2 additional tablespoons chicken stock.
  • 5. Bake uncovered at 350 degrees F. for 40 minutes. Serve immediately.

1 (3-pound) pumpkin
Coarse salt and freshly ground pepper
1/4 pound stale bread, thinly sliced and cut into 1/2-inch cubes
1/4 pound Gruyere, Emmenthal, or cheddar cheese (or a mix of all three), cut into 1/2-inch cubes
2 to 3 cloves garlic, split, germ removed, and coarsely chopped
4 slices bacon, cooked until crisp, drained, and chopped
1/4 cup chopped fresh chives or sliced scallions
1 tablespoon minced fresh thyme
1/2 cup heavy cream
Pinch of freshly grated nutmeg

Steps:

  • Preheat oven to 350 degrees with a rack set in the center of the oven. Line a baking sheet with a nonstick baking mat or use a Dutch oven that is slightly larger in diameter than your pumpkin (in which case, you will need to serve your pumpkin from the Dutch oven, as it may stick, but it will keep its shape better this way).
  • Using a sharp, sturdy knife, cut off top of pumpkin, working around the top with the knife inserted at a 45-degree angle to cut off enough to make it easy to work inside the pumpkin; reserve top. Remove seeds and strings from cap and pumpkin. Season inside of pumpkin generously with salt and pepper. Place on prepared baking sheet or in Dutch oven; set aside.
  • In a large bowl, toss together bread, cheese, garlic, bacon, chives, and thyme until well combined. Pack into pumpkin; it should be well filled but not overstuffed. You may need to add some bread and cheese or some of the filling may not be necessary to use. In a small bowl, stir cream and nutmeg to combine. Pour over filling; filling should be moist but not swimming in cream -- you may need to use more or less accordingly.
  • Place top on pumpkin and transfer to oven; cook until filling is bubbling and pumpkin flesh is tender, about 1 hour and 30 minutes. Remove top and continue baking until liquid is slightly evaporated and top of filling is browned, 20 to 30 minutes more.
  • Carefully transfer pumpkin to a serving platter (or serve in Dutch oven, if using) and serve.

  • Preheat oven to 350°. Brush a shallow 3-qt. baking dish and a sheet of foil with oil. Place bread in a very large bowl.
  • Toast seeds on a rimmed baking sheet, tossing once, until golden brown, 8–10 minutes. Let cool; add to bowl with bread.
  • Heat 2 Tbsp. oil in a large skillet over medium-high. Add half of mushrooms, season with salt and pepper, and cook, tossing occasionally, until softened, 6–8 minutes. Transfer to bowl. Repeat with 2 Tbsp. oil and remaining mushrooms.
  • Heat ¼ cup oil in skillet. Add celery and shallots, season with salt and pepper, and cook, stirring often, until shallots are golden brown and soft, 8–10 minutes. Add kale, sage, and rosemary and cook, tossing often, until kale is wilted, about 2 minutes. Transfer to bowl.
