BROCCOLI RABE PASTA
This Broccoli Rabe Orecchiette Pasta recipe is a classic example of how simple ingredients come together perfectly to create a great Italian pasta dish.

Steps:
- Over high heat, bring a large pot of salted water to a rolling boil.
- Add the broccoli rabe and cook until tender. This should take 4-5 minutes.
- Strain and gently squeeze out excess moisture. Coarsely chop and set aside.
- Bring a large pot of salted water to a rolling boil. Please note that you can use the same water to cook your pasta. My preference is to start with a fresh pot of water.
- Add the orecchiette slowly and stir. Cook according to package directions or until almost al dente.
- While the pasta is cooking, heat the oil in a large frying pan over medium-low heat.
- Add the chopped garlic and 2 anchovy fillets. Do not allow the garlic to brown.
- Mash the anchovy with the back of a spoon for about 1-2 minutes.
- If using, add red pepper flakes and stir for 30-60 seconds.
- Carefully, add the cooked broccoli rabe and stir to combine. Adjust seasonings and heat through.
- Add 1 ladle of pasta water and stir occasionally for 4-5 minutes. Add more water if the mixture dries out.
- When pasta is almost al dente, drain, reserving 2-3 ladles of the water.
- Add pasta to the pan along with some pasta water and continue to cook. Taste for doneness.
- Turn off heat. Add the grated cheeses and toss everything together.
- Continue to shake the pan back and forth for a few minutes, until a sauce forms.
- Plate and garnish with more grated cheese, if desired.
- Serve immediately.

- Place sausage in a large skillet over medium-high heat. Cook, stirring, until browned, 5 to 8 minutes. Using a slotted spoon, transfer sausage to a bowl; set sausage and skillet aside.
- Bring 4 quarts water to a boil in a large pot. Add salt, return to a boil and add broccoli rabe. Cook 1 minute and drain, reserving some of the cooking liquid; set aside.
- Bring a second large pot of water to a boil. Add salt, return to a boil and add pasta. Cook until al dente, 5 to 8 minutes; drain.
- Place reserved skillet over medium-high heat and add oil, broccoli rabe, garlic, and red pepper flakes. Cook, stirring, about 30 seconds. Return sausage to the skillet along with the orecchiette. Stir to combine, adding reserved cooking liquid if pasta seems too dry; sprinkle with cheese and serve immediately.
ORECCHIETTE WITH BROCCOLI RABE

- Put a large pot of water to boil.
- In the meantime, wash broccoli rabe under cold running water.
- Remove all yellow and dull leaves. Trim off the bottoms of the stems to remove tough and fibrous parts.
- If some of the stems are still thick don't cut them off further but split the end with a knife until the stems thins out a bit. This will ensure your greens are cooked evenly. Chop coarsely.
- Once water is boiling add salt and broccoli rabe. Reduce the heat and cook for about 5 minutes.
- Past that time add orecchiette pasta and cook until pasta is "al dente". Verify cooking time on the directions on the package.
- Dry pasta cooks longer!
- While pasta and broccoli rabe are cooking prepare the sauce.
- In a large skillet pan add a generous splash of extra virgin olive oil, pinch of peperoncino (or fresh hot pepper), garlic cloves crushed with a flat knife and anchovy fillets.
- Cook on medium low heat stirring continuously. The sauce is ready once garlic becomes fragrant and anchovy fillets are dissolved. Remove garlic (optional). Turn off the heat.
- Drain pasta with broccoli rabe.
- Add it to a pan with the sauce. Turn on the heat and toss everything for a couple of minutes until all the flavors combine.
ORECCHIETTE WITH BROCCOLI RABE AND SAUSAGE
Steps:
- Heat oil in a large skillet over medium heat. Add sausage, and cook, turning occasionally until browned, about 10 minutes. Remove sausage to a plate and reserve pan and sausage drippings.
- Meanwhile, bring a large pot of cold water to a boil over high heat. Add a large pinch of salt and broccoli rabe and cook, uncovered, until broccoli rabe is bright green and tender but still slightly crisp, about 5 minutes. Immediately transfer broccoli rabe using tongs to a colander (reserve boiling water) and rinse under cold running water. Chop into bite-sized pieces and set aside.
- Add pasta to reserved boiling water and cook, stirring occasionally, until al dente (tender but not mushy), about 12 minutes. Meanwhile, heat reserved pan and drippings over medium heat. Add garlic and cook, stirring frequently, until it is golden brown, about 5 minutes. Add broccoli rabe, pepper flakes, and 1 1/2 teaspoons of salt; increase heat to medium-high, and cook, continually stirring, until broccoli rabe is hot and tender, about 5 minutes. Slice sausage into 1/4-inch thick coins and add to pan and mix well cook until sausage is warmed through, about 5 more minutes.
- Drain pasta in a colander in sink, reserving 1/4 cup of cooking liquid. Toss pasta and liquid with broccoli rabe mixture. Transfer pasta to a serving dish or individual bowls, garnish with Parmesean and serve.
EASY ORECCHIETTE WITH BROCCOLI RABE

