4 boneless pork chops, 3/4-inch thick (about 1 pound)
1 teaspoon garlic powder
1 tablespoon vegetable oil
1 medium onion, chopped (about 1/2 cup)
1 can (10 3/4 ounces) Campbell's® Condensed Golden Mushroom Soup
1/4 cup water
1 can (8 ounces) pineapple chunks, undrained
3 tablespoon soy sauce
1 tablespoon honey
2 cups hot cooked regular long-grain white rice
Sliced green onion

Steps:

  • Season the pork with the garlic powder.
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.
  • Add the onion, soup, water, pineapple with juice, soy sauce and honey to the skillet and heat to a boil. Reduce the heat to low. Cook for 10 minutes or until the pork is cooked through. Serve the pork and sauce with the rice and sprinkle with the green onion.
  • Serving Suggestion: Serve with steamed sugar snap peas. For dessert serve fresh strawberries.

8-10 cloves garlic, sliced in half lengthwise
2 tablespoons olive oil
1 large banana leaf, thawed if frozen & cut into 3 smaller pieces (see Recipe Notes)
2 tablespoons Hawaiian sea salt (see Recipe Notes)
1 1/2 tablespoons liquid smoke, divided
2 cups water or chicken stock

Steps:

  • to 325 degrees F, ensuring a rack is positioned in the center of the oven.
  • Place the seared pork in the center of one of the pieces of banana leaf. Season with the Hawaiian sea salt & 1 tablespoon of the liquid smoke, using your hands to rub the salt & liquid smoke all over the surface of the pork. Arranged the seasoned pork in a small pile at the center of the banana leaf, folding the corners & edges of the banana leaf into the center to encase the pork. Carefully flip & set the wrapped pork seam side down on the second section of banana leaf. Repeat folding with the remaining pieces of banana leaf. Note: The banana leaf may split a little bit as you work, which is okay. Just work quickly & do your best to completely encase the pork in the banana leaf.

1 tablespoon onion powder
2 teaspoons kosher salt
1 1/2 teaspoons garlic powder
1 teaspoon freshly ground black pepper
5 pounds boneless pork butt or shoulder
One 8-ounce can crushed pineapple
1/2 cup hoisin sauce
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons rice vinegar
Hawaiian buns, for serving
4 cups thinly shredded savoy cabbage
1/4 cup rice wine vinegar
2 teaspoons sugar
1 teaspoon celery seeds
Kosher salt and freshly ground black pepper

Steps:

  • For the Hawaiian pulled pork: In a small bowl, mix the onion powder, salt, garlic powder and pepper. Rub the mixture on all sides of the pork. Put the pork in a slow cooker and cook on low for 8 hours.
  • Shred the pork with 2 forks, removing any large pieces of fat. Pour the broth into a fat separator or skim off the fat. In a bowl, whisk 2 cups of the skimmed broth with the crushed pineapple, hoisin, honey, soy sauce and vinegar. Put the pork back in the slow cooker and stir in the sauce. Cook on low for 1 hour.
  • For the slaw: Meanwhile, combine the cabbage, rice vinegar, sugar, celery seeds and some salt and pepper in a bowl and toss to coat. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • Serve the pulled pork on Hawaiian buns topped with slaw.

1 boneless whole pork loin roast (4 pounds)
1 cup water
1 cup unsweetened crushed pineapple, undrained
2/3 cup tomato paste
1/2 cup packed brown sugar

2 tablespoons diced green pepper
2 tablespoons cider vinegar
1 teaspoon ground ginger

Steps:

  • Rub 1/2 teaspoon salt and pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour., Meanwhile, in a small saucepan, combine the water, pineapple, tomato paste, brown sugar, onion, green pepper, vinegar, ginger and remaining salt; bring to a boil. I recently inherited my Great Aunt's recipe collection. This is a recipe from her recipe box that she clipped out of the Chicago Tribune. It had won the "$5 Favorite Recipe prize." From the splatters on the clipping, I imagine my Aunt enjoyed this one. These days,I might try browning the meat in a little olive oil instead of the bacon drippings. Despite the name, I doubt this is a traditional Polynesian dish, but rather is one inspired by Polynesian cuisine.

3 lbs lean boneless pork tenderloin, cut into 1 inch cubes
2 tablespoons bacon drippings or 2 tablespoons shortening
3 tablespoons soy sauce (I would use reduced sodium soy sauce)
1/2 teaspoon ground ginger
1/4 teaspoon garlic salt, to taste
1/3 cup red wine vinegar
1/3 cup brown sugar
3 (8 ounce) cans tomato sauce
1 (13 1/2 ounce) can pineapple tidbits, undrained
4 -6 cups hot cooked rice

Steps:

  • In a large skillet, brown pork on all sides in bacon drippings.
  • Add soy sauce, ginger, garlic salt, vinegar, and brown sugar.
  • Cover and let simmer for 15 minutes.
  • Add tomato sauce and simmer, uncovered, for 30 minutes longer or until pork is fully cooked.
  • Stir in pineapple with canning juices and bring to a boil.
  • Remove from heat and taste for seasonings, adjusting as needed.
  • Serve ladled over mounds of hot cooked rice.

