CHIPOTLE MEATBALL BURRITOS

8 to 10 beef meatballs, quartered
1/2 cup chipotle salsa, plus more for serving
1 cup refried beans
1 1/3 cups frozen brown rice
4 10-inch flour tortillas
1 1/2 cups shredded colby jack cheese (about 6 ounces)
1/2 cup pico de gallo or salsa fresca
1/2 avocado, sliced
1 cup shredded iceberg lettuce
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil

Steps:

  • Combine the meatballs, chipotle salsa and 1/4 cup water in a medium saucepan and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the sauce thickens, about 5 minutes.
  • Meanwhile, warm the refried beans and rice separately as the labels direct. Spread the beans in a rectangle in the center of each tortilla and sprinkle with about half of the cheese. Divide the rice, meatball mixture, pico de gallo, avocado and lettuce among the tortillas and season with salt and pepper. Top with the remaining cheese. Fold in the sides of the tortillas, then roll up.
  • Brush the burritos all over with the vegetable oil and tightly wrap each in foil. Working in two batches, warm the burritos in a large skillet over medium heat until browned and crisp, 2 to 4 minutes per side. Serve with more chipotle salsa.

1/2 pound ground pork
1/2 pound sweet Italian sausage, casings removed
1 large egg, lightly beaten
3 scallions, finely chopped
Kosher salt and freshly ground pepper
1 1/2 cups finely crushed gingersnaps (about 20 cookies)
2 tablespoons extra-virgin olive oil
1/2 large sweet onion, chopped
3 cloves garlic, chopped
1 poblano chile pepper, seeded and chopped
2 tablespoons chili powder
1 14-ounce can fire-roasted diced tomatoes
1 tablespoon Worcestershire sauce
1 1/2 teaspoons packed light brown sugar
1 1/2 cups low-sodium chicken broth
1 tablespoon chipotle hot sauce

Steps:

  • Mix the pork, sausage, egg, scallions, 1 teaspoon salt, 1/2 teaspoon pepper and about three-quarters of the crushed gingersnaps in a large bowl with a spoon or your hands until combined; refrigerate 1 hour. Dampen your hands and form the mixture into about 20 meatballs, 3/4 inch each.
  • Preheat the oven to 375 degrees F. Add the olive oil to a large cast-iron skillet or Dutch oven and swirl to coat. Add the meatballs in a single layer and top with the onion, garlic and poblano. Sprinkle with the chili powder. Bake until the meatballs are firm and the vegetables start softening, about 8 minutes.
  • Add the tomatoes to the skillet along with the Worcestershire sauce, brown sugar, the remaining gingersnaps, the chicken broth, hot sauce and 1 cup water. Stir gently, carefully loosening the meatballs from the pan and mixing them into the sauce. Return to the oven and bake until the meatballs are tender and the sauce thickens, about 40 more minutes.

1 large egg
1 1/4 teaspoons cumin

1/4 cup orange juice

Steps:

  • Mix the beef, crushed tortilla chips, 1/3 Celsius cilantro, egg and spices together in a bowl.
  • Form meat mixture into 30 (1 T.) balls.
  • Heat skillet over medium heat (add small amount of oil if you're not using a non-stick skillet.).
  • Add meatballs to skillet and cook over medium-high heat 5-7 minutes, turning frequently until browned and cooked through.
  • Add sauce, zest, juice and remaining cilantro to skillet.
  • Cook, tossing, over low heat until meatballs are coated.
  • Enjoy!

3 lbs ground beef
1 canned chipotle chile (preferred LAMORENA brand in adobo sauce)
2 teaspoons adobo seasoning (preferred GOYA brand)
1/2 cup wheat flour
1 egg
1 cup tomato sauce
2 teaspoons oregano
2 teaspoons garlic paste
1/2 onion
2 teaspoons thyme
1 cup frying oil
3/4 cup whiskey

Steps:

  • Iin a large bowl add the ground beef, 3 or more chopped chipotle (add.
  • also some of its adobo sauce), oregano, garlic, adobo powder,egg, wheat flour and the whiskey; mix well.
  • Make medium size balls by using a ice scream scoop and then rolling with both your palms. While doing this put the oil in a deep frying pan and heat the oil before adding the meat ball. Add as many meat balls as fit in pan. Leave each side for about 5 to 7 minutes or medium brown.
  • While the meat ball is cooking start preparing the sauce in a deep pot add the tomato paste, some adobo powder, some adobo sauce from the chipotles, garlic paste, some oregano, a lil bit of whiskey, chopped onions, and thyme.
  • Once all the meatballs are done, put them on the side.
  • Turn on the heat. Once the sauce starts sizzling stir and then add a cup of water. Add the meatballs and let it boil until the sauce is thick to your preference.
  • Serve with white rice or white pasta.

