PORTUGUESE PORK WITH RED PEPPERS



Portuguese Pork with Red Peppers image

One of my favorite flavor combinations ever! This pork dish combines the strength of garlic with the sweetness of red pepper balanced by a tangy lemon garnish.

4 large cloves garlic, peeled
1 ½ teaspoons coarse salt
2 tablespoons olive oil
1 tablespoon whole black peppercorns
2 pounds pork tenderloin, cut into 1 inch medallions
2 red bell peppers, julienned
1 cup white wine
2 lemons

Steps:

  • With a large mortar and pestle, mash the garlic, coarse salt, 1 tablespoon olive oil, and peppercorns into a fine paste. Transfer to a large bowl.
  • With a mallet, flatten the pork medallions to 1/4 inch thick. Place in the bowl with the garlic mixture, tossing to coat. Cover, and marinate 2 to 4 hours in the refrigerator.
  • Heat the remaining oil in a large skillet over high heat. Stir in the pork and remaining garlic mixture. Quickly brown pork about 1 minute on each side. Remove from heat, and set aside.
  • Place red peppers into the skillet, and saute 2 to 5 minutes, until tender but firm. Pour white wine into the skillet, and scrape up the browned bits. Reduce heat to low, return pork to skillet, and continue cooking 10 to 15 minutes, to an internal temperature of 180 degrees F (80 degrees C).
  • Slice 1 1/2 lemons into thin rounds. Transfer the pork and pepper mixture to a serving platter. Squeeze juice of remaining 1/2 lemon over the pork and peppers, and garnish with the lemon rounds.

Ahh, 'Vina Dosh,' a Portuguese dish and tradition of my family during Christmas. It started getting passed down more than 80 years ago when my grandparents came to America from the Azore Islands! Easy to make, but lots of patience to wait for the marinade to make its magic. But, oh so worth the wait! As it was passed down to me, I share it with you. Serve with Portuguese Linguica, a pot of semi-sweet, bacon-laced baked beans, and some Portuguese sweet bread. Hawaiian sweet bread works in a pinch. You can use white wine or red wine in the marinade.

1 ½ cups red wine vinegar
¾ cup red wine
7 cloves garlic, crushed
3 bay leaves
8 whole cloves, or to taste
2 tablespoons ground black pepper
2 teaspoons salt
½ teaspoon dried thyme
1 (3 pound) boneless pork shoulder, cut into 1-inch cubes
2 tablespoons vegetable oil

Steps:

  • Whisk red wine vinegar, red wine, garlic, bay leaves, cloves, black pepper, salt, and thyme together in a bowl; pour into a resealable plastic bag. Add the pork, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 2 to 4 days, turning occasionally.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain the pork, reserving 1/2 cup of marinade. Put pork and reserved marinade in a baking dish.
  • Bake in preheated oven until the pork is completely warmed, about 20 minutes. Drain as much liquid from the pork as possible.
  • Heat vegetable oil in a large skillet over medium-low heat. Add the pork to the skillet in batches to prevent crowding; cook and stir in hot oil until completely browned and no longer pink in the center, 10 to 15 minutes.

1 ½ cups dry white wine
1 teaspoon paprika
2 ½ teaspoons salt
¼ teaspoon black pepper
2 cloves garlic, peeled and cut in half
1 bay leaf
2 pounds pork loin, cut into 1 inch cubes
3 teaspoons olive oil, divided
2 onions, peeled and thinly sliced
2 teaspoons finely chopped garlic
2 tomatoes - peeled, seeded and chopped
¼ teaspoon crushed red pepper flakes
24 small clams in shell, scrubbed
¼ cup chopped fresh parsley

Steps:

  • In large bowl, combine wine, paprika, salt and pepper, blend well. Add garlic cloves, bay leaf, and cubed meat, turn meat in marinade to coat pieces. Marinate for 6 hours, turning occasionally.
  • Drain pork; reserve marinade. Pat cubes completely dry. Discard garlic and bay leaf. Melt 1 teaspoon of oil in large skillet. Add pork cubes, stirring frequently so that the meat colors quickly and evenly. Transfer with slotted spoon to a bowl.
  • Pour reserved marinade into skillet and bring to a boil over high heat, scraping off any brown particles clinging to the inside of pan. Boil briskly uncovered until marinade is reduced to 1 cup. Pour over pork and set aside.
  • In 6 to 8 quart pan, heat remaining 2 teaspoons oil; add onion and cook for 5 minutes, stirring frequently until onion is soft but not brown. Add garlic, tomatoes and crushed red pepper. Simmer, stirring constantly for 5 minutes.
  • Spread the clams, hinged side down, over the tomato sauce; cover the pan tightly and cook over medium to high heat for ten minutes or until clams open. Stir in reserved pork and juices. Simmer for 5 minutes to heat thoroughly. Sprinkle with parsley.

This recipe honors the Portuguese explorers who did so much to introduce peppers to the Old World. Try to start this the day before you plan to serve it so the paste can really flavor the meat. For Chicken variation, see directions in steps. Nice served with rice. From Eating Well.