- Bring a large pot of water to a boil; salt generously. Add broccoli rabe. Cook until leaves are wilted, about 1 minute. Using a slotted spoon, transfer broccoli rabe to colander; drain well.
- Return water to a boil, and add pasta; cook until al dente, according to package instructions. Drain, reserving 1/2 cup cooking liquid.

- Bring a large pot of water to a boil with the salt. Add the broccoli rabe and cook for 6 to 8 minutes, or until soft. Remove with a slotted spoon and set aside.
- Return the same pot of water to a boil, add the orecchiette and cook for 10 minutes, or until slightly undercooked. Drain, reserving the cooking water.
- Split the sausages lengthwise down the middle and remove from their casings.
- Heat the olive oil in a high-rimmed skillet over medium heat. Add the sausage meat, breaking it up as finely as possible. Add the broccoli and continue cooking and stirring until the broccoli breaks down to a saucelike texture.
- Add the chicken stock and orecchiette. Finish cooking the pasta in the sauce, being careful it doesn't stick. You may have to keep adding a little pasta water, additional stock or tap water until the pasta is soft yet chewy (al dente), making sure not to over-cook it.
- Finish the pasta by folding in the cheese, a few squeezes of lemon juice and the optional breadcrumbs.

- Bring 4 to 6 quarts of water to a boil in a large pot.
- Cut 1 to 1 1/2 inches off of the bottom of the broccoli rabe stalks; cut into 1 1/2-inch sections.
- Place trimmed broccoli rabe and orecchiette into the boiling water and boil until pasta is tender, 12 to 14 minutes.
- Meanwhile, heat 3 tablespoons oil in a large pan over medium heat. Add sausage and cook for 6 minutes; stir in garlic and cook until sausage is browned and crumbly, 2 to 3 minutes more.
- Heat a medium-sized pan over medium heat. Add enough oil to coat the bottom of the pan. Stir in bread crumbs. Cook until browned and crunchy, about 5 minutes.

- Place a pot of water on the stove to bring to a boil for pasta. Cover pot to bring water to a boil. Salt the water to season it and add half a pound of "little ears" pasta. Cook to al dente, about 7 minutes.
- Trim ends off broccoli rabe, coarsely chop it and add it to a deep skillet. Add 2 or 3 cups of water to the pan. Cover the pan and bring the broccoli rabe to a boil. When the rabe wilts down into the pan, salt it. Simmer the rabe for about 7 minutes until tender and no longer bitter. The color should remain deep green. Drain the rabe and reserve. Return the deep skillet to the stove and place it over medium heat. - Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
- Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
- Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
- Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.

- Bring a large pot of salted water to boil for pasta. Plop the orecchiette into the boiling water, and cook until al dente.
- Cook the garlic in 3 tablespoons olive oil in a large skillet over medium heat. Once the garlic is sizzling, crumble in the sausage, and cook, breaking up the clumps with the back of a wooden spoon, until browned, about 3 minutes. Season with the peperoncino. Add the broccoli rabe, and season with the salt and the remaining 2 tablespoons olive oil. Toss to coat the broccoli with the oil. Pour in 1 cup pasta water, then cover and cook until broccoli rabe is tender, about 15 minutes.
- When the broccoli rabe is tender, uncover, add 1 more cup pasta water, and bring to a boil. When the orecchiette is al dente, scoop the pasta from the water and add to the sauce. Toss to coat the pasta with the sauce. Remove from heat, sprinkle with the Pecorino Romano, and toss. Serve immediately.

- In a bowl, add the durum wheat semolina flour. Then add the hot water and start incorporating the two, first with a fork, then with your hands.
