BARBECUE PORK BURGERS

Made with lean ground pork and topped with barbecue sauce, pickles and coleslaw, these juicy burgers are reminiscent of a classic pulled pork sandwich.

1 lb lean ground pork
1 tablespoon tomato paste
Salt and freshly ground black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dry mustard
4 hamburger buns (sliced)
Half-sour pickles (sliced)
[Homemade Coleslaw]
1/4 cup ketchup
1 tablespoon molasses (or brown sugar)
1 teaspoon apple cider vinegar
1/2 teaspoon Worcestershire sauce
1/2 tablespoon tomato paste

Steps:

  • Prepare the sauce by whisking the ketchup, molasses, vinegar, Worcestershire and tomato paste together in a small bowl. Set aside.Note: If using brown sugar in place of the molasses, make sure it dissolves completely.
  • Place the ground pork in a mixing bowl. Add the tomato paste, 1/2 teaspoon salt, paprika, garlic powder, onion powder, dry mustard and a few generous grinds of black pepper.
  • Use a wooden spatula to combine the meat ingredients as best you can before doing a final, gentle mix with your hands.
  • Divide the meat into four quarter-pound portions and form into 1/2-inch thick patties. Make a slight depression in the center of each with your thumb then transfer to a plate and chill for at least 15 minutes before cooking.
  • While the burgers chill, preheat a grill or grill pan to medium-high. For best results, oil the grates before adding the burgers.
  • Grill on the first side until you see juices start to accumulate on the top of the meat, 2-1/2 to 3 minutes. Flip them over, brush some of the sauce over each burger, and continue cooking to desired doneness, 2 to 3 minutes longer.
  • Transfer the burgers to the rolls and top with additional sauce, pickle slices and coleslaw. Serve with a side of fries or chips.

1 1/2 pounds ground pork
1 small red onion, minced, plus slices for serving
3/4 cup store-bought or homemade barbecue sauce
Coarse salt and ground pepper
Vegetable oil, for grates
4 soft onion rolls, split horizontally

Steps:

  • Heat grill to medium-high. In a medium bowl, place pork, minced onion, 1/4 cup barbecue sauce, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat (which would make burgers dense).
  • Gently form meat into 4 equal-size patties, 4 inches in diameter and 1 inch thick. With thumb, make a 1/2-inch-deep indentation in the center of each (this helps keep burgers flat during grilling).
  • Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper; grill until cooked throughout, 5 to 8 minutes per side.
  • Serve on onion rolls (toasted on grill, if you like), with sliced onion and remaining barbecue sauce.

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).

2/3 cup water
salt and freshly ground black pepper (, to taste)
4 slices bacon (, cut into bite size pieces)
1 lb (450g) ground pork
salt and freshly ground black pepper (, to taste)

1 handful of lettuce
4 slices cheddar cheese
1-2 tomatoes (, sliced)
dill pickle slices (, drained)
1 sweet onion (, sliced into rings)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Saute shallots until soft, about 4-5 minutes. Add the garlic and cook, stirring, until fragrant, 1 minute. Add in paprika powder and stir well. Add the white wine vinegar and cook until evaporated, then stir in the Worcestershire sauce and 2 tablespoons tomato ketchup; cook for a minute. In a small bowl, mix together the remaining ketchup and water. Pour this sauce over the onion mixture. Cook and stir sauce on medium-low heat until the sauce thickens. Season with salt and pepper to taste. Remove from heat and set aside.
  • In a medium skillet, over medium-high heat, cook the bacon until crispy and then drain on a paper towel. Once slightly cooled, cut them into small pieces. Mix the ground pork, bacon, salt and pepper (I added 1/2 teaspoon salt and 1/4 teaspoon pepper) together in a large bowl until just combined. Separate the meat into 4 even portions, and form each portion into a thin patty slightly larger than the bun.
  • Heat a large pan with a little olive oil. Cook the patties for 2-3 minutes on the first side. Flip the patties and place one slice of cheese on each one. Cook for 2-3 minutes.
  • Lightly toast the buns. Spread some BBQ sauce on the bottom of a burger bun. Then place the lettuce leaf, pork patty with cheese, tomato slices, pickle slices, onion rings, some sauce and another lettuce leaf. Place the bun on top to complete your burger. Continue this until you have made all the burgers. Enjoy!