6 tablespoons portuguese-style red pepper paste (see recipe I posted)
6 (4 ounce) boneless pork chops, trimmed
2 cups dry white wine
1 tablespoon olive oil
1/2 teaspoon fresh ground pepper
1/4 salt, to taste
1 tablespoon coarsely chopped fresh parsley, for garnish

Steps:

  • Prepare Portuguese-Style Paste (see recipe I posted).
  • Place pork chops in a shallow glass dish and rub pepper paste over both sides.
  • Pour wine over the chops.
  • Cover and refrigerate for at least six hours or overnight, turning once or twice.
  • Drain marinade into a small saucepan.
  • Add oil and bring to a simmer.
  • Reduce heat to medium-low and cook, stirring occasionally, until slighly thickened, about 15 minutes.
  • Stir in pepper and salt.
  • Measure out 1/4 cup sauce for basting.
  • Keep remainder warm.
  • Meanwhile, heat grill to medium-high.
  • Lightly oil grill rack.
  • Place the chops on the grill.
  • Cook, basting occasionally with pepper sauce, until browned and just cooked through, 2 to 2 1/2 minutes per side for 1/2 inch thick chops.
  • Serve immediately, passing remaining pepper sauce separately.
  • Variation: Substitute boneless, skinless chicken breasts or skinned bone-in chicken for pork chops.
  • Allow 4-6 minutes per side for boneless breasts, 20 to 30 minutes for bone-in pieces.
  • Serves 6.

6 pork chops, cut 1-inch thick
1/2 cup flour
1/4 cup olive oil
3 large tomatoes, diced
1 medium onion, chopped
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1/2 cup sherry wine
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 bell pepper, cut into rings

Steps:

  • Dredge chops in flour. In a large skillet, heat oil and fry chops until golden brown on both sides; remove from skillet.
  • Add tomatoes, onion, mushrooms, and garlic; saute for a few minutes. Add sherry, salt and pepper.
  • Return chops to skillet and put bell pepper rings on chops. Cover and simmer until chops are tender, about 45 to 50 minutes.

6 bone in rib chops
olive oil, to line the bottom of frying pan (I prefer to use my electric frying pan for this recipe so I can add all the Pork Chops at once)
2 teaspoons garlic
6 bay leaves
1 large lemon
3 cups white wine (I love using a traditional inexpensive white like Vinho Verde)
salt and pepper

Steps:

  • Line bottom of frying pan with olive oil and heat. Sprinkle chops with salt and pepper on both sides.
  • Add the pork chops and do not flip until a nice brown crust forms on each chop. Do the same on both sides. The brown crust is key in this dish.
  • Add garlic to the pan *when you flip the chops* and brown along with the pork.
  • Cut Lemon in half. Slice one half into 6 thin slices. Squeeze the other half over the pork chops.
  • Add bay leaves to the pan.
  • Pour the white wine evenly over the chops and simmer on low for approximately 20 minutes.
  • Use meat thermometer to check the pork.
  • Serve with a slice of Lemon on top of each chop.

2 lbs pork tenderloin (cut into 1 inch squares)
6 potatoes (peeled & cut into 2inch cubes)
1 cup white wine
1/2 cup extra virgin olive oil
4 tablespoons extra virgin olive oil
12 clams
1/4 lb chorizo sausage, slice thin (spanish sausage)
1 lb black & green spicy olives (I use mixture of black Greek, and Italian type-don't use plain black & green olives)
6 pickled pepperoncini peppers
salt
1/2 lb scallops
1/2 cup balsamic vinegar (optional)

Steps:

  • Brown pork in hot skillet until nice golden color with 4 tablespoons of olive oil. add potatoes and.
  • add chorizio into pan. Saute with pork until chorizio looses some of its red color.
  • clean clams & steam open. throw away those that don't open. In a 13 x 9 pan, add pork & chorizio mixture, clams, scallops,pepperonici , olives. If you don't have the olives , pepperoncini,or wine, you will need to add vinegar to give it some tartness. Capers would be a nice touch as suggested by a reader.
  • pepperoncini. Pour wine and olive oil over and cover with aluminum foil.
  • cook for 40 minutes at 350.
  • Serve with white rice.

2 lbs boneless pork chops or 2 lbs sliced boneless pork loin, pounded to 1/4 inch thickness
1 1/2 cups white wine
1/2 cup olive oil
8 garlic cloves, minced
2 tablespoons paprika
1 teaspoon salt
1/4 cup water
2 tablespoons red wine vinegar
oil (for cooking)

Steps:

  • Combine all ingredients except pork and cooking oil and pour over pork in a non-reactive container. Let marinate for between 6 and 48 hours (refrigerate for longer than 6 hours).
  • Heat frying pan over medium heat and add just enough oil to cover the bottom. Cook pork cutlets two or three at a time until done. Keep finished cutlets warm in a low oven while cooking the others.
  • When all the meat is cooked, drain off excess oil and pour the excess marinade into the pan. Cook over medium high heat for about 10 minutes, or until the sauce is thick like gravy.
  • Serve the pork cutlets with marinade on top. Rice and/or fried potatoes are essential with this, as is a green salad.

1 cup white wine
3 cloves garlic, chopped
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon ground black pepper
2 bay leaves
½ teaspoon ground cumin
1 pound boneless pork loin, cubed
1 tablespoon olive oil
1 onion, sliced
1 pound cooked and diced potatoes
1 (15 ounce) can cannellini beans
1 pinch ground cayenne pepper
18 clams
3 tablespoons chopped fresh parsley, for garnish

Steps:

  • To Marinate: Combine the wine, garlic, oregano, salt, pepper, bay leaves, and cumin in a nonporous glass dish or bowl. Mix together. Add pork and toss to coat. Cover dish or bowl and refrigerate to marinate for 2 to 3 hours.
  • Heat oil in a large skillet over medium heat. Add onion and saute until soft. Remove pork from dish or bowl (reserving marinade) and add to skillet; brown quickly, then add potato cubes, reserved marinade, beans, cayenne pepper and clams or mussels. Cook until open, about 7 minutes. Garnish with parsley and serve hot.