1/3 cup whole milk
1/3 cup fine dry bread crumbs
6 bacon slices, chopped
1/2 cup finely chopped onion
1 tablespoon chopped garlic
1 tablespoon finely chopped seeded canned chipotles in adobo
1 teaspoon ground cumin
3/4 teaspoon dried oregano
2 tablespoons water
3/4 pound ground pork
1/2 pound ground veal
1 large egg, lightly beaten
1/4 cup chopped flat-leaf parsley
Equipment: about 16 (6-inch) wooden skewers, soaked in water
Garnish: lime wedges

Steps:

  • Stir together milk and bread crumbs in a large bowl.
  • Cook bacon in a 10-inch heavy skillet over medium heat, stirring occasionally, until crisp. Transfer with a slotted spoon to paper towels to drain.
  • Pour off all but 1 tablespoon fat from skillet, then cook onion, garlic, chipotles, cumin, and oregano in skillet, stirring, until onion is softened, about 3 minutes. Add water and cook, stirring and scraping up brown bits, until water has evaporated, about 1 minute. Stir into bread crumb mixture, then add ground meats, egg, parsley, bacon, and 1 teaspoon salt and mix well with your hands.
  • Preheat broiler.
  • Form scant tablespoons of meat mixture into balls and thread 3 balls 1/2 inch apart onto each skewer, arranging skewers on a lightly oiled broiler pan. Broil 3 to 4 inches from heat (do not turn) until browned and cooked through, 8 to 10 minutes.

½ cup bread crumbs
½ cup dried minced onion
2 tablespoons dried cilantro
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon salt
¼ teaspoon ground black pepper
11 ounces chipotle peppers in adobo sauce
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix beef, bread crumbs, dried onion, cilantro, onion powder, garlic powder, salt, and black pepper together in a bowl.
  • Finely chop chipotle peppers and add peppers, adobo sauce, and egg to meat mixture. Mix well. Roll into 1 1/2-inch meatballs.
  • Heat a skillet over high heat. Brown meatballs in the hot skillet, turning as needed, 3 to 5 minutes. Transfer to a rimmed baking sheet.

500g pork mince
2 large handfuls fresh breadcrumbs
1 egg
2 medium red onions , ¼ finely chopped, the rest sliced
small bunch coriander leaves and stems, finely chopped, plus extra leaves to serve
2 tbsp vegetable oil
2 garlic cloves , chopped
400ml passata
1 tbsp chipotle paste
potatoes or rice, to serve

Steps:

  • In a small bowl, mix together the pork, breadcrumbs, egg, finely chopped onions and the chopped coriander leaves. Season, mix well and shape into small meatballs. Over a medium heat, add 1 tbsp of the oil to a large frying pan and brown the meatballs on all sides, then remove from the pan and set aside.
  • Add the remaining oil, sliced onion, garlic, coriander stems and some salt. Cook for 5 mins, then add the passata and chipotle paste. Pour in 100ml water and stir well, then simmer for 10 mins before adding the meatballs and cooking for a further 5 mins. Serve with potatoes or rice and scatter with the extra coriander leaves.

1/4 cup milk
1 lb. extra-lean ground beef
1 lb. ground pork
1 egg
4 green onions, sliced
1 bottle (10 oz.) A.1. Spicy Chipotle Sauce
3 Tbsp. brown sugar

Steps:

  • Heat oven to 375°F.
  • Mix bread crumbs and milk in large bowl; let stand 5 min. Add all remaining ingredients except A.1. and sugar; mix just until blended. Shape into 75 (1-inch) balls.
  • Place on rimmed baking sheet sprayed with cooking spray.
  • Bake 20 min. or until done (160ºF). Meanwhile, mix A.1. and sugar until blended.

  • CROCK POT: For the crock pot, prepare sauce as above. Put meatballs (they can be frozen meatballs) into crock pot, pour sauce over and cook on low for 8 to 12 hours.

1 (2 to 3 pound) whole chicken
1 (12 fluid ounce) can beer
5 tablespoons poultry seasoning
4 dashes liquid smoke flavoring
4 bay leaves
1 long metal skewer

Steps:

  • Rinse and dry the chicken. Remove excess fat and leave skin on. Lift skin from breast and thigh areas, slide bay leaves under skin. Coat chicken with poultry seasoning.
  • Drink half the can of beer, pour liquid smoke into remaining beer. Raise tab on beer can until it is in the straight up position.
  • Insert beer can into chicken from the bottom until even with bottom of chicken. Insert skewer through the wing, ribs, tab on beer can, and out the opposite side. (this keeps the can from falling out the chicken).
  • Prepare grill: light the coals, and when they are ready, spread coals to form a ring around the outside edge of the grill.
  • Place chicken in center standing up on can to cook. Cover and cook for two hours.
  • Remove carefully from grill so as not to spill the contents of the can. Remove skewer and beer can, let chicken sit for fifteen minutes before cutting.

3 lbs plum tomatoes or 3 lbs roma tomatoes, coarsely chopped
1 medium white onion, coarsely chopped
2 large garlic cloves
2 teaspoons minced canned chipotle chiles
1/2 teaspoon ground cloves
2 tablespoons vegetable oil
1 lb ground beef
1 lb ground pork
1/2 cup fresh breadcrumb (made from crustless French bread)
1 large egg
1 1/2 teaspoons dried Mexican oregano
1 1/4 teaspoons salt
3/4 teaspoon fresh ground black pepper
3 tablespoons drained capers (optional)

Steps:

  • Puree first 5 ingredients in blender in batches until almost smooth. Heat oil in heavy large pot over medium-high heat. Add tomato mixture. Cover and boil 10 minutes to blend flavors and thicken slightly, stirring occasionally. Season sauce to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate.).
  • Combine ground beef and next 6 ingredients in large bowl. Add 1/2 cup cooled tomato sauce and stir until well mixed. Using hands, form 1 rounded tablespoonful meat mixture into ball. Optional: Insert 1/4 t. capers into center of meat; reshape meatball. Repeat with remaining meat mixture and capers.
  • Bring sauce to simmer over medium heat. Add meatballs to sauce. Cover and simmer until meatballs are cooked through, about 20 minutes.
