ONE-POT PASTA WITH CLAM SAUCE

One-Pot Pasta with Clam Sauce image

Feeling lazy? This one-pot pasta with clam sauce is versatile, quick, and can be made with almost anything in your pantry-as long as you have canned clams.

Provided by Casey Barber | Good Food Stories LLC

Categories     Pasta & Noodles

Time 35m

Number Of Ingredients 9

1 (6.5-ounce) can chopped clams
about 1 1/2 to 1 3/4 cups dry white wine and/or chicken broth
1 tablespoon olive oil
1 large garlic clove, minced
1/2 teaspoon red pepper flakes
4 ounces (1/4 pound) bucatini, linguine, or spaghetti
1 large handful flat-leaf parsley, roughly chopped
freshly ground black pepper
freshly grated Parmesan cheese (optional)

Steps:

  • Place a mesh strainer over a 4-cup measuring cup and drain the canned clams, reserving the clams and their juice separately.
  • You'll have about 3/4 cup clam juice; add enough wine or broth to make 2 1/4 cups total liquid. Reserve an extra 1/4 cup liquid just in case.
  • Heat the olive oil in a deep 10-inch skillet over medium-low heat.
  • Stir in the garlic and red pepper flakes and cook just until the garlic is fragrant, about 30 seconds.
  • Add the wine and clam juice and increase the heat to medium.
  • Bring to a simmer and add the pasta. Bend and press the strands into the liquid to help them soften, stirring until all the pasta is mostly submerged.
  • Cook for about 10 minutes, stirring occasionally, until the pasta is almost al dente and has absorbed most of the liquid.
  • If the liquid is evaporating too quickly and the pasta is still a little toothy, turn the heat down and add the remaining 1/4 cup liquid.
  • Stir the reserved clams and parsley into the pasta and continue to simmer for 1 to 2 minutes more.
  • Season with freshly ground black pepper, along with a few flakes of sea salt if needed-I usually find that the clams give the dish enough briny body.
  • Sprinkle with Parmesan if that's your thing.
  • Eat it all. Don't even bother putting half of it in a storage container for later.

SPAGHETTI WITH CLAMS

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
2 shallots, thinly sliced
5 to 7 cloves garlic, finely chopped
2 1/2 pounds Manila clams, scrubbed clean
1/2 cup fresh parsley, chopped
1/2 cup dry white wine
2 tablespoons unsalted butter, diced into small cubes
Sea salt and freshly ground black pepper
1 lemon, zested, for garnish

Steps:

  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
  • Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
  • Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
  • Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
  • Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.

LINGUINI WITH CLAM SAUCE

Linguini with Clam Sauce image

Nothing beats fresh clam sauce, unless you're hungry and have only your pantry to work with. This version of a favorite is made entirely out of the kitchen cupboard, with the exception of flat leaf parsley, which I most always have on hand.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 10

1 pound linguini
Salt
1/4 cup extra-virgin olive oil, 4 turns of the pan
6 fillets flat anchovies, chopped
4 cloves garlic, chopped
1 teaspoon dried thyme leaves
1/2 to 1 teaspoon crushed red pepper flakes
1/2 cup dry white wine, 2 turns of pan
1 (15-ounce) can whole baby clams, with their juice
Handful flat-leaf parsley, chopped

Steps:

  • Bring a large pot of water to a boil. Add salt and the linguini and cook to an extra chewy al dente, 7 minutes or so. The linguini will continue to cook in sauce, later. To a large skillet heated over medium heat, add oil, anchovies, garlic, thyme and red pepper flakes. Cook together until anchovies melt into oil and break up completely. Add wine to the pan and give the pan a shake. Add clams and their juice. Drain pasta and add it to the clam sauce. Toss and coat the pasta in sauce with clams until the pasta absorbs the flavor and juices, 2 to 3 minutes. Remove from heat and season with salt, add parsley and serve.

LINGUINE WITH CLAM SAUCE

Categories     main-dish

Time 20m

Yield 6 servings

Number Of Ingredients 11

1 pound linguine
1 tablespoon olive oil
2 tablespoons butter
Two 10-ounce cans chopped clams, drained, juice reserved
3 cloves garlic, minced
3/4 cup white wine
Juice of 1/2 lemon, plus lemon slices, for garnish
3/4 cup heavy cream
2 tablespoons fresh flat-leaf parsley, chopped
Kosher salt and freshly ground black pepper
Freshly grated Parmesan, for garnish

Steps:

  • Bring a large pot of water to a boil. Add the linguine and cook according to the package directions for al dente. Be careful not to overcook; the pasta should have plenty of bite to it. Drain and keep warm.
  • Meanwhile, in a large skillet over medium-high heat, add the olive oil and 1 tablespoon of the butter. (Using both olive oil and butter allows you to heat the mixture at a higher heat before it starts to brown.) Add the clams and garlic and stir together. Cook for 3 minutes. Pour in the white wine, scraping the bottom of the skillet with a wooden spoon. Cook until the sauce is reduced and less watery, 3 to 4 minutes. Add the remaining 1 tablespoon butter and stir to melt. Reduce the heat and squeeze in the lemon juice. Pour in the cream and sprinkle in the parsley. This is a very decadent dish! Add some salt and freshly ground black pepper, then stir well and taste for seasoning. Add a splash of reserved clam juice if the sauce needs thinning. Cook over low heat until heated through, about 3 minutes more.
  • Pour the pasta into a serving bowl. Pour on the sauce straight from the skillet, including all the luscious juice, and toss to combine. At this point your kitchen smells like heaven. Top with freshly grated Parmesan and garnish with lemon slices.

