1 1/3 cups vegetable oil
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
3 large eggs
3 to 4 Granny Smith apples, cored and cut into 1/2-inch pieces (3 cups)
1 cup chopped assorted nuts, such as pecans and walnuts (optional)
1 teaspoon pure vanilla extract
Caramel Sauce
Nonstick cooking spray with flour

Steps:

  • Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with cooking spray; set aside.
  • Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
  • Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
  • Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.
  • Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, 75 to 90 minutes.
  • Remove from oven, and cool slightly on a wire rack.
  • Invert cake onto rack; turn cake right-side up to cool completely on rack, and serve drizzled with caramel sauce.

2 cups sugar
1/2 cup canola oil
2 large eggs, room temperature
2 teaspoons vanilla extract

2 teaspoons baking powder
1 teaspoon salt
1/2 cup buttermilk
1-1/2 cups chopped walnuts, toasted
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 cup confectioners' sugar
1 cup packed brown sugar
1-1/2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
1-1/2 cups chopped walnuts, toasted

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Place apples in a food processor; pulse until finely chopped. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, pie spice, baking powder and salt; gradually beat into sugar mixture alternately with buttermilk. Stir in apples and walnuts., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a large bowl, beat cream cheese, butter, sugars, vanilla and pie spice until smooth. Spread frosting between layers and over top and sides of cake. 1 c. light brown sugar, packed
1 c. vegetable oil
½ c. sugar
3 large eggs
2 tsp. Vanilla extract
2 tsp. Baking powder
½ tsp. Baking soda
2 tsp. Pumpkin Spice
1 tsp. Salt
3 c. flour
3 Granny Smith apples, grated
For Icing
1 stick butter
3 c. powdered sugar
3 tbsp. Milk
Pinch of salt

Steps:

  • Preheat oven to 350 Degrees. Grease a bundt pan with non-stick baking spray
  • In a large mixing bowl, add the light brown sugar and granulated sugar along with oil, eggs, and vanilla extract. Use a hand-held or standing mixer and mix the ingredients until well blended.
  • In a separate mixing bowl, add the baking powder, baking soda, salt, flour, pumpkin spice, and whisk together. Add the dry ingredients to the wet ingredients one cup at a time mixing each cup of dry ingredients well into the wet ingredients.
  • Take the grated apples and fold them into the batter. Pour the batter into the greased bundt pan and spread the top evenly. Place the bundt cake into the oven and bake for 45-50 minutes or until a toothpick can be inserted and comes out clean. Once finished allow to cool for about 10 minutes and turn onto a cool rack.
  • In a small saucepan, add the stick of butter and allow to melt on medium-high heat. The butter will begin to boil and as it does it will turn into a light brown/ amber color. Once this happens, remove from heat and strain into a bowl using a fine-mesh strainer. Place back into the refrigerator and allow it to become solid again.
  • Once this has happened. Youll want it to sit at room temperature to soften slightly. In a medium mixing bowl, add the browned butter, powdered sugar, and milk and mix. Continue to add milk a teaspoon at a time to allow it to become thinner if you'll like. Once the cake has completely cooled, pour the icing over the cake and allow it to set and serve.

3 Granny Smith apples, peeled and cored, cut into 1/2-inch dice and tossed with a little lemon juice
1/2 lemon, juiced
1 cup apple cider
1 3/4 cups all-purpose flour, plus extra for loaf pan
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar
3/4 cup sugar
Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins
Cream Cheese Icing, recipe follows
One 8-ounce package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
  • In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
  • Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
  • Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
  • Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

1 spice cake mix, i used duncan heinz
1 - 21 oz can apple pie filling - i chopped the slices up a bit
3 eggs
FROSTING
5 Tbsp unsalted butter
1/2 c packed brown sugar
1/4 tsp salt
3 Tbsp milk
1 1/2 c confectioners' sugar
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
  • 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
  • 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
  • 4. Spread into cake pan evenly.
  • 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
  • 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
  • 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
  • 8. You could also add nuts to the cake or frosting! Enjoy!!!!

Steps:

  • Preheat oven to 350°. Spray a 13×9-inch metal cake pan with cooking spray. Line pan with parchment paper, letting excess extend over sides of pan.
  • In a large bowl, beat granulated sugar, ½ cup brown sugar, oil, eggs, and 1 teaspoon vanilla with a mixer at medium speed until well combined, 1 to 2 minutes, stopping to scrape sides of bowl as needed.
  • In a medium bowl, whisk together flour, pie spice, baking soda, and ¾ teaspoon salt. With mixer on low speed, gradually add flour mixture to sugar mixture, beating just until combined and stopping to scrape sides of bowl as needed. (Batter will be quite thick.) Steps:

  • For cake:
  • Position rack in center of oven and preheat to 325F. Spray 12-cup Bundt pan with nonstick spray. Sift flour and next 6 ingredients into medium bowl. Drain grated apples in strainer. Using hands or kitchen towel, squeeze out excess liquid from apples. Measure 2 cups grated apples.
  • Using electric mixer, beat butter, both sugars, and lemon peel in large bowl until fluffy. Beat in eggs, 1 at a time. Mix in vanilla and lemon juice. Beat in flour mixture. Mix in grated apples. Transfer batter to prepared pan. Bake cake until tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 20 minutes.
  • Meanwhile, prepare glaze:
  • Stir all ingredients in small nonstick skillet over medium-high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium; whisk until glaze is smooth, about 1 minute. Remove from heat. Invert cake onto rack set over baking sheet. Using small skewer, pierce holes all over top of warm cake. Pour glaze over top, allowing it to be absorbed before adding more. Cool cake 30 minutes. Serve warm or at room temperature.

