- Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with cooking spray; set aside.
- Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
- Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
- Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.
- Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, 75 to 90 minutes.
- Remove from oven, and cool slightly on a wire rack.
- Invert cake onto rack; turn cake right-side up to cool completely on rack, and serve drizzled with caramel sauce.

- Preheat oven to 350 Degrees. Grease a bundt pan with non-stick baking spray
- In a large mixing bowl, add the light brown sugar and granulated sugar along with oil, eggs, and vanilla extract. Use a hand-held or standing mixer and mix the ingredients until well blended.
- In a separate mixing bowl, add the baking powder, baking soda, salt, flour, pumpkin spice, and whisk together. Add the dry ingredients to the wet ingredients one cup at a time mixing each cup of dry ingredients well into the wet ingredients.
- Take the grated apples and fold them into the batter. Pour the batter into the greased bundt pan and spread the top evenly. Place the bundt cake into the oven and bake for 45-50 minutes or until a toothpick can be inserted and comes out clean. Once finished allow to cool for about 10 minutes and turn onto a cool rack.
- In a small saucepan, add the stick of butter and allow to melt on medium-high heat. The butter will begin to boil and as it does it will turn into a light brown/ amber color. Once this happens, remove from heat and strain into a bowl using a fine-mesh strainer. Place back into the refrigerator and allow it to become solid again.
- Once this has happened. Youll want it to sit at room temperature to soften slightly. In a medium mixing bowl, add the browned butter, powdered sugar, and milk and mix. Continue to add milk a teaspoon at a time to allow it to become thinner if you'll like. Once the cake has completely cooled, pour the icing over the cake and allow it to set and serve.
APPLE SPICE CAKE WITH CREAM CHEESE ICING
Steps:
- Preheat the oven to 350 degrees F.
- Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
- In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
- Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
- Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
- Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
- Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

- 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
- 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
- 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
- 4. Spread into cake pan evenly.
- 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
- 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
- 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
- 8. You could also add nuts to the cake or frosting! Enjoy!!!!

- Position rack in center of oven and preheat to 325F. Spray 12-cup Bundt pan with nonstick spray. Sift flour and next 6 ingredients into medium bowl. Drain grated apples in strainer. Using hands or kitchen towel, squeeze out excess liquid from apples. Measure 2 cups grated apples.

- Butter a 9" spring form pan.
- Place all cake ingredients into bowl of mixer.
- Beat on lowest speed until apples are in 1/4" chunks and their juice has thinned the batter slightly.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
- Place apples, water and 2 tablespoons of the sugar in a saucepan. Cook, covered, over medium heat until tender. Approximately 5 to 10 minutes. Remove apple mixture from heat and set aside.
- In a large bowl cream the butter with the remaining 2-1/2 cups white sugar. Beat in the eggs, then the apple mixture (including the liquid).

- Using long serrated knife, trim off rounded tops of cakes to make level; brush off any loose crumbs. Transfer 1 cake to platter, trimmed side up. Drop half of frosting (about 11/2 cups) by spoonfuls atop cake. Spread frosting evenly to edges of cake. Top with second cake, trimmed side down. Drop remaining frosting by spoonfuls onto top of cake, leaving sides of cake plain. Spread frosting to top edges of cake, swirling and creating peaks, if desired. Sprinkle with pecans.
