RUSSIAN MUSHROOM AND POTATO SOUP
I make this soup every Halloween and is the 'signal' to the family that the cool weather has arrived. I've been making it for 15 years now and out of all the soups I make, it is still everyone's favorite. Enjoy!

Steps:
- Melt 3 tablespoons butter in a large saucepan over medium heat. Mix in leeks and carrots, and cook 5 minutes. Pour in broth. Season with dill, salt, pepper, and bay leaf. Mix in potatoes, cover, and cook 20 minutes, or until potatoes are tender but firm. Remove and discard the bay leaf.
- Melt the remaining butter in a skillet over medium heat, and saute the mushrooms 5 minutes, until lightly browned. Stir into the soup.
- In a small bowl, mix the half-and-half and flour until smooth. Stir into the soup to thicken. Garnish each bowl of soup with fresh dill to serve.

RUSSIAN POTATO SOUP
Mom used to make this when I was living at home. Kind of reminds me of mashed potatoes and gravy. She told me it was called "Cartouska" - pronounced - Russian for Potato is Kaptowka" found out from a Slovak friend.

Steps:
- In a 6 quart pot add potatoes and celery plus enough water to cover plus add enough to fill 1/2 of the space to the top of the pot.
- Bring to a boil and simmer until potatoes are soft.
- In the meantime in a skillet brown the onion in oil until they are medium brown in color.
- Add the flour to the browned onions and stir for about 1 minute.
- Add the bullion cubes.
- Add enough potato water from the pot to cover the mixture, stir well.
- Pour the onion mixture back into the pot.
- Add water to within 1 inch of the top of the pot.
- Add black pepper plus extra to taste.
- Bring to a boil.
- Simmer for 30 minutes.

POTATO AND SAUERKRAUT SOUP WITH KIELBASA
To ensure a balanced flavor, rinse the sauerkraut before adding it to this soup. This tones down the intense sharpness of the sauerkraut and allows the smokey kielbasa and other aromatics to shine through.

- Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
- Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Add the caraway seeds and sauerkraut and cook, scraping up any remaining browned bits, 1 to 2 more minutes. Add 6 cups water, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil. Uncover, reduce the heat to a rapid simmer and cook until the potatoes are tender, 15 to 20 minutes.
- Stir together the heavy cream and mustard in a small bowl. Once the potatoes are tender, reduce the heat to medium low and whisk the heavy cream mixture into the soup. Return the kielbasa to the pot. Increase the heat to medium and simmer until thickened slightly, 3 to 5 minutes. Season with salt and pepper.
- Divide the soup among bowls. Top with the chopped celery leaves and dill.

BORSH - THE MOST DELICIOUS TRADITIONAL RUSSIAN BEET SOUP
Borsh is a traditional Russian soup prepared from beets and cabbage. It is usually served with a spoon of sour cream. There are over 40 varieties of hot and cold borsh that use different combinations of vegetables and meats. This is my grandmother's recipe, which is also, arguably, the best one :)

Steps:
- Shed cabbage, dice potato, dice the onion, cut carrots into rounds, and shred the beats*.
- Put cabbage and potato in a pot, add water, chicken broth, and bouillon cubes.
- Heat on high until boiling.
- Meanwhile saute onion, beets, and carrot together for about 5-7 minutes.
- Add diced tomatoes and salt to taste, and cook another 5 minute.
- Then add pan mixture into pot, boil for 15 minutes.
- Turn off heat add minced garlic. Serve with sour cream and fresh dill.
- * Special Note on Beets: Although beets are the most beautiful rich fuchsia on the inside, their juices will stain everything hot pink, including your hands and cutting board. The best way to prep fresh beets for this recipe is to first peel them with a peeler, cut into thin slices, and finally, layer and cut into matchlike sticks.
- * For Vegetarians: simply substitute 3 cups of chicken broth with water, and omit chicken bouillon for a great vegetarian variation.

- Saute veggies and garlic in butter for about 15 minutes.
- Add water, bay leaf, and basil; simmer, covered, until vegetables are tender. 20 - 25 minutes.
- Mash the veggies or process briefly in a food processor. Do not make it into a homogenous mix. You should still be able to discern separate ingredients and colors.
- Add the chicken stock and optional meat. Heat and season with Worcestershie and paprika before serving.

RUSSIAN BEAN AND POTATO SOUP
I got this from vegetarian times. It is one of my favourite stews, especially when it gets cold out. When you serve it I generally add a little more sour cream and I always add a lot of sauerkraut. You can also add nonfat yoghurt. It is really good with a piece of sourdough bread and a salad. It also freezes well after being refrigerated.

- In large pot saute onions in oil.
- Add potatoes and beans; cook for about 3 minutes
- Add stock to prevent scorching.
- Add remaining stock, lower heat and cook for about an hour.
- Combine flour and sour cream.
- Add to hot stew by spoonfuls; stir to blend.
- Add sauerkraut and dill.
- Cook for about ten more minutes.
- Season with salt and pepper.

- Heat vegetable oil in a large saucepan over medium heat. Stir in the onion, and gently cook until softened and translucent, about 5 minutes. Add the potatoes and green beans; cook until the green beans have slightly softened, about 5 more minutes.
- Pour in the vegetable stock. Bring to a boil over high heat, then lower heat to medium-low, cover, and cook until the potatoes have softened, about 15 minutes. - melt 3 tbs of butter in a large saucepan.
- saute carrot, onion and celery about 5 minutes.
- add potatoes, dill, salt, pepper and broth.
- bring to a boil, reduce heat, cover and simmer about 20 mins until potatoes are tender but not mush.
- take out about 1/4 of the veggies and mash or puree them in a blender and return it to the pot (this is optional but I think it's better).
- stir flour into cream until smooth and add it to the pot.
- stir in sour cream until smooth.
- simmer until it thickens to desired consistency.
- i serve this with fresh baked bread and salad.

- Peel potatoes and dice them into 1/4" cubes (we used the Vidalia Chopper). Place diced potatoes in a medium pot and cover with water. Add 1 Tbsp vinegar and bring to a boil then continue boiling for 10 minutes or until the potatoes are cooked, but not falling apart. Drain well and set aside to cool. - In a separate large bowl, whisk together 8 cups of cold water, 1/3 cup of sour cream, 2 1/2 Tbsp of vinegar, 2 1/2 tsp of salt until combined. Pour the mixture in the pot with the rest of ingredients. Stir to combine and serve.
