My husband loved this! You could easily substitute different cheeses. I couldn't find Gruyere in my supermarket and used farmer's cheese.

2 tablespoons butter
1 cup onion, chopped
1 medium zucchini, diced
1/4 lb mushroom, sliced
1 teaspoon garlic, minced
4 ounces sun-dried tomatoes packed in oil, drained and chopped
1 teaspoon basil
1 teaspoon thyme
1/4 teaspoon kosher salt
1/4 teaspoon pepper
3 eggs
1 1/4 cups half-and-half cream
1/2 cup gruyere cheese, grated
1/2 teaspoon crushed red pepper flakes
1 pie crust
3 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 375°F.
  • In a large skillet, melt the butter over medium-high heat then add the onions and zucchini and cook, stirring for 6 minutes. Add the mushroom and cook, stirring until the liquid is absorbed and the vegetables are wilted, about 10 minutes. Add the garlic and cook for 1 minute.
  • Add the tomatoes, basil, and thyme then season with salt and pepper and cook, stirring 1 minute. Remove from the heat and cool.
  • In a bowl, beat the eggs and milk together, add the grated cheese and red pepper flakes.
  • Place the pie crust in the pie pan. Add the vegetable mixture. Pour the egg mixture on top. Top with the goat cheese.
  • Bake for 25-30 minutes or until the eggs are set and browned. Remove from the oven and let stand 5 minutes before slicing.

This is a very nice recipe from The Lion's Paw B & B in Seaview, Washington, the recipe shared by Michal Miller, the hostess with her husband Allen Miller. Try it, I think you'll like it!

3 eggs
1 cup milk
1/2 cup onion, chopped coarsley
1/2 cup biscuit mix
1 cup monterey jack cheese or 1 cup feta cheese
4 ounces sliced mushrooms
fines herbes

Steps:

  • Preheat oven to 350*.
  • Combine onion, milk & eggs in blender. Add biscuit mix and blend until well-mixed, about 3 minutes.
  • In a greased 9 inch pie pan, layer cheese and mushrooms. Then pour blended mixture over the top.
  • Sprinkle the top with Fines Herbs to lightly cover. Chop some tomato for garnish.
  • Fines Herbs is a brand name. You can also use herbs of your choice.
  • ENJOY!

  • Sift the flour and salt into a large mixing bowl. Use a pastry cutter to incorporate the butter and shortening into the flour until the dough starts to come together and form small pea shapes. Work the ice water into the dough until it just comes together.
  • Form the crust into a disk shape, wrap tightly in plastic wrap, and refrigerate for 30 minutes. Once chilled, turn the dough out onto a lightly floured surface and use a rolling pin to roll it out into an 11-inch circle. Lift up the dough and lay it into a 9-inch pie pan. Trim any excess overhang, and crimp the edges to fit the pan. Cover the bottom with a piece of parchment paper, then fill the pan with pie weights (or uncooked beans, rice, or spare change!), and bake for 12 minutes. Remove from the oven and remove the weights and parchment paper. Let cool slightly on a wire rack while you prepare the filling.
  • Melt the butter in a large skillet over medium-high heat. Add the sliced onions and diced tomatoes and cook for about ten minutes. Once the liquid has mostly evaporated and the onions are wilted, add the garlic and cook for another minute.