SPAGHETTI WITH CANNED CLAMS

Spaghetti with Canned Clams image

Provided by Katie Lee Biegel

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 10

6 tablespoons olive oil
1/2 cup fresh breadcrumbs
1/2 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
1 pound spaghetti
2 cloves garlic, thinly sliced
Pinch crushed red pepper flakes
1/4 cup dry white wine
Two 6.5-ounce cans minced clams, with liquid
2 tablespoons chopped fresh parsley

Steps:

  • Heat 3 tablespoons olive oil in a medium skillet over medium heat. Add the breadcrumbs, granulated garlic and a pinch of salt and pepper. Toast the breadcrumbs, stirring occasionally, until lightly golden, 3 to 4 minutes. Set aside.
  • Fill a large pot with water. Bring to a boil over medium-high heat and season generously with salt. Add the spaghetti and cook to al dente, 6 to 8 minutes.
  • Meanwhile, in a large saute pan or skillet, add the remaining 3 tablespoons olive oil along with the garlic and red pepper flakes. Turn the heat on low and let cook until fragrant, for a few minutes. Stir in the wine and cook another 1 to 2 minutes. Add the clams, then turn up the heat to medium and bring to a simmer. Season with salt and pepper. Use tongs to take the pasta out of the water directly into the pan (this works best when the pasta is a couple minutes away from being done; you want it really al dente so it finishes cooking in the sauce). Use tongs to toss. If dry, add a little pasta water. Add the parsley. Toss until coated in the sauce and the pasta is tender. Serve with the toasted breadcrumbs sprinkled on top.

LINGUINE ALLA VONGOLE

Linguine alla Vongole image

This is linguine alla vongole, which is clam spaghetti, but much more fun to say. With layers of clam flavor from clam juice, canned clams, and freshly steamed clams, and a rich, herbed wine sauce, this dish is something truly special.

Provided by Brian Genest

Categories     Dinner     Entree

Time 50m

Number Of Ingredients 16

8 ounces dry linguine pasta
2 tablespoons olive oil, or as needed
1/4 white onion, minced
2 cloves garlic, minced
1/2 teaspoon crushed red pepper
3/4 cup dry white wine
2 bay leaves
1 tablespoon chopped fresh parsley, plus more for garnish
1 teaspoon fresh oregano leaves
1 teaspoon fresh thyme leaves
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
2 (8 ounce) bottles clam juice
4 (6.5 ounce) cans chopped clams, drained, juice reserved
1 tablespoon cornstarch, or as needed
12 cherrystone or littleneck clams

Steps:

  • Pour a thin layer of olive oil into a saucepan over medium-low heat. Add onions and sauté until soft and fragrant, about 5 minutes. Add garlic and crushed red pepper, and sauté until fragrant, about 30 seconds.
  • Pour in white wine, bay leaves, parsley, oregano, thyme, black pepper, and salt. Increase heat to bring mixture to a simmer; cook until volume is reduced by half.
  • Stir in bottled clam juice, plus clam juice from 3 cans of chopped clams (set chopped clams aside to use later in the recipe). Reduce heat to medium. Combine clam juice from remaining can of chopped clams with cornstarch in a small jar with a tight-fitting lid; place in the refrigerator to use later for thickening sauce.
  • Simmer sauce over medium heat, stirring frequently, until it begins to have the consistency of a sauce, about 20 minutes.
  • While sauce simmers, cook the pasta: bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and set aside to keep warm.
  • While pasta cooks, steam the clams: In a pot with a steamer rack, bring water to a boil. Steam whole clams over medium heat, covered, stirring or shaking the pot occasionally until they open, 5 to 7 minutes. Set aside.
  • Now, pull it all together: add chopped canned clams to sauce; cook just until heated, about 3 minutes. If the sauce is still thin, shake the refrigerated clam juice-cornstarch slurry, and pour in a little at a time; cook and stir until just thick enough-the starch from the linguine will also thicken the sauce a little.
  • Toss linguine in the pan with clam sauce and coat evenly. Divide linguine onto individual plates; divide whole clams on top. Top with Parmesan cheese and fresh parsley.

MARK BITTMAN'S PASTA WITH CLAMS

Mark Bittman's Pasta With Clams image

Here is a simple, elegant take on pasta with clam sauce that serves as a beautiful, light dinner with salad, perfect in advance of a movie night or reading session on the couch with family or friends. The key to its success is using less pasta that you generally might, which helps place the focus of the dish squarely on the meaty clams.

Provided by Mark Bittman

Categories     dinner, easy, quick, pastas, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

24 to 48 littleneck clams (the amount depends on size and your budget, or luck; in any case, more is better), scrubbed
Salt (probably not much) and pepper to taste
12 ounces long pasta, like spaghetti or linguine
1/4 cup olive oil, or more
1/4 teaspoon red pepper flakes, or to taste
2 cloves sliced garlic, or to taste
Chopped fresh parsley for garnish

Steps:

  • Steam the clams in a covered pot (a glass top is very nice, voyeuristically speaking). You don't need any liquid other than what the clams will release. Meanwhile, bring a large pot of water to a boil and salt it.
  • After the clams open - it could take as little as 10 minutes - uncover and cool. Take the meat out and strain and reserve the liquid; make sure to leave any sand behind. Chop the clams if they're big.
  • Cook the pasta in the boiling salted water. Put 1/4 cup olive oil in a deep skillet over medium heat. When the oil is warm, add the red pepper flakes and garlic and cook for about 30 seconds. Add the clams and continue to cook, stirring, for about a minute. Add about 1/2 cup of the reserved clam liquid.
  • Drain the pasta when it's nearly done and stir it into the clams. Cook, stirring, until the pasta is tender and the mixture is saucy. Add more clam-cooking liquid (or hot water or white wine), if necessary. Taste and adjust seasoning, adding a little more oil if you like. Garnish, and serve.