2 pounds ground beef (80/20 blend)
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed oil
1/2 cup barbecue sauce of choice
10 ounces homemade or prepared pulled pork, recipe follows
Four 4 1/2-inch brioche buns
2 tablespoons unsalted butter, softened
3 pounds bone-out Boston butt
1 tablespoon Cajun spice
1 tablespoon salt
1 teaspoon freshly ground black pepper
3 cups medium-dice mixed carrots, celery and onions
2 bay leaves
Chicken stock, for covering pork

Steps:

  • For the burgers: In a bowl, blend the ground beef with 1 teaspoon salt and 1/2 teaspoon pepper. Remove a small portion, about 1 ounce, and cook to check the level of seasoning. Add additional salt and pepper if needed.
  • Using about 8 ounces for each burger, form the meat into even-sized patties and flatten slightly (do not over-mix during the process).
  • Warm a griddle or pan over medium-high heat until hot, 2 to 3 minutes. Add the oil and patties and reduce the heat to medium. Cook on the first side until browned, 3 minutes, and then flip and repeat the process to the desired doneness. Remove and let rest.
  • For the pork: In a saucepan, warm the barbecue sauce over medium-low heat. Add the pulled pork and mix with the sauce until warm.
  • For the buns: In a flat pan, warm the buns over medium heat for 2 minutes. Butter the interior portion of the buns and cook until nicely toasted, 1 to 2 minutes.
  • To build the burgers, place the patties on the bottom buns. Top with the sauced pork and bun tops and serve.
  • Preheat the oven to 325 degrees F.
  • Sprinkle the Boston butt with the Cajun spice, salt and pepper and put in a deep roasting pan. Add the diced vegetables and bay leaves, and then cover with chicken stock. Wrap with plastic wrap and tightly cover with foil. Roast until tender, 2 to 2 1/2 hours.
  • Remove the pork from the stock and let cool. Shred with two forks.

1 tablespoon dark brown sugar
1 tablespoon red wine vinegar
One 15-ounce can black beans, drained and rinsed
1 1/2 pounds ground pork shoulder
2 tablespoons dry sherry

8 slices American cheese

Steps:

  • For the dried fruit chutney: Heat the oil in a large skillet over medium heat until it begins to smoke lightly, then add the onions and garlic and sprinkle with the salt and red pepper flakes. Cook until the onions and garlic become translucent, 5 to 8 minutes. Add the vinegar, sugar, cloves and cinnamon stick. Stir to blend and bring to a simmer. Cook for 10 to 12 minutes to let the vinegar mellow. Add the raisins, apricots, figs, cognac and 1 cup water and cook over low heat, stirring occasionally, for 25 to 30 minutes. Let cool.
  • For the black beans: Meanwhile, heat a large saute pan over medium heat and add the onions, oil and a generous pinch of salt. Add the sugar and cook until the onions are caramelized and tender, 15 to 20 minutes. Stir in the vinegar and beans and cook so the ingredients meld together, 1 to 2 minutes. Set aside.
  • For the spicy pork burgers: Break up the meat in a medium bowl and spread it up on the sides so that the seasoning can really permeate the meat. Add the sherry, soy sauce, Worcestershire and cayenne. Mix with your hands to make sure all of the flavors get integrated but do not overmix. (The more you work the meat, the tougher the burger.) Form the meat into 4 even patties about 3/4-inch thick.
  • Heat a large cast-iron skillet and add the oil. When the oil begins to smoke lightly, remove the skillet from the heat and arrange the patties in a single layer in the skillet. Return the skillet to the heat and cook, undisturbed, for 5 to 6 minutes. Rotate the patties a quarter turn and cook until cooked through, 3 to 5 more minutes. Use a metal spatula to flip the patties on their second sides and cook for an additional 5 to 8 minutes. Remove the skillet from the heat and place 2 slices of American cheese on each patty. Let the patties rest in the skillet so the cheese melts.
  • Arrange the roll bottoms on a work surface and top with lettuce. Top the lettuce with the patties, spoon some of the chutney and black beans on each and finish with the roll tops.

Steps:

  • Mix all ingredients.
  • Form into 4-5 equal size patties.
  • Re-chill for 30 minutes.
  • Grill over charcoal.
