KIMI'S MAYONNAISE PORK CHOPS
I have been making these forever...Not sure where I got the recipe, but they come out so moist and tender with lots of flavor. Don't let the mayo throw you off...they will be a hit at dinner.

- 1. COMBINE BREAD CRUMBS, PARMESAN CHEESE, SEASONING; MIX TOGETHER IN A SHALLOW DISH. IN ANOTHER SMALL BOWL THE MAYO.
- 2. SPREAD 1/2 TBSP OF MAYO ON EACH SIDE AND DREDGE IN BREAD CRUMBS. PLACE PORK CHOPS ON A BAKING PAN. BAKE AT 350F FOR 45-60 MINUTES.
PORK CHOPS WITH LIME & MAYO
A great recipe for the grill. Gives great "crispies" and a good creamy taste. I got it from the Hellmann's site, but I prefer Miracle Whip.

Seal bag and turn to coat; refrigerate for 8 hours or overnight. , Drain and discard marinade. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. - In a small bowl, combine the first 8 ingredients. Pour 1-1/4 cups marinade into a large shallow dish. Add the pork; turn to coat. Cover and refrigerate for at least 4 hours. - Blend the first 5 ingredients, cover and place in the fridge for an hour or longer.
- Reserve 1/2 cup.
- Grill or BBQ brushing the chops with the mayo blend, continue brushing and cooking until the chops are done Turning them halfway through (apprx 15 minutes total).
- Serve with the reseved mayo mixture on the side.

- Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.
- Heat butter and olive oil in a large, heavy skillet over medium heat. Cook pork until no longer pink in the center and golden brown on both sides, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer pork chops to a serving plate, reserving juices in the skillet.
- Add lime juice and garlic powder to the same skillet and mix into leftover juices. Stir to combine and pour over the pork chops.

- Whisk together lime juice, garlic, red-pepper flakes, and 1/4 teaspoon salt, then add oil in a slow stream, whisking well. Whisk in cilantro.
- Prepare a gas grill for direct-heat cooking over medium-high heat. Pat pork dry and season with salt and pepper. Oil grill rack, then grill pork chops, covered, turning over once, until just cooked through, 5 to 6 minutes total. Serve drizzled with some vinaigrette, and with remainder on the side.

- Reserve 1/4 cup of the marinade.