BRAISED HAWAIIAN PORK SHOULDER

1 tablespoon brown sugar
2 teaspoons red Hawaiian sea salt or kosher salt
2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly cracked black pepper
1 1/2 pounds pork shoulder or Boston pork butt
1/4 cup canola oil, divided
1 onion, chopped
1 (3-inch) piece ginger, sliced
4 cloves garlic, smashed
1 cup pineapple juice
2 cups chicken stock or broth

Steps:

  • Special Equipment: Butcher's twine
  • In a small bowl, combine the brown sugar, Hawaiian salt, paprika, cumin, coriander and black pepper.
  • Cut the pork into 4 equal portions, then tie each cut with some butcher's twine. Lightly sprinkle each piece with 1 1/2 teaspoons of the spice mixture.
  • Preheat the oven to 300 degrees F.
  • Heat 3 tablespoons canola oil in a large Dutch oven over medium heat. Sear each cut of pork on all sides, then transfer them to a plate. Add the remaining 1 tablespoon canola oil to the same pot along with the onions, ginger, and garlic. Saute for 2 minutes. Pour in the pineapple juice and chicken stock and return the pork to the pot. Cover put the pot into the oven to braise until the pork is fork tender, about for 2 1/2 hours.
  • Remove the pork from the Dutch oven and arrange the pieces on a baking sheet. Sprinkle each piece with the remaining 1/2 teaspoon of the spice mixture and put them under a low broiler until their tops are brown and crisp but not burned, about 2 minutes. Transfer the pork to a serving platter and serve with a drizzle of braising liquid.
  • Serve the pork with the Mashed Parsnips and Celery Root, if desired.

2 lbs boneless country-style ribs
1 garlic clove, minced
1 small onion, sliced
8 ounces crushed pineapple, undrained
3/4 cup ketchup
3 tablespoons brown sugar
3 tablespoons hoisin sauce
1 teaspoon gingerroot, grated

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Place pork ribs, garlic and onion in slow cooker.
  • Spoon about half of the pineapple with some of the juice over ribs.
  • Reserve remaining pineapple and juice.
  • Cover; cook on low setting for 8 to 10 hours.
  • About 35 minutes before serving, drain and discard cooking juices from slow cooker; wipe edge of cooker clean.
  • In small bowl, combine ketchup, brown sugar, hoisin sauce, gingerroot and remaining pineapple with juice; mix well.
  • Spoon or pour evenly over ribs.
  • Increase heat setting to high; cover and cook an additional 25 to 30 minutes or until ribs are glazed.

1/3 cup soy sauce
2 tablespoons brown sugar
1 teaspoon gingerroot, grated
1/2 teaspoon crushed red pepper flakes
4 garlic cloves, minced

  • In a resealable food storage plastic bag mix all ingredients except pork chops.
  • Add pork and seal bag.
  • Turn to coat.
  • Refrigerate 1 to 2 hours to marinate, turning bag once.
  • When ready to cook pork, heat grill.
  • When grill is ready, place pork on grill.
  • Cover grill and cook 15 to 20 minutes, turning occasionally and brushing with marinade, until pork is no longer pink in center.

3/4 cup pineapple apricot jam
1/2 cup brown sugar
1 teaspoon minced garlic
1/4 cup apple cider vinegar
1/2 cup soy sauce
1/4 cup molasses
2 cups chicken broth

Steps:

  • Place pork roast in slow cooker. Combine jam, brown sugar, garlic, vinegar, soy sauce, molasses and chicken broth. Mix well.
  • Pour over roast. Cover and cook on low for 8 hours.
  • Remove roast and sauce from slow cooker. Allow to cool.
  • Place cooled roast and sauce in freezer bag. Label and freeze.
  • To serve: thaw. Heat roast and sauce until hot and bubbly. Pull roast into serving pieces (or shred) and serve sauce over rice.

1/2 cup cider vinegar
1/2 cup firmly packed brown sugar
1/2 cup catsup
1/4 cup cornstarch
1/4 cup unsweetened pineapple juice
2 tablespoons soy sauce
2 lbs lean boneless pork, trimmed of excess fat and cut into 3/4 inch cubes (such as shoulder, butt or tenderloin)
1 egg, beaten
1/2 cup cornstarch
6 tablespoons salad oil
1 small green bell pepper, seeded and cut into 1-inch squares
1 small red bell pepper, seeded and cut into 1-inch squares
1 small onion, cut into wedges, layers separated
1/4 lb snow peas or 1/4 lb sugar snap pea, ends and strings removed

Steps:

  • Sweet-Sour Sauce: Stir together cider vinegar brown sugar, catsup; 1/4 cup cornstarch, unsweetened pineapple juice; and soy sauce. Set aside.
  • Dip pork cubes in beaten egg, drain briefly, and roll in cornstarch to coat lightly; shake off excess.
  • Place a wok or frying pan over high heat; when wok is hot,add 2 tablespoons of the oil. When oil is hot, add half the pork; stir-fry until evenly browned (5 to 7 minutes). Lift pork from wok and set aside. Repeat to brown remaining meat, adding more oil as needed.
  • Add remaining oil (about 2 tablespoons) to wok. Add bell peppers and onion; stir-fry until vegetables are tender crisp to bite (about 2 minutes). Add pea pods; then stir sauce and add. Stir until sauce boils and thickens; return pork to wok and stir until heated through.

1 1/2-2 lbs pork butt (or shoulder, or pork steak)
1/4 cup flour
1 1/2 teaspoons salt
1/8 teaspoon pepper
2 tablespoons extra virgin olive oil (or canola oil)
1 cup celery
1 medium green pepper
1 small onion
1 (15 ounce) can pineapple tidbits (or chunks, drained)
1/3 cup ketchup
2 teaspoons prepared mustard
1 teaspoon Worcestershire sauce
3/4-1 cup juice (from the canned fruit or fruit juice)
4 cups cooked rice

Steps:

  • Cut the pork in 1-inch cubes.
  • Mix the flour, salt and pepper.
  • Coat the pork with the flour mixture using all the flour.
  • Brown in oil in a large pan.
  • Slice the celery and onion.
  • Slice the peppers into thin strips.
  • Add the vegetables to the pan along with the remaining ingredients. (**Do not add rice).
  • Simmer covered for 30 minutes.
  • Serve over rice.
  • Enjoy!
