POACHED PEARS IN HONEY, GINGER AND CINNAMON SYRUP

Steps:
- In a saucepan large enough to hold all the pears, combine the wine, Simple Syrup, cinnamon stick halves, honey, and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
- Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
- Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
- In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.
POACHED APRICOT SUNDAES
Steps:
- Combine 2 cups dried apricots, 2 cups water, 2 tablespoons sugar and 1 strip lemon zest in a baking dish. Cover and microwave 5 minutes. Let sit 5 minutes, then uncover and let cool. Spoon over vanilla frozen yogurt and sprinkle with candied walnuts.
EASY POACHED PEARS
Bosc pears, available through April, become tender yet hold their shape well when poached. A spice-infused syrup gives them a pie-like flavor.

- In a large saucepan, combine lemon zest, cinnamon stick, allspice, ground pepper, apple cider, and water.
- Add pears. Cover with waxed paper to prevent discoloring. Bring to a simmer. Cook, turning pears occasionally, until easily pierced with the tip of a paring knife, but not falling apart, about 20 minutes. Remove pears from liquid; transfer to large bowl.
- Raise heat to high; boil cider mixture until reduced to a syrup, about 15 minutes. Discard cinnamon. Pour syrup over pears; refrigerate. To serve, slice off a sliver from the bottom of each pear (so it stands upright). Serve pears with lemon sorbet, if desired.

- In a saucepan over medium heat, combine champagne, orange juice and sugar. Add orange slices, cloves and vanilla. Bring to a boil, and stir until sugar is dissolved. Place pears in saucepan, and reduce heat. Cover, and simmer 15 minutes. Remove cover, and simmer an additional 30 minutes. Remove pears from the liquid, and let cool.
- Heat chocolate in a bowl over hot water, stirring until melted. Pour chocolate over the pears, and serve.

- Combine sugar, 2 tablespoons water, star anise, cloves, cinnamon stick and vanilla bean in heavy large saucepan. Stir over low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Remove from heat. Add 1 1/4 cups water (mixture will bubble vigorously). Bring to simmer, stirring until pieces of caramel dissolve. Add pears, cover and simmer until tender, turning pears once, about 5 minutes.
- Using slotted spoon, transfer pears to bowl. Boil liquid in saucepan until thick and syrupy, about 5 minutes. Pour syrup over pears; toss gently to coat. Chill until cold, at least 3 hours or overnight. Divide pears and syrup among 4 shallow bowls and serve.

Steps:
- Using a small, sharp knife, score a zigzag pattern in the skin around the top of each pear, working downwards from the stalk.
- Leaving the zigzag skin at the top in place, peel the rest of each pear very thinly so as to preserve their shape.
- Remove the core from the base, using a corer or a small melon baller.
- Combine all the ingredients in a saucepan big enough to hold everything, including the pears.
- Set over a medium heat until the liquid comes to the boil, then reduce the heat so that it is barely simmering.
- The cooking time will vary according to the ripeness of the pears.
- Very ripe pears will only take 5 minutes; much less ripe fruit will need up to 15 minutes.
- As soon as they are ready, turn off the heat.
- Transfer the pears with their poaching syrup to a bowl and leave at room temperature until needed.
- Serve one or two pears on each plate with a little orange zest and some syrup.

POACHED PINEAPPLE SUNDAES

- Remove skin from pineapple as well as all 'eyes'.
- Cut pineapple crosswise into 8 thick rounds.
- Remove core with small knife.
- In large skillet combine pineapple, water and honey.
- Bring to boil; add tea bags or rose hips and lower heat to simmer.
- Cover and cook 20 minutes or until pineapple is just tender.
- Remove pineapple with slotted spoon and place in shallow casserole.
- Discard tea bags or strain rose hips through sieve.
- Cook remaining liquid over high heat until reduced to 2 cups; pour over pineapple.
- Cover and chill until very cold.
- Place yogurt in glasses; top with pineapple and drizzle with syrup.
- Great served with cinnamon wontons.

- With an apple corer or sharp knife, carefully remove core from bottom of pears to within 1 in. of stem, leaving pears whole with stem. Peel the pears., In a Dutch oven, combine the orange juice, water, brown sugar, butter and orange zest. Bring to a boil; add pears. Reduce heat; cover and simmer for 10-15 minutes or until pears are tender, turning several times. Remove pears and set aside. Simmer cooking juices, uncovered, for 5 minutes or until thickened to a syrup consistency., For chocolate sauce, in a small heavy saucepan over low heat, heat the chocolate, cream and butter until chocolate is melted; stir until smooth. Spoon pear syrup into dessert dishes; place a pear in each dish and drizzle with chocolate sauce. Garnish with orange zest strips if desired.

- Bring water, honey and orange peel to boil in heavy medium saucepan. Add pears. Cover and simmer over medium-low heat until pears are tender but still firm, about 12 minutes. Refrigerate pears in poaching liquid until cold, about 3 hours. (Pears can be prepared 1 day ahead.)
- Slice pears. Arrange slices decoratively in 2 dishes. Top with 1 scoop vanilla ice cream. Drizzle chocolate syrup over. Garnish with whipped cream and grated chocolate.