  • Beat on lowest speed until apples are in 1/4" chunks and their juice has thinned the batter slightly.
  • This takes about 3 minutes.
  • Pour batter into prepared pan and smooth the top.
  • Bake in the middle of the oven until a toothpick inserted in the centre comes out clean- about 50 minutes.
  • Let the cake cool slightly.
  • Unmold and poke the top of the cake all over with a meat fork.
  • Pour glaze over the warm cake, letting the excess run down the sides.
  • Cake can be decorated with more chopped walnuts or pecans.
  • To Prepare Glaze: Put all ingredients into small saucepan and bring to a simmer, stirring, over low heat.
  • Simmer until the sugar dissolves, about 1 minute.

1 cup water
2 tablespoons white sugar
1 ⅜ cups butter
2 ½ cups white sugar
4 eggs

2 cups whole wheat flour

½ teaspoon ground nutmeg

A delicious apple cake made from scratch. The icing on the cake (literally) is a rich blend of cream cheese, butter, vanilla, and brown sugar that perfectly complements the spices in the cake.

4 cups apples, peeled, seeded and chopped into small pieces
2 cups sugar
1/2 cup vegetable oil
2 eggs, lightly beaten
2 teaspoons vanilla extract
2 cups flour
1/2 cup milk
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon baking soda
1 cup roughly chopped pecans, walnuts or dried cranberries (reserve 1/4 the mixture)
Brown Sugar Cream Cheese Frosting
1 package (8 ounce size) regular or light cream cheese, at room temperature
1/4 cup butter
2 teaspoons vanilla extract
1 cup golden brown sugar

Steps:

  • Preheat oven to 350 degrees F. Grease and lightly flour one 13x9x2-inch-baking pan. Set aside. If you would like to make a layer cake, use two 8 or 9-inch round pans. In a large mixing bowl, combine apples and sugar. With a wooden spoon or rubber spatula, stir in oil, eggs, and vanilla. Combine all of the dry ingredients. Add flour mixture to apple mixture. Add milk and stir just until combined. Add nuts or cranberries. Pour batter into prepared baking pan. Bake for 30 to 40 minutes or until a toothpick comes out clean. Cool down for 15 minutes before removing from pan. Let cake completely cool before frosting. For Frosting: In a mixing bowl, using an electric mixer, beat cream cheese until smooth. Scrape bowl. Add butter and beat until mixture is very smooth and free from lumps. Add vanilla and brown sugar. Beat for five minutes until frosting is light and fluffy and the sugar has completely dissolved. Use the frosting to decorate the cake once it has cooled. Sprinkle the top of the cake with reserved nuts or cranberries for garnish. Refrigerate after frosting.

1 cup (2 sticks) unsalted butter, room temperature

2 tablespoons bourbon, apple brandy, or rum (optional)
1 1/2 cups unsweetened applesauce
2 medium Fuji or Gala apples (13 to 14 ounces total), peeled, halved, cored, cut into 1/3-inch cubes
1 1/2 cups finely chopped pecans (about 6 ounces)
Frosting:
1 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon vanilla extract
Pinch of salt
3 cups powdered sugar (measured, then sifted)
Coarsely chopped toasted pecans (for garnish)

2 9-inch-diameter cake pans with 2-inch-high sides

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch high sides. Line bottom of each pan with parchment paper round. Whisk first 7 ingredients in medium bowl. Using electric mixer, beat 1 cup butter in large bowl until fluffy. Add both sugars and beat until smooth. Add eggs 1 at a time, beating well after each addition. Beat in vanilla, then bourbon, if desired (mixture may look curdled). Add flour mixture to egg mixture in 3 additions alternately with applesauce in 2 additions, beating until blended after each addition. Stir in apples and pecans. Divide batter between cake pans; smooth tops.
  • Bake cakes until tester inserted into center of each comes out clean, about 50 minutes. Transfer cakes to racks and cool in pans 15 minutes. Cut around pan sides to loosen cakes. Invert cakes onto racks; peel off parchment paper. Place another rack atop 1 cake and invert again so that cake is rounded side up. Repeat with second cake. Cool completely. DO AHEAD: Can be made 1 day ahead. Wrap each cake in plastic and stoer at room temperature.
  • For frosting:
  • Using electric mixer, beat cream cheese and butter in large bowl until smooth. Beat in vanilla extract and pinch of salt. Gradually add powdered sugar, beating until frosting is smooth and creamy, about 2 minutes.
  • Using long serrated knife, trim off rounded tops of cakes to make level; brush off any loose crumbs. Transfer 1 cake to platter, trimmed side up. Drop half of frosting (about 11/2 cups) by spoonfuls atop cake. Spread frosting evenly to edges of cake. Top with second cake, trimmed side down. Drop remaining frosting by spoonfuls onto top of cake, leaving sides of cake plain. Spread frosting to top edges of cake, swirling and creating peaks, if desired. Sprinkle with pecans. Let cake stand at room temperature 1 hour to allow frosting to set slightly. DO AHEAD: Can be made 1 day ahead. Cover with cake dome and refrigerate. Let cake stand at room temperature at least 2 hours before serving.

Steps:

  • Preheat oven to 350 degrees. Grease and lightly flour a 9-inch round or square cake pan.
  • In a medium bowl whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, ginger, allspice, and cloves.
  • In a second, larger bowl combine brown sugar, oil, apple sauce, grated apple, eggs, and vanilla and mix thoroughly.
  • Mix dry ingredients into wet ingredients until incorporated.
  • Pour into prepared pan. Bake in preheated oven for 20-25 minutes until a toothpick inserted in the center comes out clean.
  • Allow cake to cool at least 20 minutes before gently turning out onto a plate to cool completely. Once completely cooled, frost, sprinkle with cinnamon-sugar if desired. Cut, and serve or cover and store at room temperature up to three days or in the fridge in an airtight container up to 1 week.
