BEST EVER BREAKFAST COOKIES
These Breakfast Cookies are a nutritional powerhouse, perfect to jump-start your day! Packed with fiber and protein, and any dried fruits, nuts, or seeds that you want.

Steps:
- Line a baking sheet with parchment paper and preheat your oven to 350 degrees F.
- In a large bowl, mix together the mashed banana, the egg, maple syrup (1/4 cup), salt (1/2 teaspoon), cinnamon (1/2 teaspoon), and peanut butter (1/4 cup) until very well blended, using an electric mixer or by vigorously whisking.
- Add the whole wheat flour (1/4 cup) and stir to combine.
- Add the oats (1 cup), nuts/seeds (3/4 cup), and dried fruit (3/4 cup). Stir together.
- Using a large cookie scoop (or 1/4 cup measuring cup), scoop out the mixture onto the prepared baking sheet. Press down on the top of the scoops to flatten them out, as they will not spread out during baking. I pressed the sides in as well, almost like I was forming a burger patty.
- Bake for 20 minutes at 350 degrees, or until slightly golden brown on the edges.

HEARTY BREAKFAST BAKE
Steps:
- Heat oven to 400F. Spray 13x9-inch baking dish with cooking spray or grease with shortening.
- Cook sausage in 10-inch skillet over medium-high heat, stirring frequently, until no longer pink; drain. Layer sausage, onions, potatoes and cheese in baking dish. Stir remaining ingredients in large bowl with fork or wire whisk until blended. Pour over ingredients in baking dish.
- Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
HEARTY BREAKFAST COOKIES
These cookies are a delicious and hearty alternative to doughnuts or pastries. Also great to pack in lunches and on trips. Try one with your morning coffee or tea. For a slightly richer treat, use buttermilk in place of the water. Substitute dates for the raisins, if you prefer.

- Preheat oven to 350 degrees F (175 degrees C). Grease two baking sheets or line them with parchment paper.
- In a large bowl, using an electric mixer, beat together butter, peanut butter, brown sugar, and vanilla until creamy. Beat in eggs and water.
- Mix together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix into peanut butter mixture. Stir in raisins or dates (see Cook's Note). Drop by ice cream scoopfuls 2 1/2 inches apart on prepared baking sheets. Flatten slightly.
- Bake in preheated oven for 18 to 20 minutes. Cool on baking sheet for 2 minutes, then transfer to cooling racks. Store in an airtight container.

HEALTHY BREAKFAST COOKIES
This is an easy, and incredibly nutritious recipe that you can quickly throw together the night before to have for breakfast the following morning. My brother loves them and was my inspiration when I perfected this yummy cookie recipe. If there's a lot of old or stale cereal left in your pantry, this is an easy way to use it up! Again, I use a lot of applesauce in place of butter or oil. Enjoy!

Steps:
- Blend together margarine, applesauce and sugars.
- Add vanilla and eggs; beat well.
- Combine flour, baking soda/powder, cinnamon, and nutmeg.
- Combine flour mixture and wet mixture until just combined.
- Crush cereal well, then mix that into the rest of the dough. I usually put my cereal in one of those heavy duty gallon sized ziplock bags and stomp all over it!
- Bake at 375 for 10-12 minutes or until golden brown!

HEALTHY OATMEAL BREAKFAST COOKIES
This is a recipe I created out of a need for a healthy low fat, high fiber breakfast option. This "cookie" is not very sweet. You can add more sugar if desired. Makes a great breakfast with a piece of fruit.

Steps:
- Preheat oven to 400.
- In a bowl, combine oats and yogurt and set aside.
- In a large bowl beat eggs, sugar, honey and applesauce.
- Add flours, wheat bran, baking powder and baking soda. Mix until combined.
- Add oatmeal and yogurt mixture and beat gently.
- Fold in carrots, raisins and pineapple.
- On a parchment paper lined cookie sheet, scoop 1/4 cup of batter and flatten.
- Bake at 400 for 25-30 mins until lightly browned.
- Cool on wire rack.
CHUNKY BREAKFAST COOKIES
Steps:
- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and egg yolk. In another bowl, mix oats, flours, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Shape 1/4 cupfuls of dough into balls; flatten to 3/4-in. thickness. Place 2 in. apart on ungreased baking sheets., Bake 13-15 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool. Serve warm or at room temperature. To reheat, microwave each cookie on high for 15-20 seconds or just until warmed. Freeze option: Freeze unbaked cookies in a freezer container, separating layers with waxed paper. To use, place dough portions 2 in. apart on ungreased baking sheets; let stand at room temperature 30 minutes before baking. Bake as directed, increasing time by 1-2 minutes.

- Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
- Combine all of the ingredients into a large bowl of a stand mixer (or use a hand mixer). Mix until all of the ingredients are combined. The dough is thick and heavy.
- Using a 1/4 cup measuring cup, portion 1/4 cup mounds of cookie dough onto prepared cookie sheet. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
